APPLE PIE IN A JAR



Apple Pie in a Jar image

This is great to do when apples are abundant and can be used on waffles and ice cream too.

4 ½ cups white sugar
1 cup cornstarch
2 teaspoons ground cinnamon
¼ teaspoon ground nutmeg
1 teaspoon salt
10 cups water
3 tablespoons lemon juice
7 quarts peeled, cored and sliced apples

Steps:

  • Place a rack in the bottom of a large stock pot. Fill pot with hot water. Sterilize 7 1-quart canning jars, 7 lids, and 7 rings by placing on rack, jars upright. Bring water to a boil. Boil 10 minutes. Remove with a holder and allow jars to air-dry. Save water for processing apples.
  • Combine sugar, cornstarch, cinnamon, nutmeg, salt, and water in a large saucepan. Place over high heat and cook until thick and bubbly, stirring frequently. Remove from heat and stir in lemon juice.
  • Tightly pack apples into sterilized jars. Slowly pour syrup over apples, covering them completely. Gently tap jars on countertop to allow air bubbles to rise. Screw lids on jars.
  • Carefully lower jars into pot using a holder. Leave a 2 inch space between jars. Add more boiling water if necessary, until tops of jars are covered by 2 inches of water. Bring water to a full boil, then cover and process for 30 minutes.
  • Remove jars from pot and place on cloth-covered or wood surface, several inches apart, until cool. Once cool, press top of each lid with finger, ensuring that seal is tight (lid doesn't move up or down at all). Sealed jars can be stored for up to a year.

2 cups pecan halves, broken into coarse pieces
1 cup white sugar
¾ cup light corn syrup
¾ cup dark corn syrup
4 eggs
¼ cup butter, melted
1 ½ teaspoons vanilla extract
1 pinch salt
8 half pint canning jars with lids and rings
cooking spray
2 unbaked 9-inch pie crusts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread pecans on a baking sheet.
  • Bake pecans in the preheated oven until lightly toasted, 6 to 8 minutes. Cool to room temperature.
  • Bring sugar, light corn syrup, and dark corn syrup to a boil in a saucepan; boil for 2 minutes. Remove from heat and cool slightly, about 10 minutes.
  • Whisk eggs in a large bowl until frothy. Add syrup mixture slowly, whisking constantly to prevent eggs from curdling. Whisk in butter, vanilla extract, and salt until batter is smooth.
  • Spray 8 small jars with cooking spray. Press pieces of pie crust dough into bottom and sides of jars. Add a layer of toasted pecans to each jar. Spoon in batter, leaving 1/4 inch rim at top.
  • Bake in preheated oven until darkened on the top, about 40 minutes. Cool to room temperature before serving.

  • Prepare crust. Remove the pie crust from its packaging and allow it to sit out at room temperature for 15-20 minutes. Then, carefully unroll and lay flat on a piece of parchment paper.
  • Mold the bottom crust. Using the smaller, 3-1/2-inch dough circles, gently press them into a standard canning jar lid. Leave at least 1/4-inch of pie dough hanging over the edge of each jar lid.
  • Fill the pies. Next, add a heaping tablespoon of fully-cooled cherry pie filling to each pie crust. It should be about three to five cherries per pie, depending on the size of your cherries.
  • Add top crust. Carefully place a piece of the larger, 3-3/4-inch dough rounds over each pie. Then, carefully roll the edge of the top crust over the protruding edge of the bottom crust and tuck it into to sides of the canning jar lid.
  • Vent, milk wash and sugar. Prior to baking, use a sharp paring knife to cut 3 to 4 small vent holes in the top of each crust. Then, brush the tops of each pie lightly with a little milk or half-and-half and sprinkle with turbinado sugar, if desired.
  • Bake. Preheat oven to 375° with the oven rack at its lowest position. Arrange the pies on a large baking sheet, cover with parchment paper and then place into the preheated oven.
