FESTIVE BAKED BRIE BITES

- Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
- Cube each wheel of Brie into 12 pieces. They do not need to be perfect cubes. Set aside.
- Mix the cranberries and pistachios together in a small bowl. Set aside.
- Lightly dust a cutting board with flour. Unroll the crescent dough (it should be an 8-by-12-inch sheet) onto the dusted surface. Using a knife, cut 4 lines down the 8-inch side and 6 across on the 12-inch side to get 24 squares.
- Place a cube of Brie in the center of each dough square. Sprinkle about 1/2 teaspoon of the pistachio and cranberry mixture over the top of each cube of Brie. Fold the corners of each square together, lightly pinching to seal everything in. Transfer the bites to the prepared baking sheet.
- Whisk together the egg and 1 tablespoon water in a small bowl and brush the top of each bite with the egg wash. Sprinkle each with a little rosemary and a bit of sea salt. Bake until golden brown, 12 to 14 minutes. Let cool for 2 to 3 minutes.
- Carefully transfer the bites to a serving platter. Scatter the pomegranate seeds around the bites, drizzle with honey and frame the platter with rosemary sprigs for color and festive fun. Enjoy!
CRANBERRY AND BRIE CRESCENT RING RECIPE BY TASTY

- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Arrange the crescent roll triangles on the prepared baking sheet with the points sticking out, overlapping the bases to form an 8-inch (20 cm) circle.
- Spoon the cranberry sauce onto the bases of the crescent dough triangles and top with the brie wedges. Fold the pointed ends of the dough over the cranberry sauce and brie and tuck underneath to seal.
- Brush the ring with the beaten egg and sprinkle with the flaky salt and thyme.
- Bake for 30 minutes, turning halfway through, or until dark golden brown. Transfer to a platter and serve.

- Place Brie cheese in the freezer for 20 minutes. Oil a mini muffin pan with cooking spray.
- Roll 1 puff pastry sheet out into a 10x14-inch rectangle. Cut the sheet lengthwise into 4 even strips and crosswise into 6 even strips; there should be 24 squares. Separate and press them gently into the muffin cups.
- Cut chilled Brie cheese into 24 pieces approximately 3/4-inch in size. Add 1 teaspoon cranberry sauce to each pastry-lined muffin cup; press in 1 piece of Brie and top with 1 teaspoon of chopped walnuts. Sprinkle bites with sea salt. Chill for at least 30 minutes and up to 3 days.
- Preheat oven to 400 degrees F (200 degrees C).
- Bake bites in the preheated oven until golden brown, 18 to 20 minutes.

These are a fun appetizer and a much easier way to serve brie to a group. They are very versatile so you might want to try a brown sugar and walnut filling instead of the cranberry, or whatever is your preference!

- Cut each sheet of puff pastry into 12 squares and place inside mini muffins cups. (You may want to lightly spray to ensure they won't stick). Try not to leave any part of the muffin cup uncovered by dough or the cheese and cranberry will stick.
- Place a 1-inch square of cheese inside each cup.
- Then add about 1 T cranberry sauce on top of the cheese.
- Bake in a preheated 375°F oven till edges are a light brown, 10-15 minutes.
- Cool a few minutes (but not completely) before removing from muffin tins.

- Remove and discard rind from Brie cheese. Place Brie in the freezer for 20 minutes to make it easier to cut.
- Meanwhile, oil a 24-cup mini muffin pan with cooking spray.
- Roll puff pastry sheet out into a 10x14-inch rectangle. Cut sheet lengthwise into 4 even strips and then crosswise into 6 even strips, making 24 squares. Separate squares; gently press each one into a prepared muffin cup.
- Remove chilled Brie from the freezer; cut into 24 pieces, approximately 3/4-inch in size.

- Unroll one tube of Pillsbury Crescents® into one long rectangle. Use a rolling pin to roll the seams together and lengthen the dough a little bit. Cut 24 squares with a pizza cutter.
- Place one square inside each cup of a mini muffin pan. It’s okay if some of the seams come apart, they will most likely cook together. They don’t have to touch the bottom either. I like to leave a little bit of the dough hanging out of the cup for easy removal after baking.
- Remove any rind from the Brie cheese and cut 48 square-ish pieces. Place a piece of cheese in the center of each crescent cup. Save the remaining 24 pieces for the second tube of crescent dough.
- Spoon some whole cranberry sauce on top of the Brie. Maybe a rounded teaspoonful. You don’t have to be exact, but don’t overfill them.
