1 cup brown sugar

1 cup crushed pineapple, drained
1 teaspoon vanilla
2 eggs
1/2 teaspoon salt
1/2 teaspoon baking soda
4 cups all-purpose flour
2 teaspoons baking powder

Steps:

  • Cream shortening and the sugars.
  • Add egg and pineapple.
  • Stir in vanilla.
  • Sift flour, then measure it.
  • To the flour, add salt, soda, and baking powder.
  • Add dry mixture to the wet mixture.
  • Drop by rounded tsps.
  • onto a lightly greased baking sheet.
  • Bake 10-12 minutes at 350°F,or until done.

½ cup butter (very soft or melted)
½ cup light brown sugar
1 cup all-purpose flour
2 eggs
1 tablespoon vanilla extract
1 tablespoon fresh lime juice
1/3 cup light brown sugar
¼ cup all-purpose flour
¼ teaspoon kosher salt
1 cup pineapple tidbits in 100% juice (drained)
1 cup shredded sweetened coconut
1 cup shredded sweetened coconut

Steps:

  • Preheat the oven to 350 degrees. Combine the crust ingredients and press the mixture into the bottom of a well-greased or parchment lined 10" square pan. Doubling this recipe will fill a 9x13 pan.
  • Bake for 12 minutes (or 15 minutes for a doubled recipe). Remove from the oven and let the crust cool for 10 minutes while preparing the filling.
  • Place the pineapple and 1 cup of shredded coconut in a bowl. Sprinkle with flour, brown sugar and salt. Stir to coat. Mix together the eggs, vanilla and lime and stir into the pineapple mixture.
  • Pour the filling over the crust and top with the remaining coconut. Bake for 25-27 minutes, until the coconut turns golden brown. Let cool completely before slicing. Enjoy!

1/2 cup shortening
1 cup packed brown sugar
1 egg
1 teaspoon vanilla extract

Steps:

  • Drain pineapple, reserving 3 tablespoons juice. Set pineapple aside; set juice aside for frosting. In a large bowl, cream shortening and brown sugar until light and fluffy. Beat in egg. Add pineapple and vanilla; mix well. Combine the flour, baking powder, baking soda and salt; stir into the creamed mixture. , Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 325° for 17-20 minutes or until golden brown. Remove to wire racks to cool., For frosting, in a small bowl, combine confectioners' sugar with enough of the reserved pineapple juice to achieve a smooth spreading consistency. I love chocolate. But sometimes you simply need something different. These cookies will surely fit the bill for different and yummy. They are sweet, they are soft and few people would expect a pineapple cookie. Try them .. you won't be sorry !

1 can(s) 8 0z size crushed pineapple *** see notes
1/2 c shortening
1 c packed light brown sugar
1 egg
1 tsp pure vanilla
2 c ap flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 1/2 c confectioners' sugar

Steps:

  • 1. Preheat oven to 325
  • 2. Drain pineapple but reserve 3 Tablespoons of the juice.
  • 3. Cream together the shortening and sugar. Add the egg and mix well. Add the pineapple and vanilla and mix completely.
  • 4. Combine flour, baking powder, baking soda and salt. Slowly combine with the wet ingredients until thoroughly mixed.
  • 5. Drop by tablespoonfuls onto a greased baking sheet. Optionally you can use a silpat without greasing. Place the cookies about 2" apart.
  • 6. Bake at 325 for 17 - 20 minutes or until golden brown. Immediately remove from baking sheet to a cooling rack.
  • 7. Combine confectioner sugar and pineapple juice to a smooth spreading consistency. Spred on the tops of the cooled cookies.
  • 8. These cookies keep very well in an airtight container and stay nice and soft and moist for a very long time.
  • 9. ***** NOTES: I have used fresh pineapple in these cookies and let me tell you, they are even more awesome ! Also, I made this same recipe with fresh oranges and they were delicious. If you like coconut you might consider adding a small amount of that to your batter.

2 1/4 cups (320g) all-purpose flour ((scoop and level to measure))
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 (20 oz) can crushed pineapple in juice ((I recommend using Dole))
3/4 cup (175ml) frozen pineapple juice concentrate, (thawed to room temperature* (I recommend using Dole))
1/2 cup (114g) unsalted butter, (softened)
1 cup (200g) granulated sugar
1 tsp lemon zest
3 large eggs
1 tsp vanilla extract
10 Tbsp (140g) unsalted butter, (nearly at room temperature)
1/4 cup (60ml) heavy cream
1 tsp vanilla extract
2 1/2 cups (320g) powdered sugar
1/2 cup (60g) sweetened shredded coconut

Steps:

  • Preheat oven to 350 degrees. Spray a 13 by 9-inch baking dish with non-stick cooking spray and set aside.
  • In a medium mixing bowl whisk together flour, baking powder, baking soda and salt for 20 seconds, set aside.
  • Set a fine mesh sieve over a bowl and pour pineapple into sieve to drain all of the juice well from canned pineapple, reserve the canned juice for another use (you should have a little over 3/4 cup drained).
  • If you'd like the pineapple to have a finer texture pulse it in a food processor about 15 times or so to chop it up a bit, this is optional.
  • In a medium bowl stir together crushed pineapple with pineapple juice concentrate, set aside.
  • In the bowl of an electric stand mixer fitted with the paddle attachment whip together butter, sugar and lemon zest until very pale and fluffy.
  • Mix in eggs one at a time then blend in vanilla extract.
  • Add in 1/3 of the flour mixture and mix just until combined then mix in 1/2 of the pineapple mixture and mix just until combined.
  • Add in another 1/3 of the flour mixture and mix just until combined then add in the remaining 1/2 of the pineapple mixture and mix just until combined.
  • Add in last 1/3 of the flour mixture the mix just until combined, remove bowl and scrape down bowl with rubber spatula just to evenly incorporate.
  • Pour batter into prepared baking dish and spread into an even layer.
  • Bake in preheated oven until toothpick inserted into center comes out clean, about 30 - 35 minutes.
  • Let cake cool completely on a wire rack.
  • For the frosting, in a clean bowl of an electric stand mixer whip butter until fluffy.
  • Add in heavy cream, vanilla, and powdered sugar and whip on high speed for approximately 5 minutes or so until it's very light and fluffy.
  • Spread frosting over cooled cake, top with coconut then cut into slices.
  • *You can heat this in the microwave to thaw but you'll want to heat in 15 second increments stirring between each just until lukewarm, if it's too hot it will melt the butter.

  • Place powdered sugar, lemon zest, and 2 tablespoons pineapple juice in a small bowl. Stir to combine. Add more pineapple juice, about ½ teaspoon at a time, if needed to achieve spreading consistency.
  • Spread the frosting on the cooled cookies.

  • If you are using canned pineapple slices, drain the pineapple slices and then squeeze the extra water/juice with your hands. Blend the canned pineapples until they are mushy, about 10 seconds. If you use fresh pineapples, remove the skin, cut into pieces and blend for 10 seconds.
  • Transfer the blended pineapple into a deep pan (non-stick preferably). Add sugar and cloves and stir well. Cook on medium to low heat until most liquid has evaporated, and the pineapple jam turns golden in color. Stirring constantly and continuously using a wooden spoon to avoid burning. Taste, and add more sugar as needed. Remove and discard the cloves and let cool in the fridge.
  • Sieve the flour, cornstarch, salt and sugar in a big bowl or container. Soften the butter to room temperature. Combine the flour mixture, butter, and egg yolks together. Knead to form the dough. The dough is ready when it doesn't stick to the hand. If the dough is too crumbly or dry, add a little bit more butter (about 1 tablespoon) until the dough is easy to work with.
  • Divide the dough and pineapple jam (filling) each into 30 equal rounds. Flatten the pastry dough with your palms and put the pineapple filling in the middle and use the dough to cover the filling. Use your palms to round it up and then shape it into a roll about 1 1/2-inch long shape. Use a small paring knife to make criss-cross patterns on the tart and then brush it with the egg wash (see picture above) using a small pastry brush. Place the pineapple tarts on a tray lined with parchment paper, arrange the pineapple tarts so they are at least 1 inch apart of each other.
