PINEAPPLE & CREAM FILLING

Steps:

• For this recipe, we are substituting heavy cream or whipping cream for the milk in the instant pudding recipe. Combine pudding and cream, and mix. (We recommend a hand mixer if you have one.)
• The mixture will become thick and fluffy. Fold in crushed, drained, pineapple until it is a spreadable consistency.
• This is a wonderful filling in white and yellow cakes! If you are not a fan of the pineapple pieces, you can puree them instead, and spread in between your layers before filling with the thickened vanilla pudding. Cakes with this filling will need to be refrigerated.

PINEAPPLE CREAM PUDDING

Steps:

• Measure milk in 4 cup glass measuring cup.
• Stir in pudding mix and pineapple.
• Microwave (high) uncovered for 5 and 1/2 minutes or until mixture starts to bubble, stirring once or twice during last half of cooking time.
• Cool.
• Stir in yogurt.
• Spoon into serving dishes.

PINEAPPLE PUDDING

Steps:

• In a bowl, whisk the sour cream, pineapple and pudding mix until blended and thickened. Serve immediately with vanilla wafers. Refrigerate leftovers.

PINEAPPLE PUDDING

Steps:

• Whip pudding, cream and pineapple juice until firm.
• Fold in crushed pineapple pieces.
• Chill for an hour or so before serving.
• Simple as that!

PINEAPPLE PUDDING PIE

Steps:

• In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Fold in pineapple. Pour into crust. Spread with whipped topping. Sprinkle with coconut. Cover and refrigerate.

PINEAPPLE DESSERT

Steps:

• 1. In your large mixer bowl, cream together butter, coconut dry pudding mix and cinnamon until fluffy. Add eggs, one at a time, beating well after each addition. In another bowl combine milk, undrained pineapple, coconut (and sometimes I add 1/2 c. golden raisins too) and almond extract. By hand hand, blend milk mixture into creamed mixture- mixture will look curdled, it should. Fold in croissant pieces. Pour into an ungreased 2 quart casserole of 9-inch square baking dish. Sprinkle top with cinnamon sugar if desired. Place casserole in a larger shallow pan on oven rack. Pour hot water into larger pan to depth of 1-inch. Bake in 325^ oven for one hour and 15 minutes for the casserole and about one hour for square dish or until knife inserted off center comes out clean.
• 2. Note: Serve with butter rum sauce , if desired.
