AUTHENTIC YAKISOBA

This authentic yakisoba was taught to me by my host mother when I lived in Osaka, Japan. It is the real deal and my friends love it.

4 (8 ounce) packages buckwheat soba noodles
2 tablespoons vegetable oil
1 pound pork tenderloin, cut against the grain in thin strips
2 cups carrots, cut into julienne strips
1 medium onion, cut into julienne strips
1 tablespoon freshly grated ginger
3 cloves garlic, minced
½ head napa cabbage, shredded
⅔ cup yakisoba sauce
salt and ground black pepper to taste
4 tablespoons pickled red ginger (beni shoga), or to taste
4 tablespoons kizami nori (dried flaked aonori seaweed), or to taste

Steps:

  • Bring a large pot of water to a boil. Cook soba in boiling water, stirring occasionally, until noodles are tender yet firm to the bite, 5 to 8 minutes. Drain noodles and rinse with cold water. Set aside.
  • Heat oil in a wok over medium heat. Add pork and stir-fry with a pinch of salt and pepper, about 5 minutes. Transfer meat to a plate, reserving oil in wok. Add carrots, onion, ginger, and garlic to the wok and stir-fry for 3 to 4 minutes.
  • Add cabbage to the wok and stir-fry briefly, about 1 minute. Add drained soba noodles. Pour in 1/2 the yakisoba sauce and stir-fry until noodles and vegetables are covered with sauce, about 3 minutes. Return pork to the wok. Add additional sauce as desired. Remove from heat.
  • Garnish yakisoba with kizami nori and a small pile of beni shoga just before serving.

Yakisoba is a classic Japanese street food made by stir-frying vegetables, meat and noodles with a sweet and savory sauce. My version retains the taste of authentic Yakisoba but adapts the technique and ingredients for non-Japanese kitchens.

230 grams fresh yellow noodles ((such as ramen))
2 teaspoons vegetable oil
100 grams pork belly ((or bacon, thinly sliced & chopped))
100 grams onion ((~1/2 small onion, sliced))
100 grams cabbage ((~2 leaves, chopped))
60 grams carrot ((~1/2 carrot, julienned))
2 tablespoons Worcestershire sauce
1 tablespoon ketchup
1 tablespoon oyster sauce
1/2 tablespoon honey
¼ teaspoon white pepper
1 tablespoon vegetable oil
Aonori ((for garnish))
Benishoga ((for garnish))

Steps:

  • Boil the noodles according to the directions on the package. When the noodles are done, drain and rinse thoroughly with cold water, using your fingers to agitate the noodles. Drain as much water off the noodles as possible by using a dropping motion with both hands and yanking up suddenly. Toss the noodles with 2 teaspoons of vegetable oil to keep the noodles from sticking together.
  • Prep the vegetables and make the sauce by whisking together the Worcestershire sauce, ketchup, oyster sauce, honey and white pepper in a small bowl.
  • Heat a large heavy-bottomed frying pan or griddle over high heat until hot. Add 1 tablespoon of oil along with the pork belly or bacon. Fry until the fat from the pork has started to render out.
  • Add the carrots, onions, and cabbage and stir fry using two spatulas until the vegetables are vibrant in color and starting to wilt (they don't need to be fully cooked through yet).
  • Add noodles and toss with the oil in the pan. If you notice they are sticking, add some more oil directly onto the noodles.
  • Drizzle the sauce evenly over the noodles and continue tossing and frying until the noodles are a uniform color and you can smell the sauce starts to caramelize.
  • Plate the yakisoba and sprinkle with aonori and benishoga to garnish.

1/4 cup Worcestershire sauce, such as Lea & Perrins® Worcestershire Sauce
4 teaspoons ketchup
1 tablespoon sugar
2 teaspoons soy sauce
One 16- to 18-ounce package cooked yakisoba noodles (see Cook's Note)
2 tablespoons neutral-flavored oil
8 ounces skinless pork belly, sliced into thin tiles
3 ounces shiitake mushrooms (2 to 5 mushrooms), sliced
1/2 onion, sliced
1/2 carrot, julienned
4 cabbage leaves, chopped
2 scallions, cut into 2-inch pieces
Freshly ground black pepper
Dried green seaweed flakes (aonori; see Cook's Note)

Steps:

  • Shredded pickled red ginger (beni shoga or kizami beni shoga; see Cook's Note)
  • For the yakisoba sauce: Whisk together the Worcestershire sauce, ketchup, sugar and soy sauce in a small bowl and reserve.
  • For the yakisoba: Place the noodles in a bowl, add about 1 teaspoon of the oil and stir to separate.
  • Heat the remaining oil in a skillet over high heat for 1 to 2 minutes. Add the pork belly and sear on all sides, about 3 minutes. Stir in the mushrooms, onion and carrot and cook until tender but not cooked all the way, 3 to 4 minutes. Add the cabbage and cook until almost tender, about 1 minute. Stir in the scallions and cook until slightly softened, about 30 seconds. Sprinkle in some pepper.
  • Add the noodles to the skillet and lower the heat to medium. Stir to warm and combine the noodles with the vegetables in the skillet for about 30 seconds. Stir in the yakisoba sauce and cook until the sauce is absorbed and distributed, about 1 minute. Plate up and top with the dried green seaweed and pickled red ginger if using.

⅓ cup soy sauce
⅓ cup rice wine
1 ½ tablespoons white sugar
3 tablespoons vegetable oil
1 pound chicken, cubed or thinly sliced
1 onion, thinly sliced
1 small head cabbage, very thinly sliced
3 cups julienned carrots, about 1 inch in length
1 tablespoon chopped ginger
2 green onions, thinly sliced, or more to taste

Steps:

  • Bring a large pot of water to a boil. Cook soba in boiling water, stirring occasionally, until noodles are tender yet firm to the bite, 8 to 10 minutes. Drain and rinse in cool water. Set aside.
  • Mix soy sauce, rice wine, and sugar together in a small bowl, stirring until sugar is dissolved.
  • Heat oil in a wok or large skillet over medium heat. Add chicken and onion and cook in the hot oil for 3 to 5 minutes. Add cabbage, carrots, and ginger and cook until cabbage is softened, 3 to 5 minutes more.
  • Place prepared noodles on top of chicken and vegetables in the wok. Pour sauce on top. Cover and cook another 3 to 5 minutes. Remove lid and toss mixture together until well combined. Sprinkle green onion over the mixture and serve.

1 carrot
1/4 of a small cabbage
4 spring onions, roughly chopped
8 ounces bean sprouts
15 fresh shiitake mushrooms, sliced
2 tablespoons oil
pickled ginger, to taste
ao nori, to taste
2 tablespoons Worcestershire sauce
2 tablespoons catsup
2 tablespoons soy sauce
2 tablespoons oyster sauce

Steps:

  • Cut the cabbage, carrot, onion, and mushrooms into bite sizes.
  • Heat oil in a large pan. Add cabbage, carrot, onion, and mushrooms in the pan and saute in high heat. Add yakisoba noodles in the pan and stir-fry 1 minute.
  • Put 1/3 cup of water in the pan and cover it with a lid. Steam the noodles for a few minutes. Take the lid off and add yakisoba seasoning or sauce.
  • Stir the noodles well and fry them for a few minutes.
  • Sprinkle ao-nori and beni-shoga over yakisoba before serving.

1 pinch cayenne pepper
1/2 teaspoon chopped fresh cilantro

Steps:

  • Prepare all ingredients before peeling and cutting avocados. Using a knife cut avocados in half and remove seed. Use a large spoon to remove avocado from skin and place in a bowl. Cut avocados down to 1-inch chunks while in bowl.
  • Measure all ingredients separately; do not combine any ingredients together.
  • Add liquids, tomatoes and onions to avocados, mix well by hand. Mix all ingredients together in a separate container. Mix by hand, being careful not to overmix, causing the avocados to purée. Guacamole should have 1/2- to 1-inch chunks of avocado visible.

3/4-1 lb boneless steak, inexpensive and partially frozen
2 (10 ounce) packages Birds Eye frozen Japanese-style vegetables or 2 (10 ounce) packages Birds Eye frozen Chinese-style vegetables
3 (3 ounce) packages ramen noodles or 4 (3 ounce) packages ramen noodles, broken up
soy sauce
salt and pepper, to taste
2 tablespoons oil

Steps:

  • Cut semi-frozen steak into thin bite size pieces and stir-fry over medium heat until thoroughly browned, heat 2 quarts water to rapid boil while stir-frying meat.
  • Add 1 to 2 seasoning packets of seasoning mix from noodles to steak.
  • Add Ramen noodles to water and boil 3 minutes.
  • While cooking noodles, add vegetables and soy sauce to taste to steak and heat thoroughly.
  • When noodles are done, drain and add to steak and vegetable mixture.
  • Salt and pepper to taste.
  • Note: Chicken, pork or shrimp can be substituted for steak.

Yakisoba is a Japanese stir-fried noodle dish with a rich Worcestershire-flavored sauce. This veggie-packed version combines carrots, bell peppers, mushrooms and kale for a fun mix of textures and flavors. The key in this dish is to sauté the yakisoba noodles first, creating a dryer, firmer noodle that won't fall apart in the sauce. (Fresh ramen noodles would also work well here.) The tangy-sweet sauce consists mainly of pantry condiments and can be made the day before. Leftovers can be enjoyed the traditional street food way: reheated and served in buttered hot dog buns topped with Japanese mayo and pickled ginger.

1 pound frozen presteamed yakisoba noodles, thawed
3 tablespoons neutral oil, such as safflower or canola
1 small yellow onion, thinly sliced
2 medium carrots, peeled and cut into matchsticks
1 large red bell pepper, stemmed, cored and thinly sliced
Kosher salt and black pepper
1 tablespoon minced garlic
8 ounces shiitake mushrooms, stemmed and thinly sliced

1 cup thinly sliced scallions

Steps:

  • Make the yakisoba: Place yakisoba noodles in a colander and rinse under room-temperature water. Using your hands, gently loosen and separate noodles. Drain well.
  • In a 12-inch high-sided nonstick skillet, heat 1 tablespoon of the oil over medium-high. Add noodles and spread in an even layer; cook undisturbed until golden and charred in spots, 3 minutes. Stir noodles once, then cook undisturbed until golden and charred in spots on the other side, 2 minutes longer. Transfer to a large plate.
  • Meanwhile, make the sauce: In a small bowl combine all of the ingredients and mix well.
  • To the skillet over medium, add the remaining 2 tablespoons oil, onion, carrot and bell pepper, and season with salt and pepper. Cook, stirring occasionally, until the vegetables are softened and charred in spots, 5 minutes. Stir in garlic until well combined, then add mushrooms and cook, stirring occasionally, until vegetables are tender and light golden, 3 to 5 minutes. Stir in kale in batches until wilted. Add the noodles, sauce and all but 1/4 cup of the scallions, and cook, stirring occasionally, until sauce is absorbed, about 3 minutes. (Noodles should be nicely coated in the sauce but not soupy.) Season with salt and pepper.
  • Divide yakisoba among 4 plates and garnish with the remaining scallions. Serve warm.

1/2 small cabbage, shaved
2 lbs cooked japanese noodles or 2 lbs capellini

8 ounces yakisoba sauce or 8 ounces stir-fry sauce
2 cups soy sauce
1 cup mirin
1/4 cup Worcestershire sauce (use vegetarian Worcestershire for vegetarian version)
1/4 cup rice vinegar
3 tablespoons sugar

Steps:

  • Combine items for yaki sauce in bowl; set aside.
  • Combine onion, peppers, cabbage, noodles, meat or mushrooms and yaki sauce in a large saute pan or wok.
  • Cook until desired crispness.
  • Garnish with sesame oil, scallions, ginger and/or sesame seeds.
  • For Vegetarian use the mushrooms.
