PLUM (VODKA) LIQUEUR



Plum (Vodka) Liqueur image

A plum liqueur, ideally made with Hungarian plums

3 cups vodka
1 to 1 1/2 cups sugar (according to your taste)
7 plums, pitted and quartered

Steps:

  • Combine vodka, sugar, plums, and lemon zest (optional) in a large sterile jar (boil the jar and lid for 10 minutes before filling)
  • Leave the jar sitting on the kitchen counter. Shaking occasionally to help sugar dissolve
  • After a month, strain the mixture through a coffee filter, paper towel, or cheesecloth
  • Add the elderflower syrup (optional) and pour into a sterile bottle, stored in a dark place

Steps:

  • Pick out well-ripened plums . Its best to remove their pits ahead of time and mash them.
  • Pour the fruits into a large, suitable container. After 3-4 days, add the sugar dissolved in water (1:3 ratio); the water needs to be at a temperature of 80°F (25 °C). If adding 44 lb (20 kg) sugar, you need 16 gal (60 L) of water. Stir until it dissolves and mix with the fruit mash.
  • Stir this material 3-4 times per day, the more the better. After about 14 days, the fermentation process should be complete and the mixture should have cleared up on top, although that all depends on the temperature, the quality of the sugar and frequency of stirring. Dont close the drum during fermentation. Its best to measure alcohol content with an alcohol meter - it needs to be about 17-18 % ABV. If the alcohol content is higher, add more water, if its lower - add sugar.
  • In some regions they like to add a little vinegar (1 bottle per drum) or citric acid if the plums are too overripe. There needs to be about 12″ (30 cm) of empty space between the material and the top of the container, at least during fermentation.

16 cups black or red plums, pitted and cut into eighths
3 ¼ cups white sugar, divided
3 cups 100 proof vodka
1 ½ tablespoons vanilla extract, divided
1 orange peel in pieces, divided

Steps:

  • Layer half the plums into the bottom of a very large jar with a lid, pressing the plums down as tightly as possible. Pour half the sugar over the plums, then half the vodka over the sugar. Sprinkle on half the vanilla extract, and place about half the orange peel pieces into the jar. Layer the rest of the plums into the jar, pressing them down, and top them with the remaining sugar, vodka, vanilla extract, and orange peel pieces. Screw on the jar lid.
  • Using an unscented candle, drip a coating of wax around the jar lid to prevent leaking. Cover the jar with a dark-colored towel. Place the jar on its side in a dark, cool place, and turn the jar every day for 21 days, replacing the towel to keep out light.
  • After 21 days, strain out the liqueur from the plums and peel with a fine strainer lined with cheesecloth, and bottle the liqueur in attractive bottles with tight-fitting caps.

350g plums, halved and destoned
175g white caster sugar
700ml brandy
½ cinnamon stick
1 star anise

Steps:

  • Make sure the plum halves are clean and dry, then put them in a large sterilised glass jar. Add the sugar, brandy, cinnamon stick and star anise. Seal and gently rotate the jar to help dissolve the sugar.
  • Continue to gently shake or rotate the jar (trying not to bash the fruit too much) every day for a week.
  • Once the sugar has dissolved, leave it in a cool dark cupboard for another 2 weeks to infuse.
  • Strain the mixture through a sieve lined with muslin, kitchen paper or coffee filter paper. Discard the plums, any fruit pulp and the spices, and pour the strained brandy into a bottle. Will keep for two months.

300 (11oz) golden caster sugar
1 (13⁄4 pints) brandy
1 cinnamon stick

Steps:

  • Pierce 450g (1lb) firm plums all over with a skewer or knife and put into a large bowl with 300g (11oz) golden caster sugar, 1 litre (13⁄4 pints) brandy and 1 cinnamon stick. Stir to dissolve the sugar.
  • Cover with clingfilm and leave to infuse in a cool, dark place for at least one month and up to three months. Strain through a sieve lined with kitchen paper and use a funnel to pour into sterilised glass bottles.

3 quarts plums, such as Damson (slightly unripe, washed and pitted)
2 quarts good-quality vodka
3 cinnamon sticks
4 whole cloves
1 cup sugar

Steps:

  • Gather the ingredients.
  • Place plums in a gallon jar. Pour half of the vodka into a large saucepan. Add cinnamon sticks and cloves. Let it warm over very low heat.
  • Dissolve sugar in warm vodka.
  • Remove from heat and cool to room temperature.
  • Pour vodka mixture over pitted plums in a gallon jar. Add remaining vodka. Screw cap on tightly and let sit for three months.
  • If prepared in summer, leave fruit in vodka mixture until just before Christmas Eve for full, fruity flavor. Strain and serve in cordial glasses.
  • Don't throw away the fruit! Use a few pieces of the fruit in your Christmas compote , serve it over ice cream, yogurt, pound cake, or make an open-faced coffee cake using the dough from this Polish sweet roll recipe .
