- Peel and halve the onions, then chop the leeks, celery and carrots into large chunks. Halve the garlic bulb around the equator.
- Put all the ingredients in a large pan with a pinch of sea salt, then cover with cold water.
- Place on the hob over a medium heat and bring just to the boil. Reduce the heat to a low simmer, skimming off any scum that rises to the top.
- Simmer gently for about 1 hour, or until the juices run clear when you pierce the meat.
- Remove the bird from the pan and bubble the poaching liquid for 40 minutes, or until reduced by about one-third (to add more flavour, you could strip the meat from the chicken and return the bones to the stock, too).
- Sieve the stock, then store in the fridge for up to 1 week.

- Combine chicken stock, water, yellow onion, celery, carrots, tomato paste, salt, peppercorns, and bay leaf in a large pot; bring to a gentle simmer. Decrease heat to medium-low and simmer, checking the flavor occasionally, until vegetables are slightly tender, 30 to 45 minutes.
- Bring stock to a boil and add chicken, pouring in more water if chicken isn't completely covered in liquid. Bring poaching liquid to a boil; remove pot from heat and cover tightly with a lid until chicken is no longer pink in the center, about 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Place the chicken in a very large stockpot or divide by poaching the chickens in 2 pots. Add the peppercorns, garlic, bay leaves, carrots, celery, onions, lemon slices and herb bundle tied with string. Sprinkle with salt. Cover the chickens with water and bring to a boil. Reduce the heat to low, a rolling simmer. Simmer 1 hour 15 minutes to 1 hour 30 minutes, then cool the chickens in their stock. Strain the stock. Remove the skin and bones from the chickens and pull the meat into bite-size pieces.

- Place chicken in a pot just large enough to hold chicken breast halves and add enough water to cover by 1-inch.
- Add carrot, celery, parsley, thyme, bay leaves, peppercorns, and salt.
- Bring just to a simmer over medium-high heat where bubbles start forming around the edge of the pot. Reduce to medium-low to keep temperature constant, about 170 to 180 degrees.
- Cook, skimming foam from the surface until they reach 160 degrees on an instant-read thermometer, 15 to 18 minutes.
- Transfer to a heatproof bowl and strain the liquid over the chicken and let the chicken breasts cool. This will keep them moist and tender. Refrigerate until ready to use, up to 3 days.
- Separate meat from the bones and cut as desired.
POACHED CHICKEN BREAST

- Tip the carrot, celery and garlic into a large saucepan. Tie the herbs together in a bunch with a piece of kitchen string, then add to the pan with the chicken breasts, water and 2 tsp salt (adding a little more water if it doesn't quite cover the chicken). Bring to the boil, then immediately lower to a simmer and cook over a very low heat for 10-12 mins, or until the juices run clear in the thickest part of the breast.

- Tie the bay leaves, peppercorns, cinnamon stick and garlic together in a piece of cheesecloth as a sachet garni. Combine the water, wine, sachet garni and vegetables in a pot large enough to hold the chicken and bring to a boil. Reduce to a simmer and cook for 15 minutes, before adding the chicken breast, carefully skimming off any scum and grease that accumulates on the surface of the water. Cook the chicken at a strong simmer for 20 minutes. Turn off the heat and cool the chicken in the poaching liquid in an ice water bath. When thoroughly cold, remove the chicken breasts and keep meat refrigerated until ready to serve. Bouillon may be strained and saved and used within 3 days to poach again.;
BASIC POACHED CHICKEN

- Remove the gizzards, heart, neck and liver from the chicken. Pull off any excess fat from the edges of cavity. Rinse the chicken in cold water, pat dry on paper towels and rub with the lemon juice. Place in a large, deep pot and cover with cold water to a depth of two inches. If necessary to fit the chicken comfortably in the pot, it can be split in half. Rinse the gizzards, heart and neck and add them as well. Reserve the liver for another use. It should not be added to poached chicken, because it will make the stock bitter. It can be frozen. The excess fat can be sauteed slowly in a small skillet to use for frying or it can also be frozen for future use.
- Bring the water with the chicken to a boil.
- While the water is coming to a boil, cut the root and top ends off the onions but do not peel them. The skin will enhance the color of the soup. Trim the roots and most of the green off the leeks and trim the root ends off the carrots. Cut or break the celery if necessary to fit it into the pot. Add the garlic. Tie the parsley and dill together in a piece of cheesecloth.
- When the chicken has come to a boil, reduce the heat to a steady simmer and skim the surface of the water, removing the scum as it accumulates. Do this for at least five minutes, until relatively little scum reappears.
- Add the vegetables, herbs and peppercorns. Continue simmering the chicken and vegetables slowly, skimming the surface from time to time, for one hour, until the juices of the chicken run clear when the thigh is pricked with a sharp fork. If necessary, additional water can be added to the pot during the cooking.
- Remove the chicken from the pot, allowing it to drain well. Set it aside, covered, in a shallow bowl.
- Pour the contents of the pot through a colander set into another large pot or a deep bowl that holds at least six quarts. Clean the original cooking pot. Pour the soup through a large, very fine strainer into the cooking pot. If you do not have a large very fine strainer, use a large strainer with a coarser mesh and line it with a clean linen napkin.
- Bring the soup to a gentle simmer and allow it to cook for 20 to 30 minutes, until it has reduced and concentrated somewhat. Do not allow it to come to a boil or it will turn cloudy. When the soup tastes rich enough, season it with salt.
- While the soup is simmering, retrieve vegetables you wish to serve with it and cut them into one-inch pieces. Remove the skin from the chicken and cut it into serving pieces.
- Serve the chicken and vegetables in bowls, with the hot soup spooned over them. If desired, noodles or rice can be cooked separately and added to the soup as well.
