5 Kellogg's® Eggo® Minis Homestyle waffles (divided)
Canned chocolate frosting
Semi-sweet chocolate morsels
1 scoop (1/2 cup) Breyers® ½ the Fat Creamy Vanilla Light Ice Cream
2 regular marshmallows, halved horizontally
1 scoop (3 tbsp.) Breyers® ½ the Fat Creamy Vanilla Light Ice Cream
Miniature semi-sweet chocolate morsels
Miniature marshmallows, halved horizontally
Sour belt candy or fruit leather

Steps:

  • 1. Prepare Kellogg's® Eggo® Minis Homestyle waffles according to package directions. Cool completely. For one paw, use frosting to attach 3 chocolate morsels to edge of one of the waffles. Repeat 3 more times for remaining paws. Set aside.
  • 2. Place the ½-cup scoop of ice cream in center of serving plate. Working quickly, arrange large marshmallow pieces around ice cream for legs.
  • 3. Place the remaining waffle above the scoop of ice cream for head. Top waffle with the 3-tablespoon scoop of ice cream. On small ice cream scoop, arrange small chocolate morsels for eyes, large chocolate morsel for nose and miniature marshmallow pieces for ears. Prop waffle paws against regular marshmallow pieces for feet. Place strips of candy on ice cream for scarf. Serve immediately.

3/4 cup creamy peanut butter
60 Ritz crackers
24 ounces white candy coating, melted
60 miniature marshmallows
30 mini Ritz crackers
Blue chocolate M&M's
Black sugar pearls
Black decorating icing, optional

Steps:

  • Spread peanut butter on half of the crackers; top with remaining crackers to make sandwiches. Refrigerate until firm., Dip sandwiches in melted candy coating; allow excess to drip off. Place on waxed paper. Dip marshmallows in coating; allow excess to drip off. Place two marshmallows on top of each cookie for ears., Dip mini crackers in melted candy coating; allow excess to drip off. Place on top of sandwiches for snouts. Top each snout with a blue M&M. The Polar Bear is one of my favourite shots... like a peppermint patty, smooth and refreshing. I had no idea it was so simple to make until my friend put it together during one of our Group Naps. What is a GN? Well, to have a very successful Group Nap, all you need are your best friends, many plush blankets all around you in preferably a variety of colours and textures, lots of chocolate and candy and a few Polar Bear shots. Turn on some Mr. Bean or Family Guy, sip or throw back some Polar Bears, indulge in some chocolates and have the best nap you've ever had. Life does not get much better than that!

2 cups sugar
¾ cup dark corn syrup
¾ cup butter (salted or unsalted)
2 cups whipping cream (divided)
1 teaspoon vanilla
1 cup peanuts
16 ounces vanilla candy coating

Steps:

  • Line a cookie sheet with parchment paper and set aside.
  • Mix sugar, corn syrup, butter, and 1 cup whipping cream in a 4 quart pan and bring to a boil over medium heat. Stir constantly.
  • Once it comes to a boil, heat the other cup of whipping cream in the microwave for 1 minute until hot. Gradually add the cream to the ingredients cooking in the pan, stirring constantly. (add it slowly so the caramel mixture never stops boiling)
  • Continue stirring and it will begin to thicken and darken in color. Cook until it reaches about 242 degrees (soft ball stage). You can do the cold water test by spooning a little of the caramel into cold water, let it sit for a few seconds and then pull it out and if it can hold the shape of a ball then it's done. If not, keep cooking and repeat the test. (This cooking process to get it to the right temperature could take up to 20 - 25 minutes. Just keep stirring over the medium heat).
  • When it reaches the soft ball stage or 242 degrees, remove from heat and stir in vanilla. Then fold in the peanuts. Pour into a bowl to cool for about 30 minutes, stirring every few minutes to cool quicker.
  • Spoon onto parchment paper in tablespoon size mounds. Place in the fridge for about 30 minutes until set.
  • Melt vanilla candy coating in the microwave on low for 30 second increments. Stir until melted and smooth. Dip the caramel cluster into the white chocolate with a fork allowing the excess chocolate to drip off. (I use a plastic fork with the middle tines broken out.This works great for letting the excess chocolate to drip back into the bowl) Place back onto the parchment lined pan to set up. They can be refrigerated to set up faster.

An easy-to-decorate, and festive cupcake that's great for any occasion! You can use any cupcake recipe you wish (I've used both the Cranberry Cupcakes with White Chocolate Frosting-minus the white chocolate frosting-and Peppermint Mocha Cupcakes from Allrecipes with great results). Simply whip up some cream cheese frosting, add some coconut and decorations-and you've got adorable, tasty treats bound to make anyone smile!

18 each unfrosted cupcakes, cooled
¾ cup unsalted butter, softened
1 (8 ounce) package cream cheese, softened
2 ¾ cups powdered sugar
1 teaspoon vanilla extract
⅛ teaspoon salt
2 tablespoons heavy cream
1 cup sweetened flaked coconut
42 each miniature marshmallows
44 black sugar pearl sprinkles, or as needed

Steps:

  • Place butter in a large bowl and cream until smooth with an electric mixer. Add cream cheese and beat until thoroughly combined. Mix in powdered sugar, 1 cup at a time, beating well after each addition. Mix in vanilla and salt until thoroughly combined. Pour in heavy cream and beat until frosting is smooth, about 2 minutes.
  • Take 1 baked and cooled cupcake and frost with cream cheese frosting, making as even a layer as possible. Sprinkle coconut over the top of the frosting, and shake off any excess.
  • Take 1 mini marshmallow and cut it in half horizontally using scissors or kitchen shears. Place one half of the marshmallow cut-side down in the center of the top of the cupcake, and press gently into the frosting to adhere. Take 1 black sugar pearl sprinkle and attach to the middle of the marshmallow half using a small amount of frosting; thus creating the nose and muzzle. Take 2 black sugar pearl sprinkles and place above the nose on each side for the eyes. Press gently into frosting to adhere. Take 2 whole mini marshmallows and place at the top of the cupcake on each side to create ears. Repeat with remaining cupcakes.

  • Place brown sugar, butter, cinnamon, nutmeg, and cloves in food processor. Scrape in seeds from vanilla bean. Process until blended. DO AHEAD Butter mixture can be made 1 week ahead. Wrap in plastic and chill.

250g icing sugar
1 egg white, beaten
few drops of peppermint essence
15 chocolate sweets (we used Waitrose blue and green chocolate beans)

Steps:

  • Sieve the icing sugar into a large bowl. Mix in the egg white, a little at a time - stop adding it when you have a soft dough that feels like plasticine.
  • Add 3 drops of the peppermint essence, mix well and taste. Add another drop if it isn't minty enough.
  • Roll half the mixture into 15 balls, about the size of cherry tomatoes, then flatten them with your hand to make the bear heads.
  • Place on sheets of baking parchment on a large board or tray. Using half the remaining mixture, make blueberry-sized balls and flatten them out onto the heads to make snouts. Add chocolate sweets for the noses.
  • Use the rest of the mixture to make the ears. Shape them into tiny balls and press them gently into the top of the heads with your fingertips. Use a cocktail stick to shape the eyes.
  • Leave the polar bears to dry for 3-4 hrs, or overnight. Eat within 1 month.
