2 pounds pork loin, cut into 1 inch cubes
1 teaspoon Kosher salt
2 tablespoons butter
1 green bell pepper, sliced
½ onion, sliced
4 cloves garlic, minced
2 tablespoons all-purpose flour
½ cup white sugar
¼ cup white wine
¼ cup red wine vinegar
¼ cup water
3 tablespoons soy sauce
2 ½ tablespoons ketchup
1 teaspoon ground black pepper

Steps:

  • Heat oil in a large skillet over high heat. Place the pork in the oil and sprinkle with salt. Fry for 5 to 10 minutes, or until brown on all sides. Remove the pork from the oil, cover with foil to keep warm, and set aside.
  • In the same skillet over medium heat melt the butter. Mix in the bell pepper, onion, and garlic and saute for 5 minutes. Stir in the flour and sugar and cook for 1 minute. Stir in the wine, vinegar, and water. Mix in the soy sauce, ketchup, and black pepper. Reduce heat to low and let simmer for 5 minutes, or until the sauce has thickened. Return the pork pieces to the skillet and stir until well combined.

¼ cup bacon grease
2 pounds pork tenderloin, cut into 1/2 inch strips
¼ cup butter
3 onions, thinly sliced
2 tablespoons all-purpose flour
3 tablespoons paprika
1 green bell pepper, cut into strips
1 red bell pepper, cut into strips
1 yellow bell pepper, cut into strips
2 fresh jalapeno peppers, sliced into rings
1 cup beef stock
3 tablespoons tomato paste

Steps:

  • Heat bacon grease in a large pot over medium heat. Stir in the pork, and cook until evenly browned. Remove pork and liquid from the pot, and set aside.
  • In the large pot, melt the butter over medium heat, and saute the onions until tender and lightly browned. Mix in the flour and paprika, and, stirring constantly, cook until thickened.
  • Mix pork, green bell pepper, red bell pepper, yellow bell pepper, and jalapeno peppers into the pot. Stir in the beef stock, tomato paste, garlic, salt, and bay leaf. Bring the mixture to a boil. Reduce heat, cover, and simmer 1 to 1 1/2 hours, stirring occasionally.

This one-pan dish has flavors reminiscent of the Italian-American classic sausage-and-peppers, but is much lighter. We've swapped the typical sausage for lean and juicy pork tenderloin and added pickled pepperoncini for zip.

1 large pork tenderloin (about 11/2 pounds), trimmed
Kosher salt
3 tablespoons extra-virgin olive oil
1 small onion, thickly sliced
2 red and/or yellow bell peppers, sliced into wide strips

2 tablespoons tomato paste
1/4 cup sliced pickled pepperoncini, plus 2 teaspoons liquid from the jar

Steps:

  • Preheat the broiler. Slice the pork on an angle into 1-inch-thick pieces; season with salt. Heat a large ovenproof skillet over medium-high heat; add 1 tablespoon olive oil. Add the onion and bell peppers; season with 1/2 teaspoon salt and cook until the vegetables are crisp-tender and slightly browned, 4 to 6 minutes. Transfer to a plate.
  • Add the remaining 2 tablespoons oil to the skillet. Add the pork and sear over high heat until browned, 2 to 4 minutes per side. Transfer the pork to the plate with the onion and peppers.
  • Reduce the heat to medium and add the garlic, sage and tomato paste to the skillet. Cook, stirring, until the tomato paste turns brick-red, about 1 minute. Add the pepperoncini slices and their liquid, then pour in the wine and bring to a boil, scraping up any browned bits with a wooden spoon or spatula. Add the broth and return to a simmer. Arrange the pork in a single layer in the skillet; add the onion and peppers and sprinkle with cheese. Transfer to the oven and broil until the pork is cooked through, 4 to 7 minutes.

PORK AND PEPPERS (IN 30 MINUTES)



Pork and Peppers (in 30 minutes) image

Number Of Ingredients 9

6-8 country style pork ribs (I used boneless)
Salt and pepper (to taste)
3 tbsp olive oil
2 tbsp tomato paste
1 red bell pepper (cut into strips)
1 green bell pepper (cut into strips
1 small yellow onion (cut into strips)
4 cloves garlic (minced)
1 cup and 1/4 of red wine (you could also sub beef broth)

Steps:

  • Heat a skillet on high heat and add olive oil.
  • Liberally salt and pepper the pork and once the skillet is hot, add the pork to the pan and sear on each side for about 2 minutes. (The pork won't be cooked in the middle...that's ok)
  • Remove the pork and set aside on a plate.
  • Lower the skillet heat to medium.
  • Add the tomato paste to the skillet and cook for about 30 seconds.
  • Add in the peppers and onions and cook for about 5 minutes or until they're starting to turn translucent.
  • Add in the garlic and cook for 2 more minutes.
  • Add in the red wine and bring to a boil for 3 minutes.
  • Reduce the heat to medium-low and add the pork back into the pan nestling it into the sauce.
  • Cook for about 15 minutes, turning half way through.

2 tablespoons cornstarch
1 tablespoon sugar
1/2 cup pineapple juice (drained from pineapple chunks)

1/2 cup thinly sliced carrot
1 cup pineapple chunk

  • Slice pork thinly (meat is easier to slice when partly frozen).

  • Add pork to skilled& stir fry until done, time depends on sizes of pork pieces but it should only take a few minutes.
  • Add pineapple juice mixture to meat& blend thoroughly, remove from pan.
  • Stir fry green pepper, carrots& pineapple chunks for about 3 minutes.
  • Return meat& juice mixture to pan, stir just until heated through.

The trick to the best pork tenderloin is to sear the pork on all sides before roasting. In our recipe, the pork is browned on all sides and then baked on top a bed of onions and peppers. Most often, you will find pork tenderloins sold in packages with two tenderloins. One tenderloin should generously serve two people and will most likely serve three. One note, "pork tenderloins" and "pork loin" are two different cuts of meat. Pork tenderloins are much smaller and take less time to cook.

2 pork tenderloins (about 1 1/2-pounds each)
1 tablespoon vegetable oil
1 tablespoon butter
2 medium onions, sliced
3 bell peppers, sliced
1 tablespoon minced garlic cloves (3 cloves)
1 tablespoon whole ground mustard or Dijon mustard
1 tablespoon chopped fresh thyme leaves
Salt and fresh ground pepper

Steps:

  • Heat oven to 425 degrees F.
  • Trim each tenderloin of any silver skin (this can be tough when cooked). To do this, use a small sharp knife and slide the blade under and outward to remove it.
  • Pat pork dry with paper towels, and then season on all sides with one teaspoon of salt.
  • Heat the oil in a heavy-bottomed oven-safe skillet over medium heat. When the oil is hot and shimmers, add the pork tenderloins and cook, turning every few minutes, until evenly browned all over; 10 to 12 minutes. Transfer to a large plate or cutting board. (The pork will not be cooked through).
  • Keep the pan used to sear the pork on the stove over medium heat. Add the butter. When the butter is melted and bubbling, stir in the onions then cook, stirring often, until they start to soften, about 5 minutes. Stir in the bell peppers, garlic, one teaspoon of thyme, and 1/4 teaspoon of salt. Cook, stirring every minute or so, for 5 more minutes.
  • Use a pastry brush (or use your fingers) to rub the seared pork all over with the mustard, two teaspoons of thyme, and a generous amount of black pepper (1/4 to 1/2 teaspoon).
  • Place the seared pork tenderloins on top of the onions and bell peppers, and then slide the pan into the oven. Roast 15 to 20 minutes or until an internal thermometer inserted into the thickest part registers 145 degrees F. Transfer the pork to a large plate and cover with aluminum foil. Let rest about 5 minutes.
  • To serve, slice pork into 1-inch slices then serve on top of the onions and peppers.

2 pounds boneless pork shoulder, cut into 1-inch pieces
3 tablespoons vegetable oil
2 medium yellow onions, roughly chopped
2 medium green bell peppers, roughly chopped
2 medium cloves garlic, finely chopped
2 tablespoons finely chopped fresh oregano leaves
1 quart (4 cups) low-sodium chicken broth
1 (12 ounce) bottle beer (preferably a lager)
2 teaspoons packed light brown sugar
1 medium bay leaf

Steps:

  • Combine flour, salt and pepper in a shallow dish or large plastic bag. Add pork and toss to coat.
  • Heat oil in a 3 to 4-quart Dutch oven or heavy-bottomed saucepan over medium-high heat. When oil shimmers, add half of pork (be sure to shake off excess flour before adding) and cook until brown on all sides, about 5 to 7 minutes. Remove to a plate and repeat with remaining meat.
