Provided by Food Network Kitchen

Time 40m

Yield 4 servings

Number Of Ingredients 13

3 tablespoons extra-virgin olive oil, plus more for drizzling
1 onion, chopped
Kosher salt
3 fully cooked chorizo sausages (about 8 ounces), sliced 1/2 inch thick
3 cloves garlic, minced
3 russet potatoes, peeled and cut into 1-inch chunks
Freshly ground pepper
4 cups low-sodium chicken broth
2 bay leaves
1 teaspoon smoked Spanish paprika
1 small bunch Swiss chard, stems removed, leaves chopped (about 6 cups)
Chopped fresh parsley, for topping
Toasted crusty bread, for serving

Steps:

  • Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the onion, season with 1/2 teaspoon salt and cook, stirring occasionally, until soft and slightly browned, about 5 minutes. Add the chorizo and cook, stirring occasionally, until lightly browned around the edges, about 3 minutes. Add the garlic and cook, stirring, 1 minute. Add the potatoes, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until well coated, about 3 more minutes.
  • Add the chicken broth, bay leaves and paprika. Bring to a simmer, then reduce the heat to medium and cook 12 minutes. Add the chard; cover and cook, stirring, until the potatoes are tender and the chard is wilted, 3 more minutes. Season with salt and pepper. Ladle into bowls; top with parsley, drizzle with olive oil and serve with bread.

CHORIZO, TOMATO, PORK, STEW

Chorizo, Tomato, Pork, Stew image

Hearty, Interesting, Flavoursome.

Provided by ashleyrolfechef

Time 2h30m

Yield Serves 5

Number Of Ingredients 17

860g Leg Of Pork (Cubed, Little Fat)
1 Onion Finely Chopped (100g)
1 Star Anise
Rapeseed Oil
Seasoning (Salt + Pepper)
175ml Port
400ml Strong Beef Stock
200g Smoked Chorizo
1 Tin Haricot Beans (Washed And Drained)
85g Tomato Puree
450g Chopped Tomatoe's
2 Cloves Of Garlic (Finely Chopped)
1 Teaspoon Cumin
3 Teaspoons Hot Paprika
3 Teaspoons Chilli Powder
Lemon Juice (Finish To Taste)
Bunch Of Corainder (Chopped Roughly, Once!)

Steps:

  • Get a strong pan, put a shallow level of oil into the pan and turn the heat onto medium. Once hot add the onion and the star anise, The reason is the star anise works with the onion to boost the meatiness of the stew and adds an amazing aromat. Cook the onion until translucent to bring the natural sweetness of the onion then add garlic and cook for a fruther 1 minute, after the minute remove the star anise.
  • Now add all your spices to the pan and cook for 1 minute to release the fragarance of the spice.
  • Now add your tomato puree and when the pan is back up to heat add your port, cook out for 2 minutes until the alcohol content is removed. (Should be a paste type mixture)
  • Now add the Beef stock and reduce by half, then add your chopped tomatoes, Chorizo and your raw Pork. the reason for not browning the meat is because I want to keep the meat soft and melt in the mout without the crisp exterior.
  • Now all ingridients are in the pan except for the Haricot Beans, place in the oven at 150 oc for 2 hours, then take out from the oven and add the Beans, Seasoning, Coriander and Lemon Juice.
  • Your stew is now ready serve with rustic sourdough bread or cous-cous.

CHORIZO, PORK BELLY & CHICKPEA CASSEROLE

Chorizo, pork belly & chickpea casserole image

A Spanish-influenced stew with slow-cooked belly pork, a cheap cut with great flavour and soft texture

Provided by Barney Desmazery

Categories     Main course

Time 2h50m

Number Of Ingredients 16

1 tbsp olive oil
700g skinless, boneless pork belly, cut into large bite-sized chunks
100g cooking chorizo, sliced into thin rounds
1 large onion, chopped
1 large carrot, finely chopped
1 tsp fennel seed
small pinch dried chilli flakes
2 garlic cloves
4 bay leaves, fresh are best
sprig of thyme
large pinch golden caster sugar
1 tbsp tomato purée
50ml sherry vinegar or good quality red wine vinegar
400g tin chopped tomato
400g tin chickpea, drained and rinsed
fresh chopped parsley

Steps:

  • 1 Heat the oven to 160C/140C fan/gas 3. Heat the oil in a casserole dish with a lid and spend a good 10 mins browning the pork on all sides. If your casserole dish isn't wide enough to fit the pork in a single layer then brown it in batches. Scoop the pork out and set aside then add the chorizo and sizzle for a minute. Add the vegetables, fennel seeds, chilli flakes, garlic and herbs and cook for about 5 mins until the vegetables are soft and just starting to colour. Sprinkle over the sugar and stir in the tomato purée then splash in the vinegar and bubble for a moment. Tip in the tomatoes and a can of water. Stir the pork and juices into the sauce, season with salt and pepper and bring to a simmer.
  • Cover the dish with a lid and place in the oven for 1 hr 45 mins, checking occasionally and if the sauce becomes too thick add a splash more water. Remove the pan from the oven and stir in the chickpeas and return to the oven for 15 mins. Remove again and leave to cool slightly so it's not scorching hot then stir through the parsley. Taste for seasoning and serve with crusty bread or boiled potatoes.

CROCK POT CHORIZO STEW

Crock Pot Chorizo Stew image

I recently made some fresh chorizo sausage (I posted it here at RecipeZaar, too - it's a great recipe!), and this stew is the result of cooking up part of that batch. Very rich and tasty!

Provided by Julesong

Categories     Stew

Time 4h5m

Yield 4-6 serving(s)

Number Of Ingredients 16

3 cups hot water
3 teaspoons beef bouillon
2 cups chopped cabbage
1 (15 ounce) can yellow hominy, drained
1 (7 ounce) can minced mild green chilies, with liquid
1 cup minced yellow onion
2 stalks celery, chopped
2 teaspoons minced roasted garlic
1/2 cup chopped roasted red peppers or 1/2 cup yellow bell pepper
1/8 teaspoon fresh ground black pepper, to taste (or black or pink or green mixture)
2 teaspoons extra virgin olive oil
1 lb fresh chorizo sausage, removed from the skin
salt and pepper, to taste
chopped fresh cilantro, for garnish
sour cream, for garnish
shredded cheese, for garnish (cheddar, monterey jack, pepper jack, etc)

Steps:

  • In the crock pot on high temperature, dissolve the bouillon in the hot water.
  • Add the cabbage, hominy, chiles, onion, celery, garlic, bell pepper, and freshly ground black pepper.
  • Over a high temperature in a skillet, saute the unskinned chorizo sausage in olive oil until browned, about 7 to 10 minutes.
  • Add cooked chorizo to the crock pot.
  • Simmer on high for 3 to 4 hours, or until it has reached the texture you prefer.
  • Add salt and pepper to taste, add your favorite garnishes, and enjoy.
  • Serve along with nice crusty bread or- even better- cornbread!
  • Note: if your chorizo didn't add enough spices/flavor for you, feel free to add ancho chile powder, cayenne, jalapeno, whatever floats your boat. :).
