1 clove garlic
1/4 cup minced shallots
2 teaspoons white sugar
1 tablespoon fish sauce
2 tablespoons white rice
1/2 minced Serrano chili, seeds removed
1 pinch salt
1 pound ground pork
1/2 cup apricot preserves
1/2 lime, juiced
1/2 teaspoon garlic chili sauce

Steps:

  • Soak wooden skewers in water while you prepare the meatballs. Mince garlic and combine in a medium bowl with shallots, sugar and fish sauce. With a coffee grinder, grind rice to a fine powder and add to bowl along with Serrano chili, salt and pork. Mix all ingredients until well combined. If desired, check for seasoning by heating a small amount of oil in a frying pan, adding a teaspoon of the meat and cooking through. Make any necessary adjustments. Using 1 to 1 1/2 Tablespoons of meat, form into balls. Skewer meatballs onto wooden skewers. Place finished skewers on a grill preheated to medium high. In a small saucepan, melt apricot preserves with lime juice and chili sauce over low heat. Meatballs should take about 5-6 minutes to cook through. During last few minutes of cooking, brush with the melted apricot preserves turning skewers to be sure and coat both sides. Serve with rice and grilled vegetables.

⅓ cup minced red onion
⅓ cup diced dried apricots
1 tablespoon rice vinegar
1 tablespoon sesame oil
2 teaspoons ground coriander
1 teaspoon salt, or to taste
½ teaspoon white pepper
¼ teaspoon crushed red pepper flakes, or to taste
1 ½ cups apricot preserves
⅓ cup hoisin sauce
2 teaspoons grated fresh ginger
2 teaspoons chili-garlic sauce
1 medium lime, juiced
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a 12x18-inch baking sheet with parchment paper or aluminum foil.
  • Combine pork, cooked rice, onion, apricots, vinegar, sesame oil, coriander, salt, pepper, and pepper flakes in a medium mixing bowl; mix until well blended. Form into 24 meatballs, each about 1 1/2 inch in diameter. Place meatballs on the prepared baking sheet.
  • Bake in the preheated oven until lightly browned, 30 to 35 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).

1 1/2 lbs ground beef
1 small onion, finely chopped
1 tablespoon fresh parsley, chopped
1 egg
breadcrumbs
sweet soy sauce
salt & fresh ground pepper
16 ounces apricots
margarine
2 tablespoons honey
1/2 tablespoon thyme, to taste
1 tablespoon cornstarch

Steps:

  • Mix the ground beef with the chopped onion, parsley, egg, soy sauce, pepper & salt and the breadcrumbs until you get a firm mixture. Roll medium sized meatballs with your hands from this mixture.
  • Put them in the refrigerator for about 30 minutes. Or do this part before going to work.
  • Separate the apricots from its juice, but save both.
  • Cook the meatballs in the margarine on medium high heat until well done and brown on each side.
  • Transfer the meatballs on to a platter, and add the apricot juice into the pan.
  • Add the honey and the thyme; let this cook for a minute.
  • Thicken the sauce a little with cornstarch.
  • Add the meatballs and the apricots and let them heat up.

1 cup dry bread crumbs
1/4 cup chopped onion
1-1/2 pounds ground fully cooked ham
1 pound bulk pork sausage
1 cup packed brown sugar
1/4 cup vinegar
2 tablespoons all-purpose flour
1 teaspoon ground mustard
1/2 teaspoon ground allspice
1/2 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 325°. Whisk eggs with 3/4 cup nectar. Stir in bread crumbs and onion. Add ham and sausage; mix lightly but thoroughly. Shape into 2-in. balls. Place in an ungreased 13x9-in. baking dish., In another bowl, mix remaining ingredients and remaining nectar. Pour over ham balls. Bake, uncovered, until meat is no longer pink, 45-50 minutes.

I serve it with a nice arugula salad with cherry tomatoes, raisins, chopped walnuts, and vinaigrette dressing, or for a southern flare--garlic-smashed potatoes and freshly steamed snap green beans. Just yummy deliciousness and mum is always right!

Submitted for RSC #9. I tinkered around with this through multiple incarnations. I finally landed on this slightly different taste for the meatballs. I really liked the taste. I think if I had to do it all over, I might have just left out the apricot sauce, the meatballs are yummy by themselves.

1 lb ground beef
1 lb pork sausage
2 1/2 cups crushed butter flavored crackers (like RITZ)
1 small white onion, chopped
2 eggs, lightly beaten
1/4 cup brown sugar
1/4 cup milk
1 teaspoon salt
1/8 teaspoon nutmeg
1/2 teaspoon ground ginger
6 ounces dried apricots (about 1 cup firmly packed)
2 cups hot water
2 cinnamon sticks
2 teaspoons lemon juice
1/2 teaspoon fresh minced ginger
2 tablespoons sugar

Steps:

  • Place the apricots in a dish; pour the 2 cups hot water over them to completely cover.
  • Allow them to soak for at least 2 hours or overnight.
  • To make meatballs, preheat the oven to 375 degrees.
  • In a bowl mix together all the meatball ingredients.
  • Shape the mixture into 1 inch balls and put on an ungreased baking sheet.
  • Bake for 25-30 minutes, or until meatballs are browned.
  • Put the cooked meatballs into a baking dish and hold to the side.
  • While the meatballs are cooking place the apricots along with the water they have been soaking in, into a sauce pan.
  • Add the two cinnamon sticks and bring to a boil.
  • Lower the heat, cover and simmer until the apricots are soft, about 15 minutes.
  • Remove the cinnamon sticks.
  • Put the mixture (including the water the apricots are cooking in) into a blender or food processor, add the sugar and ginger and blend until smooth. (make sure you remove the center cap of the mixer since the sauce will be hot).
  • Pour the apricot sauce over the meatballs and bake uncovered for 20 minutes in a 350 degree oven.
