This delicious one-pot Pork Tenderloin with Mushroom Cream Sauce is packed with flavor. But it's so simple it can be on the table in half an hour, making it perfect for a busy midweek family meal. If you're looking for a change from the usual chicken or pasta - read on!

2 lb Pork Tenderloin
2 Shallots (finely sliced)
10 oz Mushrooms (sliced (I used cremini but any kind will do))
2 cloves Garlic (crushed)
⅓ cup Marsala Wine
1 tbsp Dijon Mustard
1 cup Chicken Stock (gluten free if required)
¼ cup Heavy Cream (Double Cream)
Sea Salt and Black Pepper
Chopped Parsley (optional)

Steps:

  • Cut the pork into one inch medallions. Flatten each in your palm and season well with sea salt and pepper.
  • In a medium skillet, cook the medallions over a medium high heat for around 3 minutes on each side. Remove from the pan while you make the sauce. Cover to keep warm.
  • Stir the sliced shallots into the same skillet. Scrape up all the bits from the pork and cook over a medium low heat for around 5 minutes - until soft.
  • Add the sliced mushrooms and cook for another 5 minutes. Then stir in the crushed garlic.
  • Add the marsala to the pan and turn up the heat. Let it bubble for a minute or two.
  • Add the mustard and the stock. bring the sauce to a simmer, letting the flavours come together for 5 minutes.
  • Season again to taste and finish by stirring in the cream. Add the pork back to the pan for two minutes to re-heat.
  • Serve and garnish with chopped parsley (optional).

1 (1 -1 1/2 lb) pork tenderloin
1 1/2 cups fresh mushrooms (chopped)
2 tablespoons sliced green onions
1 garlic clove, minced
1 tablespoon butter or 1 tablespoon margarine
1 tablespoon cornstarch
1 tablespoon chopped fresh parsley
1/2 teaspoon dried thyme leaves, crushed
1 dash black pepper
2/3 cup water
1 -2 tablespoon dry sherry
3/4 teaspoon beef bouillon granules

Steps:

  • Preheat oven to 375. Place pork on rack in shallow baking pan. Insert meat thermometer into thickest part of tenderloin. Roast, uncovered, 25 to 30 minutes, or until thermometer registers 159°F Let stand, covered 5 to 10 minutes while preparing sauce.
  • Cook and stir mushrooms, green onion and garlic in butter in small saucepan over medium heat until vegetables are tender. Stir in cornstarch, parsley, thyme and pepper. Stir in water, sherry and bouillon grandules.
  • Cook and stir until sauce boils and thickens. Cook and stir 2 minutes more. Slice pork and serve with sauce.
  • *Shitake mushrooms can be used in place of the regular mushrooms.

1 tbsp olive oil
600g pork medallions
2 tbsp unsalted butter
2 banana shallots , thinly sliced
250g chestnut mushrooms , sliced
1 garlic clove , crushed
1 tbsp plain flour
100ml madeira or sherry
400ml chicken stock
4 sprigs thyme
½ tbsp wholegrain mustard
100ml double cream
mashed potato and wilted greens, to serve

Steps:

  • Heat the oil in a large non-stick frying pan and fry the pork on each side for 2-3 mins until golden brown. Set aside on a plate.
  • Melt the butter in the pan and, when foaming, fry the shallots and mushrooms over a medium heat for 10 mins. Add the garlic and cook for another 1 min. Stir through the flour and cook for another 2 mins. Whisk through the madeira and boil for 2 mins. Gradually stir through the stock until the sauce is lump free. Add the thyme and mustard and season to taste.
  • Return the pork to the pan and simmer uncovered for 5-7 mins or until the pork is cooked through. Stir through the cream and heat again until simmering. Serve with creamy mashed potatoes and wilted greens.

12 ounces uncooked linguine
1 pound pork tenderloin, cut into 1-inch slices
1/4 cup all-purpose flour
2 tablespoons olive oil
3 tablespoons butter, divided
1-3/4 cups sliced baby portobello mushrooms
5 green onions, thinly sliced
2 garlic cloves, minced
1-1/2 cups heavy whipping cream
1/4 cup brandy
2 tablespoons minced fresh thyme
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
2 plum tomatoes, seeded and chopped
2 tablespoons shredded Parmesan cheese

Steps:

  • Cook linguine according to package directions. Meanwhile, flatten pork slices to 1/4-in. thickness. Place flour in a large shallow dish. Add pork, a few pieces at a time, and turn to coat., In a large skillet over medium-high heat, cook pork in oil and 2 tablespoons butter in batches until juices run clear, 3-4 minutes on each side. Set aside and keep warm., In the same skillet, saute mushrooms and onions in remaining butter until tender. Add garlic; cook 1 minute longer. This is fairly quick and easy to prepare. I made it last night in about 40 min. It is elegant enough for company. You can make double and freeze it for another meal. I looove this sauce.

1 pork tenderloin (cut into 3/4-inch medallions)
2 -3 tablespoons oil (any vegetable oil is fine)
1 medium onion, finely chopped
2 cups sliced fresh mushrooms
1 -2 garlic clove, minced
seasoning salt
fresh black pepper
1/2 teaspoon dried thyme
2 tablespoons dry sherry
2 cups chicken stock
1 teaspoon cornstarch
1 teaspoon Dijon mustard
1/2 cup half-and-half cream
2 tablespoons finely chopped fresh sage
2 tablespoons finely chopped fresh thyme
2 tablespoons finely chopped fresh parsley

Steps:

  • Heat 10 " skillet.
  • Add oil.
  • Season medallions on one side. Place in pan season side down. Season other side . Brown until golden and turn. When both sides are nice and golden, remove from pan and set aside.
  • Add more oil if needed and onion, mushrooms, and garlic. Saute until onion is soft and mushrooms are lightly browned.
  • Add sherry, dried thyme and salt and pepper. Cook til sherry is almost evaporated, 2 minutes.
  • Add stock (with cornstarch mixed in), mustard and cream. Bring to a boil.
  • Add meat back to pan, along with herbs.
  • Reduce heat, cover and simmer 15 -20 minutes.

  • Heat 1 tablespoon of the oil in a large 12” skillet over medium-high heat. Once heated add 1 tablespoon of the butter and heat until the butter is melted. Add half of the medallions and sear until the bottoms are browned. Flip them over and sear the other sides, they do not have to be cooked through. Remove medallions to a plate, tent with foil, and repeat process with the remaining medallions, adding a little more oil and butter as needed.
  • Add the remaining olive oil and butter to the skillet, let the butter melt. Add the shallots and sauté while stirring, until tender, about 2 minutes. Add the mushrooms and sauté the mushrooms, stirring occasionally, until browned, about 3 minutes. Stir in the thyme.
  • Sprinkle with flour and stir to combine until some of the flour has cooked out. Add the wine and cook until most of the wine has evaporated and all the brown bits are picked up. Add the broth and stir to combine.
