Baked Potatoes with Carrots, Sweet Potatoes, and Onions image

4 large Idaho or russet potatoes, peeled and cut into 1-inch pieces
2 sweet potatoes, peeled and cut into 1-inch pieces
3 large carrots, peeled, halved lengthwise, and cut into 1/2-inch-thick slices
1 large yellow onion, peeled and cut into 1/2-inch-thick slices
1 green bell pepper, diced
1/4 cup olive oil
Salt and freshly ground black pepper to taste

Steps:

  • Pre-heat the oven to 375 degrees. In a large bowl, combine all the ingredients and toss to mix well. Transfer to an oiled baking pan and bake, covered with foil, for 30 minutes. Uncover, stir, and bake for an additional 30 to 45 minutes, or until tender. Place under a preheated broiler about 3 inches from the heat until golden brown.

SWEET POTATO & SPINACH BAKE

300ml single cream (or double cream for a really creamy texture)
1 garlic clove, peeled
2 sprigs thyme or rosemary
250g bag frozen spinach
freshly grated nutmeg
butter, for greasing
850g sweet potatoes, peeled and thinly sliced (about 3mm thick)
25g grated hard cheese, such as cheddar, Parmesan or veggie alternative
2 lamb chops
few sprigs thyme or rosemary
1 tsp olive oil per portion

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the cream, garlic and herb sprigs into a small saucepan and slowly bring to just below boiling. Turn off the heat, season and leave to infuse.
  • Put the spinach into a colander, pour over a kettle of boiling water and leave to drain for a few mins. Then squeeze out as much water as possible. Season with salt, pepper and freshly grated nutmeg.
  • Grease an ovenproof dish generously with butter and spread half the sweet potato slices across the bottom. Top with a layer of spinach, then the remaining potato. Pour over the cream mixture, through a sieve to remove the garlic and herbs, then sprinkle with cheese. Bake for 45-55 mins until golden and tender.
  • Meanwhile, if you're serving the chops, heat a griddle or frying pan and finely chop the leaves from the herb sprig. Rub over the chops with the oil and some seasoning, then griddle or fry for 3-4 mins on each side or until cooked to your liking. Leave bake, and chops if serving, to rest for 5 mins, then serve with a big green salad.

3 sweet potatoes, peeled and quartered
½ cup firmly packed brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2 large cooking apples - peeled, cored and cut into 1/4 inch rings
¼ cup all-purpose flour
¼ cup firmly packed brown sugar
¼ cup butter
¼ cup chopped pecans

Steps:

  • Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook 25 minutes, or until tender but firm. Drain, cool and cut into 1/4 inch slices.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking dish.
  • In a small bowl, mix brown sugar, cinnamon and nutmeg.
  • Layer sweet potatoes, brown sugar mixture and apples in the prepared baking dish.
  • In a medium bowl, mix flour, brown sugar, butter and pecans. Sprinkle over the sweet potatoes.
  • Bake in the preheated oven 30 minutes, or until lightly browned.

1 1/2 pounds turnips (about 3 medium), peeled and cut into 1/4-inch-thick rounds
Coarse salt and ground pepper
1/4 cup all-purpose flour
1 pound sweet potatoes (about 2 medium), peeled and cut into 1/4-inch-thick rounds
2 tablespoons unsalted butter, cut into pieces
3/4 cup low-sodium chicken or vegetable broth
1/4 cup dry white wine, such as Sauvignon Blanc
1 cup grated Gruyere cheese (4 ounces)

Steps:

  • Preheat oven to 350 degrees. In an 8-inch square baking dish, arrange a single layer of turnips and sweet potatoes, overlapping slightly. Season with salt and pepper and sprinkle with one-third of the flour. Repeat to make 3 more layers, sprinkling with salt, pepper, and flour between layers. Dot top layer with butter, then slowly pour broth and wine into dish, keeping layers intact. Cover with foil and bake until vegetables are tender when pierced with a knife, 45 minutes.
  • Increase oven temperature to 425 degrees. Remove foil and sprinkle cheese over dish. Bake until cheese is golden and bubbling, 12 to 15 minutes. Let gratin sit 10 minutes before serving.

I made this up one day and it's the easiest thing to make, but everyone seems to really like it. I used Emeril's Chicken and Apple Sausage but you can really use whatever kind you want.

3 large sweet potatoes
2 lbs sausage (any is fine but Emeril's Chicken and apple is what I use)
1 onion
1 apple
1/4 cup olive oil
1 tablespoon sugar
1 teaspoon cinnamon
1 teaspoon garlic powder
1/2 teaspoon chili powder
salt and pepper

Steps:

  • Preheat oven to 375.
  • Leave peels on sweet potatoes and chop them and apple, onion and sausage into bite sized chunks.
  • Place potatoes, onions and apples into ziploc bag.
  • Pour in olive oil and all seasoning (more or less of these taste.).
  • Shake bag until everything is coated well.
  • Pour into 13x9 in pan and toss with sausage.
  • Bake uncovered in 375 degree oven for 1-1 1/2 hours until sausage is browned and potatoes are tender.

1/2 teaspoon ground cinnamon
3 tablespoons cold butter

Steps:

  • Place sweet potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and simmer until tender, 20-30 minutes. Drain. When cool enough to handle, peel potatoes and cut into 1/4-in. slices. , Place half in a greased 2-1/2-qt. baking dish. Top with half of the cranberries, brown sugar and butter. Repeat layers. Pour orange juice over top. Cover and bake at 350° for 30 minutes. , In a small bowl, combine the walnuts, brown sugar and cinnamon; cut in butter. Sprinkle over sweet potato mixture. 8 ounces chive & onion cream cheese, divided
1/2 cup sour cream, divided
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup parmesan cheese, shredded, divided
1/4 cup cheddar cheese, shredded, divided

Steps:

  • Preheat oven to 375°F Place white and sweet potatoes in separate bowls.
  • Add half each of the cream cheese and sour cream to the potatoes in each bowl; season with salt and pepper.
  • Mash with potato masher or fork until creamy.
  • Stir half of the parmesan into the bowl of white potato mix.
  • Mix half of the cheddar cheese into the bowl of sweet potatoes.
  • Alternately layer half each of the white potato mixture and sweet potato mixture in a 2 qt clear glass casserole dish.
  • Repeat layers.

800g parsnip , peeled and cut into chunks
200ml tub reduced-fat crème fraîche
2 tbsp shredded sage
4 tsp wholegrain mustard
butter , for greasing
1 slice granary bread , finely chopped
50g coarsely grated vegetarian-style parmesan
3 tbsp pine nut

Steps:

  • Boil the sweet potatoes and parsnips for 20 mins in salted water until tender. Drain really well, then roughly mash with half the crème fraîche and half the sage, the mustard and salt and pepper. Pile into a buttered ovenproof dish and smooth over.
  • Heat oven to 190C/170C fan/gas 5. Mix the breadcrumbs with the Parmesan, pine nuts and remaining sage. Spoon the remaining crème fraîche over the mash, scatter over the bread and cheese mixture, then bake for 35-40 mins from fridge-cold, 25-30 mins if not, until golden.
