POTATO AND SAUSAGE SOUP
Best potato soup with sausage ever with a variation of the original German soup. My family loves this soup and I never have leftovers. This recipe is one my grandmother used to make when I was growing up and I have always loved this.

Steps:
- Heat a large pot over medium-high heat. Cook and stir Italian and kielbasa sausages in the hot skillet until browned, 5 to 7 minutes. Drain grease.
- Stir potatoes, water, chicken broth, heavy cream, celery, bouillon, garlic, salt, pepper, garlic powder, and red pepper into the pot. Reduce heat and let simmer until potatoes are tender, about 1 1/2 hours.

During a winter storm last night I was trying to come up with something warm and hearty. This turned out very good so I thought I would share. Enjoy!

- Add the rest of the ingredients and simmer for an hour.
- Serve with a good crusty bread.

- In a large saucepan, brown sausage; drain. Set sausage aside. In the same pan, combine the potatoes, corn, broth, celery, carrot and seasonings. Bring to a boil. , Reduce heat; cover and simmer for 15 minutes or until vegetables are tender. Add the milk, cheese, parsley and sausage. Cook and stir over low heat until cheese is melted and soup is heated through.

POTATO AND SAUSAGE SOUP
My brother has ranted and raved about this soup for years and I finally got the recipe from my mother. It was a clipping from a news paper article that she clipped out about 20 years ago and I can't believe that she never made it for me. It's a great filling and spicy soup and a full meal eaten with a tasty buttery bun!

- Remove the sausage from the casings and cook sausage till crumbled. Add in the chicken stock, cream and evaporated milk. Add in shredded potatoes, salt and pepper to taste. Bring to boil, lower heat and simmer for an hour. Serve hot and enjoy.
- This recipe is great for any add ins. I've tried it with corn and my mother likes to cook in kale or spinach. Try your own variation, you can't go wrong!

- In a large skillet, cook sausage over medium heat 8-10 minutes or until no longer pink, breaking into crumbles; drain and transfer to a 6-qt. slow cooker., Add tomatoes, beans, carrots, green beans, zucchini, pepper and green onions. - Heat a large soup pot over medium-high heat. Crumble sausage into pot; cook and stir until browned, about 10 minutes. Drain and discard grease.
- Stir half-and-half, potatoes, chicken broth, milk, onion, oregano, and red pepper flakes into sausage, bring to a boil, and reduce heat to low. Simmer until potatoes are tender, about 30 minutes. Season with black pepper; stir kale into soup. Simmer until kale is tender, 10 to 15 more minutes.

- In a large cast iron pot on the stove on medium heat, add 1 tbsp olive oil and the ground turkey sausage and cook the sausage through, stirring occasionally. Spoon all the sausage out onto a plate lined with paper towel and set aside.
- Add another tbsp of olive oil to the fond (cooked down bits) in the cast iron pot. Add the leeks, parsnip, cauliflower, and bay leaves. Tie together the rosemary, thyme, and oregano, and add that as well. Season with salt and pepper, sweat on medium low heat and add a few drops of water to help break up the fond from the bottom of the pot if needed.
- Once the vegetables beging to look somewhat translucent, add the bone broth (or stock) and bring to a simmer. Cover and cook for 20-30 minutes on medium heat.
- Remove the herbs from the pot. Using an immersion blender, blend up the cooked down vegetables once they are tender and soft. Add the almond milk and blend again until smooth. It will start to foam - that's ok, we'll skim that off later.
