Steps:

  • In a large bowl, combine the first 8 ingredients. Shape mixture by tablespoonfuls into balls. Roll in cracker crumbs. Place on parchment-lined baking sheets. Cover and refrigerate for 2 hours or overnight., Combine butter and paprika; drizzle over croquettes. Bake at 375° until golden brown, 18-20 minutes. Serve with dipping sauce of your choice. Freeze option: Prepare croquettes as directed, omitting chilling step. Transfer to waxed paper-lined baking sheets. Prepare butter mixture; drizzle over croquettes. Cover and freeze until firm. 4 large russet potatoes, scrubbed and cut into pieces
¼ cup butter
4 slices thick sliced bacon
⅓ cup chopped onion
1 cup cottage cheese
1 ½ cups chopped green onion
½ cup shredded Cheddar cheese
salt and pepper to taste
2 tablespoons butter, cut into pieces
¼ cup shredded Cheddar cheese
¼ teaspoon paprika, for garnish

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish.
  • Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Return potatoes to pot and roughly mash them with 1/4 cup butter.
  • Meanwhile, place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove all but 1 teaspoon of bacon drippings from the skillet. Drain the bacon slices on a paper towel-lined plate, and allow to cool. Crumble the bacon and set aside.

Spoon into the prepared baking dish, dot with 2 tablespoons of butter, and sprinkle with 1/4 cup of Cheddar cheese. 8 ounces bacon (about 10 slices)
1 package (8 ounces) cream cheese, softened
1/2 cup (1 stick) unsalted butter, melted
1 cup sour cream
1 small onion, grated on the large holes of a box grater, juice reserved
1/2 bunch fresh chives, finely chopped (about 1/4 cup)
2 1/2 cups grated cheddar cheese (about 6 ounces)

Steps:

  • Preheat oven to 350 degrees. Peel potatoes, and cut into 1-inch chunks. Place in a large saucepan, and add enough cold water to cover by about 2 inches. Bring to a boil over medium-high heat, and reduce to a simmer. Cook until tender and easily pierced with a paring knife, about 20 minutes. Transfer to a colander to drain; return to pan, cover, and set aside.

1/2 lb bacon, chopped
1/4 cup chives, chopped
1/2 cup cheddar cheese, cubed
1/2 cup panko breadcrumbs

Steps:

  • Fry bacon pieces until crispy but not burned. Drain well and blot carefully. Try to remove as much excess fat as possible.
  • Mix bacon with chives and Simply Potatoes, Traditional Mashed Potatoes.

1 large egg
2 -3 tablespoons flour
1 (12 ounce) package shredded cheddar cheese
8 ounces bacon, cooked and crumbled

Steps:

  • Heat oven to 375 degrees F. Generously coat 2 6-compartment non-stick muffin tins with cooking spray. Set aside.

12 slices bacon, each bacon piece cut in half (I use regular sliced hickory smoked)
1 cup shredded cheddar cheese
1/4 cup light sour cream or 1/4 cup regular sour cream
3 tablespoons chopped green onions, green parts only

Steps:

  • Cover the bottom of a muffin pan with tin foil.
  • Take 4(1/2 slice) pieces of bacon and weave them together ( like a basket).
  • Lay across the bottom foil covered muffin tin to make a bowl shape press tightly to foil.
  • Repeat this process for the other five.
  • Bake in a preheated 350 oven about 20 minutes or until bacon is crispy ( may vary with ovens and thickness of bacon.).
  • Meanwhile prepare Simply Potatoes traditional mashed potatoes according to package directions. When fully cooked stir in 1/4cup shredded cheddar cheese.
  • When bacon is crispy remove and set aside to cool slightly about 3 minutes.
  • Next take the bacon bowls and turn them over and place on a lined cookie sheet (no mess).
  • Fill the bacon cups with the potato mixture.
  • Top each one with remaining cheddar cheese.
  • Return to oven for 5 minutes or until cheese is nicely melted and warm.
  • top each potato bowl with a dollop of sour cream and chopped green onions.
