Try these oven-roasted chips, far less fatty than their fried cousins

Provided by Jo Pratt

Categories     Dinner, Lunch, Supper, Vegetable

Time 1h

Number Of Ingredients 4

6 large floury potatoes, such as Maris Piper, King Edward, Desirée (about 1.6kg)
2 tbsp olive oil
1 tsp celery salt
sea salt, to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Peel the potatoes and cut them into long chip shapes - the thickness is entirely up to you, though the width of a finger is ideal. Rinse under the cold tap and pat dry with a tea towel.
  • Spread the chips on a large non-stick baking tray and toss with the olive oil and celery salt. Lie them flat in a single layer - use two trays rather than overcrowd one.
  • Roast for 45-50 mins, turning now and then. When cooked they should be golden brown and crisp with a light fluffy centre. Scatter on sea salt to serve.

MY HOMEMADE POTATO CHIPS

My Homemade Potato Chips image

There's no need to set up a deep fryer to make great potato chips - the oven is just fine. Part of the charm of homemade chips is that they're a little thicker and have more of a bite than chips from a bag. And best of all, you can serve them warm! Here's an opportunity for the yin-yang thing: warm potato chip with crème fraîche, a small slice of smoked salmon, smoked trout, or a bit of caviar, and a shot of very chilled vodka. Instant celebration.

Yield Makes 6 to 8 servings

Number Of Ingredients 4

2 medium Yukon Gold or Idaho potatoes, peeled and sliced into 1/8-inch slices on a mandoline or other handheld slicer
3 tablespoons olive, canola, or peanut oil
N/A Salt
N/A freshly ground pepper

Steps:

  • Preheat the oven to 400°F. Slice the potatoes into a bowl and immediately toss them with the oil. Season lightly with salt and arrange them in a single layer on a baking sheet. Bake in the oven until golden brown - about 12-15 minutes. Season again lightly with salt and pepper when they come out of the oven. Transfer to a rack to cool for maximum crispness.
  • Weighing your options
  • If you want to be a little more daring, don't limit yourself to salt and pepper - you can season with ancho chile powder, ground cumin, minced herbs, toasted sesame seeds, ground nori (toasted black seaweed sheets used to roll sushi) - really anything you like. Just be sure to season immediately after the chips come out of the oven, while there is still some residual oil for the spices to adhere to.

HOMEMADE OVEN CHIPS

Homemade Oven Chips image

Learn the secret to making beautifully crispy chips in the oven! No need to par-boil the potatoes, and even peeling those spuds is optional!

Provided by Nicky Corbishley

Categories     side dish

Time 30m

Number Of Ingredients 6

4 tbsp olive oil ((or other neutral tasting oil - such as sunflower or vegetable))
700 g (1 1/2 lbs) of floury potatoes
1 tbsp cornflour (cornstarch)
1 tsp salt
½ tsp black pepper
½ tsp paprika

Steps:

  • Preheat the oven into 200C/400F
  • Brush a large metal non-stick baking tray with 1 tbsp of the vegetable oil. If your tray isn't non-stick, line the tray with non-stick foil instead. (*tip 1)
  • Cut the potatoes into 1 cm (about 3/8 of an inch) thick slices (no need to peel).
  • Sprinkle the sliced potatoes with the 1tbsp of cornflour and transfer to the oiled baking tray.
  • Sprinkle with the 1tsp salt, 1/2 tsp pepper and 1/2 tsp paprika, then drizzle on the rest of the oil (3 tbsp).
  • Toss everything together with your hands so the fries are fully coated in the oil and arrange the chips in a single layer. Try to ensure they're not touching too much.
  • Cover the tray in a piece of foil that's been greased with a little vegetable oil.
  • Place in the oven for 10 minutes, then remove the foil and cook for a further 10 minutes.
  • Turn the fries over using a spatula and cook for a final 5-10 minutes until golden brown and crisp.
  • Transfer to a serving dish and serve.

HOMEMADE POTATO CHIPS (OVEN-BAKED) - BOWL OF DELICIOUS

2020-03-30 How to make oven-baked potato chips. After slicing the potatoes, put them in a bowl and drizzle them with 1 tablespoon of olive oil. You actually don’t want too much oil, since the potatoes may burn easier. Use your hands to make sure every surface of every potato slice is covered in a thin layer of oil. From bowlofdelicious.com
Estimated Reading Time 7 mins
  • In a large bowl, mix together the potato slices (2 cups) and olive oil (1 tablespoon). Mix well so every surface of every slice of potato is covered evenly- you may want to use your hands for this, since the sliced potatoes may stick together.
  • Place the sliced potatoes on the prepared baking sheet, making sure they don't overlap (but they can touch a little on the edges). Sprinkle them evenly with the kosher salt (1 teaspoon) and any other spices you want to use. Bake in the top half of the oven for 15-20 minutes, until golden brown. Turn OFF the oven and allow to sit in oven while it cools off 15-30 minutes (this is optional if you're in a hurry, but highly recommended, as it will make the potatoes crispier. Keep an eye on them though- the residual heat can quickly burn them if you aren't careful!).
