SALMON-STUFFED POTATOES

Salmon-Stuffed Potatoes image

Here's a tasty twist on twice-baked potatoes from Carolyn Schmeling of Brookfield, Wisconsin. The spuds are stuffed with a rich mixture of potato, sour cream and smoked salmon, then sprinkled with chives. They're hearty enough to be served as a main dish alongside a salad or bowl of soup.

1 tablespoon extra virgin olive oil
Chive and scallion sauce (recipe follows)
1 tablespoon extra virgin olive oil
5 scallions, thinly sliced, white part only
1 tablespoon chopped fresh garlic
1/4 cup champagne vinegar
1/2 cup chardonnay or other full bodied dry white wine
1/2 cup evaporated skim milk
1 teaspoon cornstarch mixed with 1 tablespoon water
6 chives, snipped
Salt and ground white pepper to taste.
1 tablespoon extra virgin olive oil
5 scallions, thinly sliced, white part only
1 tablespoon chopped fresh garlic
1/4 cup champagne vinegar
1/2 cup chardonnay or other full bodied dry white wine
1/2 cup evaporated skim milk
1 teaspoon cornstarch mixed with 1 tablespoon water
6 chives, snipped
Salt and ground white pepper to taste.

Steps:

  • Grate the potatoes using the large holes of the grater.
  • Pat the fish dry with paper towels. Season the fish lightly with salt and white pepper. Generously spread one side of each fillet or steak with the mustard (for fillets, spread mustard on the rounded side, not the skin side). Remove the wrap and season the potatoes with salt and white pepper.
  • Preheat oven to 425 degrees.
  • In an ovenproof, nonstick frying pan, heat the olive oil. When hot, place the fish very gently in the pan, with crust side down, using a large spatula to avoid breaking the crust. Saute for 2 to 3 minutes until the potatoes are golden brown. Flip the fish carefully to the other side and finish cooking in the oven for about 5 minutes, or until the center of fillet is opaque in color.

SPINACH AND RICOTTA-STUFFED CHICKEN BREASTS WITH LEMONY WHITE WINE SAUCE

Spinach and Ricotta-Stuffed Chicken Breasts with Lemony White Wine Sauce image

Provided by Food Network

Categories     main-dish

Time 40m

Yield 2 servings

Number Of Ingredients 15

1 cup cooked, chopped, and drained fresh spinach
1/2 cup ricotta
1/2 cup Gorgonzola
4 slices cooked bacon, crumbled
Kosher salt and freshly ground black pepper
1 large egg
1/2 cup dry white wine
1/2 cup homemade chicken stock
1 tablespoon Dijon mustard
1 lemon, juiced
Kosher salt and freshly ground black pepper
Chopped parsley leaves, for garnish
2 (8-ounce) boneless, skinless chicken breast halves
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil

Steps:

  • Make the Stuffing: In a bowl, combine the spinach, ricotta, Gorgonzola, and bacon and mix well. Season with salt and pepper. Add the egg, mix well, and set aside.
  • Make the Sauce: Combine the wine and stock in a non-reactive saucepan. Bring to a boil and reduce to a sauce-like consistency. Whisk in the mustard, lemon juice, and season with salt and pepper, to taste. Set aside.
  • Make the Chicken: Place each chicken breast between 2 doubled-up sheets of plastic wrap, and pound to an even 1/4-inch thickness with a meat-pounder or rolling pin. Divide the stuffing between the breasts, mounding it along the center of each. Fold the bottom edge of each breast over the stuffing, fold in the sides, and roll forward until completely wrapped, to form a tight rolled package. Secure each flap with a toothpick. Season the chicken all over with salt and pepper, to taste.
  • Heat the oil in a large skillet over medium heat. Add the chicken and cook, turning occasionally, until browned, about 2 minutes per side. Cover the skillet, turn the heat down to low, and cook until just cooked through, about 5 minutes more.
  • Transfer the chicken to a cutting board and let rest for 5 minutes.
  • Meanwhile, pour the sauce into the skillet over high heat and cook, stirring and scraping the bottom with a wooden spoon.
  • Slice the chicken into medallions, divide among plates, and spoon some of the sauce over each. Garnish with parsley and erve immediately.

POTATO-CRUSTED SALMON

Potato-Crusted Salmon image

I got this recipe out of the Betty Crocker Healthy Heart Cookbook (which is awesome by the way). I haven't tried it yet, but I'm going to tonight. I will let you know what I find out. The note about this recipe in the book says, "Packed with Omega-3 fatty acids, salmon is low in saturated fat and high in polyunsaturated fats. Polyunsaturated fats, also found in corn oil, soybean oil and sunflower oil, are good choices because they tend not to elevate cholesterol levels like saturated fat does." All the recipes in this book seem fairly simple to make, and flavorful! I know one thing is that I don't have lemon pepper on hand ever so I'll just use some lemon juice and pepper to flavor the fish.
