Yield 20 four-inch pancakes

Number Of Ingredients 11

1 cup organic whole Spelt flour
1 cup organic Kamut flour
2 cups plain organic whole milk kefir (or cultured buttermilk)
3 tbsp pure organic pure maple syrup
2 eggs, lightly beaten
1 tsp pure vanilla extract
1 tsp baking soda
1/4 tsp aluminum-free baking powder
1/4 tsp Celtic sea salt
3 tbsp ground flaxseed
2 tbsp melted butter (or coconut oil)

Steps:

  • Add flour to a large ceramic (or glass) mixing bowl and gently stir in Kefir and maple syrup, until well blended. (Will resemble a very sticky dough.) Cover the bowl and place it in a warm area of your kitchen for 24 hours.
  • After soaking time is complete, grab a large, sturdy wire whisk and whisk in remaining ingredients. Batter will be thick and sticky and it will take a little effort to combine. Allow batter to sit about five minutes to rise. (Why not, cut up some fresh fruit while you wait.)
  • Cook on a hot, buttered griddle or cast iron skillet. Soaked-grain pancakes take a bit longer to cook than regular pancakes, and have a slightly chewy texture and mild sour taste, similar to buttermilk pancakes.

1 cup all-purpose flour
1 tablespoon white sugar
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup milk
1 egg
2 tablespoons vegetable oil

Steps:

  • Preheat a lightly oiled griddle over medium-high heat.
  • Combine flour, sugar, baking powder, baking soda and salt. Make a well in the center. In a separate bowl, beat together egg, milk and oil. Pour milk mixture into flour mixture. Beat until smooth.
  • Pour or scoop the batter onto the hot griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

My friend Julie was on the Body for Life diet when she gave me this recipe. It might have come from the literature in that program. This makes a pancake for one. I used the quick cooking and have never tried it with the old fashioned oats. She topped it with peanut butter for the protein. This may be used as a breakfast or as a quick snack in the middle of the day. It really tastes better than it sounds!

1/2 cup oatmeal
1 egg
2 egg whites
1 teaspoon cinnamon
1 teaspoon vanilla extract
peanut butter (optional)

  • Beat eggs.
  • Add remaining ingredients and blend well.
  • Cook over medium heat on stove until you see bubbles or can tell that it has cooked over halfway through.
  • Flip and cook the other side until done.
  • May spread with peanut butter for additional protein.

½ cup whole milk

1 tablespoon coconut oil, or more as needed
1 teaspoon vanilla extract
2 teaspoons coconut oil, or as needed
1 cup fresh blueberries, or to taste

Steps:

  • Combine oats, almond flour, coconut flour, protein powder, chia seeds, flax seed meal, baking powder, salt, and cinnamon in a medium bowl.
  • Combine water, milk, eggs, 1 tablespoon coconut oil, and vanilla in a small bowl. Mix into dry ingredients.
  • Heat 1 teaspoon coconut oil in a nonstick pan over medium heat. Pour 1/3 cup batter into the pan. Spread out with the back of a spoon if needed. Add some of the blueberries. Cook for about 2 minutes. Flip with spatula. Cook for additional 2 minutes. Remove to a plate and continue with remaining batter, adding more oil if needed.

1 banana
75g oats
3 large eggs
2 tbsp milk (dairy, soya, oat or nut milks all work)
1 tbsp baking powder
pinch of cinnamon
2 tbsp protein powder (whey, pea or whatever your preference)
coconut oil, or a flavourless oil, for frying
nut butter, maple syrup and berries or sliced banana to serve

Steps:

  • Whizz the banana, oats, eggs, milk, baking powder, cinnamon and protein powder in a blender for 1-2 mins until smooth. Check the oats have broken down, if not, blend for another minute.
  • Heat a drizzle of oil in a pan. Pour or ladle in 2-3 rounds of batter, leaving a little space between each to spread. Cook for 1-2 minutes, until bubbles start to appear on the surface and the underside is golden. Flip over and cook for another minute until cooked through. Transfer to a warmed oven and repeat with the remaining batter. Serve in stacks with nut butter, maple syrup and fruit.

  • In a small bowl, combine flour, sugar, baking powder and salt. Combine egg, milk and shortening; stir into dry ingredients just until moistened., Pour batter by 1/4 cupfuls onto a greased hot griddle. Turn when bubbles form on top of pancakes; cook until the second side is golden brown.
