PUMPKIN BARS IV
Great Bar recipe that is good with ice cream, or sold at a bazaar! Pureed squash can be used in place of the pumpkin.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 12x18 inch half sheet pan.
- In a large bowl, using a wooden spoon, mix together the eggs, oil, sugar and pumpkin until well blended. Combine the flour, baking powder, baking soda, salt, cinnamon, ginger, cloves and nutmeg; stir into the pumpkin mixture until just blended. Spread evenly into the prepared pan.
- Bake for 25 to 30 minutes in the preheated oven, until bars spring back when lightly touched. Cool before cutting into bars.

WINTER SQUASH SQUARES

Steps:
- In a bowl, combine flour, sugar, baking powder, baking soda, cinnamon and salt. Stir in eggs, squash and oil; mix well. Spread into a greased 15x10x1-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick comes out clean. Cool on a wire rack. , Meanwhile, for frosting, beat together cream cheese, confectioners' sugar, vanilla and butter. Add milk; stir until smooth. Frost cooled cake. Cut into squares.

PUMPKIN BARS
In between bars and a crowd-friendly sheet cake is this autumnal dessert. Moist and tender pumpkin spice cake is lavished with cream cheese frosting for bars that are simply irresistible.

Steps:
- Heat oven to 350 degrees. Brush bottom and sides of an 8-by-12-inch cake pan with butter. Line bottom with parchment paper, leaving a 2-inch overhang on 2 sides. Brush parchment with butter.
- Whisk together flour, cinnamon, nutmeg, allspice, cloves, salt, baking powder, and baking soda; set aside. In a separate bowl, whisk together pumpkin puree and milk; set aside
- In the bowl of an electric mixer fitted with the paddle attachment, beat sugar and butter together until light and fluffy, about 2 minutes. Add eggs, and beat until combined. On low speed add flour mixture in three batches, alternating with two additions of pumpkin mixture, and beating until just combined after each.
- Pour batter into prepared pan, smooth top with spatula. Bake until a cake tester inserted into the middle comes out clean, about 35 minutes. Transfer the cake to a wire rack to cool completely.
- Make Frosting: In the bowl of an electric mixer fitted with the paddle attachment, beat cream cheese, 1/4 cup butter, and pinch of salt until light and creamy, 2 minutes. Reduce mixer speed to low. Gradually add confectioners' sugar, beating until incorporated.
- Assemble: Unmold cake. Using an offset spatula, spread icing over top of cake. Cut into 12 bars.
ROASTED BUTTERNUT SQUASH PIZZA
Steps:
- Preheat the oven to 425°F and line or grease a rimmed half-sheet pan.
- Cut the butternut squash into 1-inch cubes. Toss with 3 tablespoons of olive oil and 1/2 teaspoon kosher salt and fresh-ground black pepper. Roast, stirring once, for about 15 minutes, until just tender. It's ok if the squash is slightly underdone.PRO TIP: To break down a whole butternut squash, trim the top and bottom from the squash. Use a vegetable peeler to peel the squash. Cut the long neck portion into cubes. Then, slice the bulbous bottom portion in half length lengthwise. Scoop the seeds and membrane, then dice each half. - While the butternut squash roasts, prepare your remaining ingredients.
- Flour, stretch, and press the pizza dough into a half-sheet pan that's been greased with the remaining olive oil and dusted with cornmeal or flour. Dust the pizza dough with flour as necessary to prevent it from sticking. TIP: If you want to save a dish, or only have one half-sheet pan, just wait until the butternut squash is out of the oven. When the sheet pan cools, just re-grease and proceed.
- Sprinkle the mozzarella over the pizza dough. Add the onion, then the roasted butternut squash, followed by the crumbled blue or goat cheese, sage, and rosemary. Add a sprinkle of salt and pepper.
- Bake for 20 to 25 minutes, or until the bottom of the pizza crust is golden brown. PRO TIP: Place the sheet pan on the bottom rack of the oven. The radiant heat from the oven floor will help brown the bottom of the crust. You could also put the sheet pan directly on top of a pizza stone.
- Drizzle the honey over the pizza. Cut into slices and serve hot.
HOW TO COOK A PUMPKIN OR SQUASH
There's an easy way and a hard way. You choose which you'd like to do...I used to do it the hard way, but not anymore!

Steps:
- THE EASY WAY: Wash outside of fruit, cut in half, scrape out seeds (save for roasting into snacks) and that stringy stuff, place halves face down on a cookie sheet.
- Bake at 300 (or so) until "meat" is tender; discard shells/skin.
- Use meat as called for in pie or cake recipe.
- OR mash or blend meat until very smooth (add a bit of water), heat in a soup pot, and then ladle into clean HOT jars, seal with canning lids, and process in hot water bath or pressure cooker. Label & use for pie filling or cake recipes.
- THE HARD WAY: Cut fruit into spears, remove seeds & stringy fibers, then using a paring knife or peeler, remove skins. Cut into large chunks and cook down in a soup pot to make pie filling or roast with other autumn vegetables (balsamic vinegar & sea salt make a nice marinade!).

FALL HARVEST BUTTERNUT SQUASH/PUMPKIN BARS-NO FAT, SUGAR-FREE
This is adaption that I came up with from Recipe #232072 that is no fat and sugar free for dietary reasons. It is chock full of flavor, moist and very healthy!! You can also add to it to suit you. It is lower also in calories!! My six year old even loves it and have requested it already!! I have added to the baseline of this recipe and she did not even know she was eating Squash nor how healthy it was-she thought it was the real deal!! In my version, vanilla extract was added and pumpkin pie spice. For a real kick, I added two handfuls of coconut, 1/2 cup of macadamia nuts, coconut extract and Da'Vinci Sugar Free Caramel Syrup with Fat Free Cream Cheese frosting with Sugar Free Caramel Syrup!! You can also use any Squash or Pumpkin..be creative..but if you add more ingredients, remember it adds more calories!! Prep time not included for pureed squash although you can use baby food squash-its the something but fresher is better! Enjoy-we do..very delish and Yummy too! Update: If you are going to use just Squash, because of higher water content, OMIT the APPLESAUCE and INCREASE FLOUR TO 3 Cups.. I found this out the hard way. Also, don't use metal pan if you can help it..don't worry squash does turn color the next day. Must be refrigerated as well after you are done with it..

- Grease or spray baking non-stick spray 15x10x1 pan and set aside.
- In a small bowl, combine dry ingredients and set aside.
- In a medium bowl, whisk or mix with electric mixer on low sugar, applesauce, egg whites, squash and extract until throughly blended.
- Add a at a time flour mixture to the squash mixture until fully blended with whisk or low on electric mixture until it is cake batter.
- Pour and spread into prepared pan and bake for 25-30 minutes depending on your oven or until knife comes out clean from center.
- Cool and cut into squares or add your favorite icing when cake is cooled and serve immediately!
