EASY BAKED SHRIMP TOAST



Easy Baked Shrimp Toast image

This baked shrimp toast features rich and creamy shrimp mixture on top of crispy bread. If you are looking for a quick and easy appetizer for your next party, give this a try.

6 oz shrimp, peeled and deveined ((I use raw shrimps))
3 tablespoons mayonnaise
3 tablespoons butter, melted
1 1/2 teaspoons grated garlic
1 1/2 tablespoons thinly sliced scallions ((about 2 stalks of scallions))
black pepper
baguette or ciabatta ((see notes))
basil, thinly sliced

Steps:

  • Preheat oven to 400F.
  • Chop shrimps or process in a food chopper into small pieces. Don't process into a paste. Mix shrimp with mayonnaise, melted butter, grated garlic, scallions and a generous amount of black pepper.
  • Slice ciabatta or baguette in half horizontally, or cut baguette into thin slices. Each slice/half should not be thicker than 1 inch.
  • Spread the shrimp mixture on the cut side of the bread. Place into the oven and bake for 15-18 minutes or until the top is golden and bread is crispy.
  • Remove bread from the oven. Sprinkle fresh basil and serve immediately.

This Creamy Shrimp Bruschetta is one of my favorite easy shrimp appetizers. It's easy to make but looks so elegant. Plus, you can serve it hot or cold.

4 ounces cream cheese
1/3 cup plain Greek yogurt
1/2 cup shredded cheddar cheese
2 cloves garlic (minced)
1 tablespoon fresh lemon juice
1/2 teaspoon Italian Seasoning Blend
1/2 teaspoon House Seasoning Blend
1 pound shrimp (peeled and deveined)
1 teaspoon Italian Seasoning Blend
1 teaspoon House Seasoning Blend
1 tablespoon olive oil (divided)
1 teaspoon lemon juice
1 baguette (sliced into 1/4 inch thick slices)
Chives for garnish
Lemon zest for garnish

Steps:

  • In a food processor combine cream all of the ingredients for the cream sauce.
  • Pulse until the mixture is thoroughly combined; set aside.
  • Pat shrimp dry on both sides and season each side with Italian Seasoning Blend and House Seasoning Blend.
  • Heat large skillet over medium high heat; add olive oil.
  • When skillet is hot, add shrimp and sear on one side for 5 minutes.
  • Turn shrimp and sear on other side for 5 more minutes or until cooked through.
  • Remove shrimp from skillet and squeeze lemon juice on top; set aside.
  • Lay baguette slices on a rimmed baking sheet.
  • Broil for 2-3 minutes or until golden brown and toasted.
  • Remove from broiler and place a generous amount of cream sauce on each baguette slice; top with shrimp.
  • Garnish with minced chives and lemon zest.
  • Serve hot or cold.

  • Combine yeast, ½ cup of warm water, and sugar in a small bowl. Let rest for 5-10 minutes to activate the yeast. It should look a little bit foamy.
  • In the large bowl of a stand mixer, whisk together flour and salt. Add the yeast mixture. Gradually (not all at once) add remaining ¾ cup of warm water and mix (or stir by hand with a wooden spoon) until a soft dough comes together in a ball. You might not need all of the water. If the dough is too sticky, you can add a bit more flour. It shouldn’t be sticking to the sides of the bowl.
  • Once the dough comes together in a ball, knead with a dough hook or by hand until smooth and elastic – about 4-6 minutes. If the dough is sticking to the bowl or to your hands, add extra flour (one tablespoon at a time).
  • Transfer the dough to a greased bowl. Turn to coat the dough with grease on all sides. Cover and let rest in a warm place until doubled in size, about 45 minutes.

  • Cook and Sauce ... Add the butter to a cast iron pan, or a heavy stainless pan, on medium high heat - just until the butter melts. Then, add the shrimp and garlic; and, cook for 2 minutes, just until they start to turn opaque - stirring often. You DO NOT want the garlic to burn; and, you do NOT want the shrimp all the way done at this point.
  • Add the worcestershire, lemon juice, and chicken broth; and, cook another couple of minutes until they turn pink and start to curl, just a couple of minutes. And keep an eye on them, they don't take long. NOTE: If you like a bit more spice ... you can add a few splashes of hot sauce. That is up to you. I always add the hot sauce.
  • Finish and Serve ... Remove from the heat, add the scallions, toss; and, serve.
