CREAMY BAKED ZITI RECIPE
With a creamy, tomato-based sauce, our Creamy Baked Ziti has a smooth, tangy flavor. Steps:
- Preheat your oven to 425 degrees.
- Cook the ziti in a large saucepan according to package instructions. Drain the ziti and keep it in the colander while you reuse the pot to create the pasta sauce.
- Open the can of tomato sauce and mix it in the pasta pot with the Italian seasoning and onion powder. Cut the cream cheese into small cubes and put it in the tomato sauce mixture.
- Heat the sauce over medium heat, stirring until the cream cheese is melted and incorporated into the tomato sauce. If this takes too long, you can use a stick blender to blend the cream cheese into the sauce.
- Stir the browned ground beef into this mixture until it is fully mixed. Take it off the heat and set it aside.
- In a medium-sized mixing bowl, mix together the garlic, parsley, and eggs. Stir in the Parmesan cheese.
- Stir the cooked and drained pasta into the tomato sauce in the pasta pot.
- Spray a 9 by 13 pan with cooking spray. Put half of the ziti and sauce mixture in the pan. Spread the garlic, parsley, Parmesan, and egg mixture on top of this layer.
- Add the rest of the ziti on top of this layer. Sprinkle mozzarella on the top of the ziti.
- Cover the pan with aluminum foil and bake the dish in the oven for fifteen minutes. Remove the foil and bake it for an additional ten to twenty minutes or until the cheese on top is lightly browned.
- Remove the pasta from the oven and let it sit for about five minutes. Serve the pasta with a side salad and crusty bread.

Steps:
- Combine canned tomatoes and their juices, basil, garlic, salt, pepper and the mascarpone cheese in a blender or food processor. (A food mill will also work.) Blend until the basil and garlic are chopped into tiny bits and the sauce is well mixed. Taste and adjust with additional salt as needed. Set aside.
- Heat the oven to 425 degrees Fahrenheit (if your oven runs hot, reduce this to 400 degrees Fahrenheit.)
- Bring a large pot of salted water to the boil, add the pasta, and then cook for about half of the recommended cook time on the package (5 or 6 minutes). Save 1/2 cup of the pasta water, drain the pasta, and then place it back into the pot. Undercooking the pasta makes sure that it does not overcook when baked with the sauce in the oven.
- In a medium bowl, toss the mozzarella, Fontina and Pecorino Romano cheese together.
- Add the sauce, 1/4 cup of the reserved pasta water and three-quarters of the shredded cheese mix to the pot with pasta. Stir well. The mixture should look a bit thin, if it seems thick, add a splash more of the reserved pasta water.
- Transfer the ziti mixture to a large baking dish and top with the remaining shredded cheese mix. Bake 10 to 15 minutes or until the sauce is bubbling and the cheese is melted and golden brown on top. Allow the baked ziti to cool for 5 minutes before serving.

- Place the sausage in a large 12-inch wide oven-proof saute pan that is at least 2-inches deep. Cook on high heat, breaking up the sausage with a wooden spoon. Once the sausage has browned completely on all sides, add the garlic and red onions. Cook for 2 to 3 minutes or until the onions start to soften and turn a bit translucent.
- Add the chopped fresh tomato, canned chopped tomato, tomato sauce and tomato paste. Bring to a boil, then lower heat to a simmer and cook, stirring occasionally.
- Simmer for 10 minutes. You want the sauce to thicken into pasta sauce in the end. While the sauce is reducing, preheat the oven to 450°F.
- Add the water and the red wine to the pan along with the pasta. Stir together and cook over medium heat uncovered, stirring frequently, until the pasta is firm and not QUITE cooked through. You want it firmer than al dente. Nibble on a pasta piece to check. You want it to be able to bite into it, but still be too firm to serve (the pasta will continue to cook in the oven). This usually take anywhere from 8 to 15 minutes depending on the pasta.
