I saw this recipe on the back of a cheese package and was about to toss it when I noticed how good it sounds. Recipe & photo: Kroger.com 01-12-15

Number Of Ingredients 8

6 slice white bread, or any kind you prefer
1 lb sausage, cooked
1 c shredded cheddar cheese
16 oz liquid egg whites
2 c milk
1 medium red pepper, sliced
chopped basil
salt and pepper to taste

Steps:

  • 1. Place the bread into the bottom of a lightly greased 13x9" baking pan; sprinkle with sausage, red pepper and cheese.
  • 2. Beat egg whites, milk, basil, salt and pepper in medium bowl. Pour over bread mixture.
  • 3. Bake in a preheated 350º oven for 40 to 45 minutes or until mixture is set in center and lightly browned on top. Refrigerate any leftovers.
  • 4. May substitute cooked bacon, or smoked sausage, browned and sliced. May also use 8 eggs instead of the liquid egg whites.

The eggs are delicious, and it's easy to make more for larger gatherings. I've added onion and celery for a little more flavor and texture.

6 hard-cooked eggs
2 tablespoons mayonnaise
1 teaspoon white sugar
1 teaspoon white vinegar
1 teaspoon prepared mustard
½ teaspoon salt
1 tablespoon finely chopped onion
1 tablespoon finely chopped celery
1 pinch paprika, or to taste

Steps:

  • Slice eggs in half lengthwise and remove yolks; set whites aside. Mash yolks with a fork in a small bowl. Stir in mayonnaise, sugar, vinegar, mustard, salt, onion, and celery; mix well. Stuff or pipe egg yolk mixture into egg whites. Sprinkle with paprika. Refrigerate until serving.

  • Drain the eggs, and immediately plunge the eggs in a bowl of cold water. Let the eggs sit for 5 minutes. Carefully peel the eggs.
  • Place the eggs in a bowl, cover, and refrigerate for about 10 minutes. This makes the egg easier to cut, but you can skip this step if you pressed for time.
  • Cut 1 cm off the bottom (fat side) of the egg. Gently squeeze or scoop out the egg yolk into a medium bowl. Depending on where the egg yolk is sitting in the egg, you may need to cut a bit more off the egg. Try to cut as little as possible though, so you can see the egg whites sticking out of the egg cups. Carefully set the hollow egg whites into the egg cups.
