This is one of my absolute favorites. You can have the cherries macerating all afternoon, and whip up the finished product while you do the dinner dishes for a special evening dessert. My Belgian husband had never eaten a cobbler before this one, now he can't get enough . . .

4 cups fresh pitted cherries (about 2 lbs uncleaned)
3/4 cup granulated sugar
1 tablespoon quick-cooking tapioca
1/3 cup water
1 tablespoon butter
1/2 cup butter
1 1/4 cups flour
2 tablespoons baking powder
1/2 teaspoon salt
1 cup sugar
1 cup milk

Steps:

  • Combine in a large saucepan the cherries, 3/4 cup sugar, tapioca and water.
  • Let stand at least one hour and up to several hours, stirring occasionally.
  • Cook and stir till slightly thickened and bubbly, about 5 to 10 minutes at a good boil.
  • Add 1 TBS butter and set aside.
  • Pre-heat oven to 350 degrees.
  • Put the 1/2 cup butter in a 9 X 13-inch glass baking dish and put the dish in the preheating oven.
  • While the butter is melting, mix the batter by combining flour, baking powder, salt, sugar and milk.
  • When the butter is completely melted, remove the pan and pour the batter into the melted butter.
  • The batter will immediately begin to cook, which is what you want.
  • Carefully spoon the cherry mixture evenly over the batter.
  • Return dish to oven and bake for approximately 20 minutes, or until batter sets and is browned.
  • As the cobbler cooks, the batter will begin to rise up around the cherry mixture.
  • Serve warm (or at room temperature) with vanilla ice cream, if desired.

1 cup canned pitted tart cherries
1/3 cup plus 3 tablespoons sugar, divided
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1 tablespoon cold butter
1/4 cup 2% milk

Steps:

  • In a small saucepan over medium heat, bring cherries and 1/3 cup sugar to a boil. Remove from the heat; set aside., In a small bowl, combine the flour, baking powder and remaining sugar. Cut in butter until mixture resembles coarse crumbs. Stir in milk just until moistened. Spread into a greased 3-cup baking dish; pour cherries over the top. , Bake at 375° for 25-30 minutes or until bubbly and edges are golden brown. Serve warm.

This is a delicious cherry cobbler made with fresh cherries instead of canned. It may take a little longer to make because you need to pit the cherries, but it is well worth it when you taste the finished product.

½ cup butter
1 cup all-purpose flour
1 cup white sugar
1 teaspoon baking powder
1 cup milk
2 cups pitted sour cherries
¾ cup white sugar
1 tablespoon all-purpose flour

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place the butter in a 9x13 inch baking dish, and place in the oven to melt while the oven is preheating. Remove as soon as butter has melted, about 5 minutes.
  • In a medium bowl, stir together 1 cup of flour, 1 cup of sugar, and baking powder. Mix in the milk until well blended, then pour the batter into the pan over the butter. Do not stir.
  • Rinse out the bowl from the batter, and dry. Place cherries into the bowl, and toss with the remaining 3/4 cup of sugar and 1 tablespoon of flour. Distribute the cherry mixture evenly over the batter. Do not stir.
  • Bake for 50 to 60 minutes in the preheated oven, until golden brown. A toothpick inserted into the cobber should come out clean.

I used to make these kinds of cobblers all the time in huge quanities when I cooked at the Senior Citizen Center and for Meals on Wheels...made them both...

1/2 c butter
1 c all-purpose flour
1 c splenda (or white sugar)
1 tsp baking powder
1 c milk
2 c pitted sour cherries
3/4 c splenda (or white sugar)
1 Tbsp all-purpose flour (or corn starch)
ice cream and or whipped cream (optional)

Steps:

  • 1. Preheat oven to 350 dF. (to 375 dF depending on oven) Melt butter in 9×13 casserole dish in oven (or microwave, then pour into pan-if not microwaveably), until completely melted (about 5-min`s in oven). Combine 1 cup flour, 1 cup sugar & baking powder in small bowl, mix well. Add milk and stir until combined, then pour flour-milk mixture over melted butter in casserole dish. Mix cherries, 3/4 sugar (splenda), and 1 T flour in bowl together. Pour cherry mixture over flour/milk mixture in the casserole dish evenly, (do not stir, just swirl a knife lightly through it). Bake 40-50 minutes, until golden brown. Serve warm, room temp or chilled ....it's good either way. Good also served with ice cream or whipped cream. P.S. crust will rise to the top while baking.
