NATASHA'S CHICKEN BURGERS
Natasha is my eldest daughter, and her eyes light up when I announce we're having these for dinner. While my husband and I eat 1 or 2 each, she easily finishes at least 3! The onion can be finely chopped, but with three kids, we prefer grating it so as to hide it. I usually serve these with mashed potatoes and Caesar salad for a very comforting meal! Extra-lean ground chicken can be substituted with ground turkey with great results.

- Mix ground chicken, 1/4 cup bread crumbs, onion, egg, garlic, salt, and black pepper in a bowl. Moisten hands and shape chicken mixture, 2 tablespoons at a time, into flat, oval-shaped patties.
- Spread remaining 1/4 cup bread crumbs into a shallow dish. Roll patties in bread crumbs to coat.
- Heat olive oil in a large skillet over medium-high heat.
- Cook patties in hot oil until deep brown in color on the bottom, 5 to 6 minutes. Turn patties and cook until other side is browned, 3 to 4 minutes more.

GOURMET PUB BURGERS
I made burgers similar to these in my college training, and tweaked them a little to satisfy picky eaters at home! Moist and juicy burgers guaranteed every time. Garnish the burger with a slice of pancetta, ancient grainy mustard, red onion slices, iceberg lettuce, and Swiss or blue cheese.

Steps:
- Mix ground beef, bread crumbs, shallot, Dijon mustard, egg, garlic, salt, and black pepper together in a large bowl. Refrigerate mixture to incorporate flavors, 20 minutes to 2 hours.
- Form ground beef mixture into 6 patties.
- Heat a skillet over medium heat; lay pancetta slices in a single layer in the hot skillet. Cook until pancetta begins to sweat, 3 to 5 minutes. Remove pancetta from skillet and keep warm.
- Preheat grill for medium heat and lightly oil the grate.
- Cook patties on the preheated grill until burgers are cooked to your desired degree of doneness, about 4 minutes per side for medium-well burgers. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).
- Place 1 burger into each of the buns; top burger with a pancetta slice.

QUICK AND EASY GOURMET CHICKEN BURGERS
A burger recipe that never fails and always tastes great. Quick and simple to prepare but looks (and taste's) like it's been cooked by a gourmet chef! A combination of two different recipes from Bill Granger and Women's Weekly.

- Place bread in a small bowl and cover with water. Set aside to soak for 5 minutes, then drain and squeeze dry. Place in a large bowl with chicken mince, chopped green onion, half of coriander and egg. Mix thoroughly and season. Using wet hands, shape into 4 patties, or flatened balls.
- Lightly spray a griddle or sandwich press with olive oil and cook patties until browned and cooked through. Set aside.
- Combine capsicum, tomato, celery, onion, parsley, vinegar, mustard and salt to taste in a medium bowl.
- Cut the bread into four pieces crossways; split the bread pieces in half. Toast, cut side up, under a preheated grill.
- Layer four toasted bread pieces with lettuce, capsicum mixture, patties and mayonnaise. Top with the remaining bread slices. Garnish with remaining corriander.

EASY AND JUICY CHICKEN BURGERS
This recipe was my first attempt cooking with ground chicken. The burgers are super juicy and the flavor is AMAZING! I used an indoor grill, but they would certainly be great outdoors as well. Serve with a side of Pringles reduced fat chips or baked potato crisps if desired.

- Wash hands thoroughly before and after handling uncooked chicken. Spray indoor grill with fat free cooking spray and let in run five minutes while you are prepping your burgers.
- Mince onions, celery, bell pepper, and garlic for about 20 seconds in food processor (DO NOT Puree). The mixture will seem a bit too moist and soggy, but that's OK. The moisture will keep your burger juicy, although you will lose some of it (along with excess fat) during cooking. Flatten ground chicken by hand on a cutting board, add seasoning, bread crumbs, Worcestershire sauce, liquid smoke, and vegetable mix. Blend chicken mixture by hand until consistent. Form a ball, then flatten it out again and form into four tight patties.
- Season one side of patties with Mrs. Dash. Place all patties seasoned side down on indoor grill, then season the other side. Close your grill and cook about 8 minutes until firm and light brown with dark grill marks.
- When burgers are done, place a slice of fat free cheese on top of patties (if desired) and continue on the grill until cheese melts. My wife put her burger together with fat free Mayo. I tried a swizzle of fat free ranch dressing. Both were terrific!

- Prepare the cheese, onion, and parsley. Prepare the following, transferring to a large bowl: Grate 1/2 ounce Parmesan cheese on the small holes of a box grater until you have lightly packed 1/4 cup.
