Steps:
- Combine flour, salt, and baking powder. Stir in 1 1/2 cups lukewarm water. Knead until soft but not sticky. Shape dough into balls about 3 inches in diameter. Flatten into patties 1/2 inch thick, and make a small hole in the center of each patty.
- Fry one at a time in 1 inch of hot shortening, turning to brown on both sides. Drain on paper towels.

PERFECT SANDWICH BREAD
I have been making lots of bread lately, and this is wonderful, soft, fluffy sandwich bread. The dough had the best texture of any I made so far. No bread machine required! Even though there is no machine, it's very easy for a first time bread maker to make. Prep time does not include rising. **I am sorry you didn't have success.. I have passed this on to lots of friends and they all had lots of success! Steps:
- add yeast and a pinch of sugar (to feed the yeast) to warm water, let it sit 5-10 minutes until very foamy. water should be warm, but not hot, about 110 degrees.
- put proofed yeast into a large mixing bowl. add milk, honey, oil, and salt.
- add flour, start with 3 cups. mix with a sturdy spoon until smooth.
- add in more flour, one cup at a time until it gets to hard to stir.
- turn out dough onto a floured surface and knead for about 10 minutes adding more flour as needed. dough should be smooth, elastic and not too dry, but not sticking to your hands either.
- put dough in a greased bowl and turn it over to lightly grease it. cover the bowl with plastic wrap and a towel (you can use a damp paper towel and towel if you don't have plastic).
- sit it in a warm place (like on top of the fridge) for 1-1 1/2 hours until doubled in size.
- cut the dough in half as equal as you can. punch dough down, getting all the air out. form into a rectangle and roll up tight, tucking in the ends. it should look like a small loaf.
- place each loaf in a greased (I use shortening) loaf pan. cover again and let rise 45 minutes until about doubled in size.
- if you choose, brush with the egg for a nice glossy look (i prefer it).
- bake at 350 for 35 minutes on the middle rack (leave room, they will rise more in the oven!).
- the bread is done when it's golden and sounds hollow when you tap on it.
- remove immediately from the pans and cool on a cooling rack so the bottoms don't get soggy (check to make sure it's done by also tapping on the bottom-it should sound hollow also).
- cool at least 10 minutes before cutting.

SANDWICH ROLLS
I think many people will be surprised at just how simple these homemade rolls are. Besides the super obvious reasons why these are better than the ones from the supermarket, you can make them the exact size and shape you want.

Steps:
- Place yeast and warm water in the bowl of a stand mixer; whisk to mix. Add flour and salt.
- Knead with dough hook until mixture forms a soft, sticky dough ball and easily pulls away from the sides and the hook, about 5 minutes. (If still too sticky, add a bit more flour and knead a few more seconds.) Transfer dough to a work surface and form into a smooth ball. Place dough back in the mixing bowl. Drizzle the dough and sides of bowl a few drops of vegetable oil. Spread a film of oil over the surface of the dough.
- Cover the bowl and transfer to a warm, draft-free place until dough is doubled in size, 60 to 90 minutes.
- Transfer dough to a floured work surface. Form into a rectangle shape and cut into 6 equal pieces. Using your cupped hand and the work surface, roll each section of dough into a smooth round ball. Cover with a clean, dry cloth and let rest 15 minutes.
- Flatten dough balls into 6- or 7-inch long ovals. Starting with a long edge, roll the dough into a cylinder, applying extra pressure to the ends to form pointy tips for a classic French roll shape. Transfer to parchment-lined baking sheets (do not crowd them) and cover with clean dry towels until doubled, about 1 hour.
- Preheat oven to 450 degrees F (230 degrees C). Place a pan of water on the bottom rack.
- With a very sharp knife, score each roll about 1/4 inch deep along one side somewhere between the side and the top. Spritz loaves lightly with water from a spray bottle.
- Bake in preheated oven about 20 minutes. Spritz loaves again and rotate pans for a more even bake. Bake until loaves are golden brown, about 10 more minutes. Transfer to a cooling rack; cool completely before cutting.

QUICK AND EASY WHOLE WHEAT SANDWICH BREAD
This recipe is from the book, Artisan Bread in Five Minutes A Day. It is a good all-purpose whole wheat bread with sandwich making potential. It is recommended that you use a baking stone.

Steps:
- Mix the yeast and salt with the water in a 5 qt bowl or a lidded (not airtight) food storage container.
- Mix in the remaining dry ingredients without kneading, using a spoon, a 14 cup capacity food processor [with dough attachment], Danish dough whisk, or a heavy duty stand mixer [with dough hook]. If you are not using a machine, you may need to use wet hands to incorporate the last bit of flour.
- Cover (not airtight) and allow to rest at room temperature until dough rises and collapses (or flattens on top), approximately 2 hours.
- The dough can be used after initial rise though it is easier to handle when cold. Refrigerate in a lidded (not airtight) container and use over the next 14 days or divide into 4 1-lb portions and freeze in an airtight container for no more than 3 weeks. Thaw 24 hours before usage.
- On baking day, dust the surface of the refrigerated dough with flour and cut off a 1 lb piece (grapefruit sized). Dust the piece with more flour and quickly shape it into a ball by stretching the surface of the dough around to the bottom on all four sides, rotating the ball a quarter turn as you go. Allow to rest and rise on a cornmeal covered pizza peel for 40 minutes.
- Twenty minutes before baking time, preheat the oven to 450 degrees F, with a baking stone placed on the middle rack. Place an empty metal broiler pan on any other shelf that will not interfere with the baking.
- Sprinkle the loaf liberally with flour and slash a cross, scallop or tic-tac-toe pattern into the top of the bread, using a serrated bread knife.
- Slide the loaf directly onto the hot stone. Pour 1 cup of hot tap water into the broiler tray and quickly close the oven door. Bake for about 35 minutes, or until deeply browned and firm. Allow to cool before slicing and eating.

- Combine flour, instant yeast, sugar and salt in the bowl of a food processor that has been fitted with a blade or dough blade. Pulse 10 times. With the food processer running, pour the water and olive oil into the feed chute. Continue processing until the dough forms a cohesive ball. Spin the dough ball 20 times and shut off the food processor. Remove the dough, form a smooth dough ball and place in a lightly oiled mixing bowl. Cover with a clean tea towel and let rise in a warm place for 15 minutes.
- Combine flour, instant yeast, sugar and salt with a whisk or fork in a large mixing bowl. Pour the warm water and olive oil into the flour mixture and use a sturdy spoon to combine into a shaggy dough. Use your hands to knead for 8 minutes*. After kneading for 8 minutes, cover the bowl with a clean tea towel and let rise in a warm place for 15 minutes.
- Turn dough out onto a clean surface and divide in half. Form each half into a ball and place 5-6 inches apart on a baking sheet that has been lined with parchment paper or a silpat, or has been lightly greased. Alternatively, you can lightly grease two loaf pans. If using the loaf pans, please form each half into an oval roughly the size of the loaf pan before easing them into the pans.Use a sharp knife to slash the top of the loaf about ¼ of an inch deep. This allows the steam to escape the baking loaf.
