1 package (1/4 ounce) active dry yeast
1 cup warm whole milk (110° to 115°)
1/2 cup sugar
1/3 cup butter, melted
2 large eggs, room temperature
1 teaspoon salt
4 to 4-1/2 cups all-purpose flour
FILLING:
3/4 cup packed brown sugar
2 tablespoons ground cinnamon
1/4 cup butter, melted, divided
FROSTING:
1/2 cup butter, softened
1/4 cup cream cheese, softened
1/2 teaspoon vanilla extract
1/8 teaspoon salt
1-1/2 cups confectioners' sugar

Steps:

  • Dissolve yeast in warm milk. In another bowl, combine sugar, butter, eggs, salt, yeast mixture and 2 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Mix brown sugar and cinnamon. Punch down dough; divide in half. On a lightly floured surface, roll 1 portion into an 11x8-in. rectangle. Brush with 2 tablespoons butter; sprinkle with half the brown sugar mixture to within 1/2 in. of edges. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 8 slices; place in a greased 13x9-in. pan, cut side down. Cover with a kitchen towel. Repeat with remaining dough and filling. Let rise in a warm place until doubled, about 1 hour. Preheat oven to 350°., Bake until golden brown, 20-25 minutes. Cool on wire racks., For frosting, beat butter, cream cheese, vanilla and salt until blended; gradually beat in confectioners' sugar. Spread over tops. Refrigerate leftovers.

¼ cup margarine, softened
3 ¼ cups all-purpose flour
1 (.25 ounce) package instant yeast
¼ cup white sugar
½ teaspoon salt
¼ cup water
1 egg
1 cup brown sugar, packed
1 tablespoon ground cinnamon
½ cup margarine, softened
½ cup raisins

Steps:

  • Heat the milk in a small saucepan until it bubbles, then remove from heat. Mix in margarine; stir until melted. Let cool until lukewarm.
  • In a large mixing bowl, combine 2 1/4 cup flour, yeast, white sugar and salt; mix well. Add water, egg and the milk mixture; beat well. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has just pulled together, turn it out onto a lightly floured surface and knead until smooth, about 5 minutes.
  • Cover the dough with a damp cloth and let rest for 10 minutes. Meanwhile, in a small bowl, mix together brown sugar, cinnamon, softened margarine.
  • Roll out dough into a 12x9 inch rectangle. Spread dough with margarine/sugar mixture. Sprinkle with raisins if desired. Roll up dough and pinch seam to seal. 3 Tablespoons granulated sugar
1 teaspoon salt
1 package instant yeast ((1 packet = 2 and 1/4 teaspoons))
1/2 cup water
1/4 cup milk
2 Tablespoons unsalted butter
1 large egg
1/2 stick unsalted butter, softened to room temperature
2 Tablespoons ground cinnamon
1/4 cup brown sugar
1 cup powdered sugar
1 teaspoon vanilla extract
2-3 Tablespoons milk

Steps:

  • In a large bowl, mix the flour, the sugar, salt, and yeast together until evenly dispersed. Set aside. In a small microwavable bowl, heat the water, milk, and butter together in the microwave until the butter is melted (about 30-45 seconds). Stir the butter mixture into the flour mixture. Add the egg and knead with hand or with stand mixer for 3-4 minutes or until the dough is no longer sticky. Place in a lightly greased bowl and let rest for about 5 minutes.
  • Preheat the oven to 200 degrees and turn off after 10 minutes or just before placing rolls in oven.

2 ¼ teaspoons active dry yeast
5 cups all-purpose flour, divided
1 teaspoon baking powder
2 teaspoons kosher salt
¾ cup light brown sugar
12 tablespoons unsalted butter, softened
2 tablespoons ground cinnamon
4 oz cream cheese, softened and cubed
2 tablespoons unsalted butter, melted

  • Make the dough: In a large bowl, whisk together the warm milk, sugar, and melted butter. The mixture should be just warm, registering between 100-110˚F (37-43˚C). If any warmer, allow to cool slightly.

Steps:

  • Heat milk and 1/3 cup butter together in a microwave-safe container in a microwave on high power for 30 seconds. Stir and repeat until mixture reaches 120 to 130 degrees F (49 to 54 degrees C). If too cool, microwave for 15 seconds more; if too hot, let cool to proper temperature.

Transfer the dough to a floured counter and knead until just smooth and no longer shaggy, about 30 seconds.
  • Pat the dough into a 12 by 9-inch rectangle with the long side facing you. brush the dough with the remaining tablespoon melted butter, then sprinkle the sugar mixture over it, leaving a 1/2 inch border along the top edge. Press on the filling to adhere it to the dough.
  • Loosen the dough from the counter using a bench scraper (or metal spatula), and roll the dough into a tight log. Pinch the seam closed and roll the log seam side down. Pat the ends to even them and slice the cylinder into 9 evenly sized rolls with a serrated knife. Slightly flatten each piece of dough to seal the open edges and keep the filling in place.
  • Arrange the rolls cut side down in the prepared baking pan. Cover the baking dish with foil and bake for about 12 minutes. Remove the foil and bake until the edges of the rolls are golden brown, 12-14 minutes longer. Flip the rolls out onto a wire rack set over a sheet of parchment paper (for easy cleanup), remove the foil sling, and let cool for 5 minutes.
  • For the Glaze: Whisk the confectioners' sugar, cream cheese and buttermilk together in a medium bowl until smooth. Flip the rolls upright, drizzle with the glaze, and serve.

These are moist, delicious rolls. They can be made gooey by making a caramel sauce. They also freeze well.

1 cup warm milk
1 egg
2 tablespoons butter
2 tablespoons sugar
½ teaspoon salt
3 ⅓ cups bread flour
1 ½ teaspoons active dry yeast
⅓ cup butter
½ cup brown sugar
2 tablespoons milk
1 cup chopped walnuts
¼ cup butter, melted
½ cup brown sugar
2 teaspoons ground cinnamon
½ cup chopped walnuts
½ cup raisins

Steps:

  • Place milk, egg, butter, sugar, salt, flour and yeast in bread machine pan. Make sure you add yeast last. Set bread machine on Dough cycle and begin.
  • In a medium sauce pan, melt 1/3 cup butter over medium-low heat. Stir in 1/2 cup brown sugar, 2 tablespoons milk and 1 cup walnuts. Stir constantly until well blended. Pour this sauce in a 9x13 inch pan; set aside.
  • After the cycle is complete, put the dough on a lightly floured board, and roll the dough into a rectangle about 10x15. Brush the dough with melted butter and sprinkle with brown sugar, cinnamon, nuts and raisins.
  • Roll the dough up tightly like a jelly roll, starting with the long side. Press the edges to seal. With a knife, or preferably a long piece of dental floss, cut the roll into one inch pieces. Place the pieces in the prepared pan on top of the caramel sauce.
  • Cover with a damp cloth and let rise in a warm place until double in size, about 1 1/2 to 2 hours. Preheat oven to 350 degrees F (175 degrees C).
  • Bake in preheated oven for 15 to 20 minutes, until brown. Remove from oven and immediately turn upside down onto a platter.

2/3 cup brown sugar, packed
1/2 cup butter, melted
1 teaspoon cinnamon
1/3 cup raisins
2 cups flour
2 tablespoons sugar
4 teaspoons baking powder
1 teaspoon salt
1/2 cup shortening or 1/2 cup butter
3/4 cup milk
1 cup icing sugar
2 tablespoons milk
1 teaspoon vanilla

Steps:

  • In a small bowl, mix together brown sugar, butter, cinnamon, and raisins; set aside.
  • In a large bowl, combine flour, sugar, baking powder, and salt; mix well.
  • Cut shortening or butter in until mixture resembles course meal.
  • Add milk all at once, stirring quickly with a fork to make soft, sticky dough. Don't overmix.
  • Turn out onto a lightly floured surface; gather gently into a ball; knead lightly about 10 times.
  • Roll out dough into a 10-inch square; spread filling evenly over dough.
  • Roll up; pinch edges to seal.
  • With a sharp knife, cut into 9 pieces.
  • Place in a greased 8-inch square pan.
  • Bake at 425 degrees Fahrenheit for 15 to 18 minutes or until golden brown. Let stand 3 minutes; turn out onto a rack.
  • For icing, mix icing sugar, milk, and vanilla together.
  • Glaze or drizzle with icing.
