PERFECT POT STICKERS

Perfect Pot Stickers image

Homemade pot stickers are so versatile--you can fill them with anything you want and as full as you want. And the play between the crispy, crusty bottom, and the tender parts, makes for a truly unique dumpling. These are filled with ground pork, green onions, ginger, and cabbage.

Provided by Chef John

Categories     Appetizers and Snacks     Wraps and Rolls

Time 1h

Yield 6

Number Of Ingredients 16

1 pound ground pork
4 cloves minced garlic
½ cup finely chopped green onions
3 tablespoons very finely minced fresh ginger
2 tablespoons soy sauce
1 teaspoon soy sauce
1 teaspoon sesame oil
1 pinch cayenne pepper
1 ½ cups finely chopped green cabbage
2 ½ cups all-purpose flour
¾ teaspoon kosher salt
1 cup hot water, about 130 -150 F (55-65 C)
¼ cup seasoned rice vinegar
¼ cup soy sauce
6 tablespoons vegetable oil for frying, or as needed - divided
8 tablespoons water for steaming, divided

Steps:

  • Place ground pork, green onions, garlic, ginger, 2 tablespoon plus 1 teaspoon soy sauce, sesame oil, and cayenne in a mixing bowl. Top with chopped green cabbage. Mix with fork until thoroughly combined. Tamp down lightly; cover with plastic. Refrigerate until chilled, about an hour.
  • Place flour and kosher salt in a mixing bowl. Slowly pour in hot water. Stir with a wooden spoon until mixture forms a shaggy dough. Flour your hands and transfer dough to a work surface. Knead dough until it becomes smooth and elastic. If dough seems too sticky, sprinkle with a bit more flour, about 3 to 5 minutes. Wrap dough ball in plastic, and let it rest about 30 minutes.
  • When dough has rested, divide into 4 equal pieces. Cover 3 pieces with a dish cloth while you work the first piece. Roll into a small log about the thickness of a thumb, about 3/4 inch. Divide each log into 6 equal pieces. Roll each piece into a thin 3 1/2-inch circle on a lightly floured surface to form the pot sticker wrappers. Repeat with the remaining dough pieces.
  • Lightly moisten the edges of a wrapper with your wet finger. Place a small scoop of the ground pork mixture onto the center of a wrapper. Fold up the 2 sides and pinch together in the center. Pinch together the remaining edges, forming "pleats" along one side. Tap the pot sticker on the work surface to slightly flatten the bottom; form a slight curve in it so it stands upright in the pan. Transfer to a well-floured plate. Repeat with remaining dough and filling.
  • Mix together seasoned rice vinegar and soy sauce in a small mixing bowl for the dipping sauce.
  • Heat oil in skillet over medium-high heat. Place about 6 or 7 pot stickers in the hot oil, flat side down. Cook until bottoms are golden brown, about 2 minutes. Drizzle in water and quickly cover the pan; steam for 3 minutes. Uncover; reduce heat to medium. Continue cooking until water evaporates and bottoms are browned and crunchy, 1 or 2 minutes. Transfer to a warm serving dish. Repeat with remaining pot stickers. Serve with dipping sauce.

CHINESE POT STICKERS

Chinese Pot Stickers image

These pot stickers are 100% better than any you can buy and well worth the extra effort. I like to make them and then freeze them so all you have to do is the final steps just before you serve them. I make them every Christmas to have as a quick appetizer. One review commented that she had trouble with them sticking together when she defrosted them - I have not had this happen however to be sure it doesn't happen to you defrost them separated. I have also fried them directly from the freezer. They only take a few seconds more to cook.

Time 1h

Yield 64 Potstickers

Number Of Ingredients 16

2 cups cabbage, finely chopped

2 tablespoons rice wine, sherry or 2 tablespoons white wine
1 tablespoon green onion, chopped
1 tablespoon sesame oil
2 teaspoons fresh ginger, chopped
2 garlic cloves, minced

1/4 cup vegetable oil
1 cup chicken stock
2 tablespoons light soy sauce
1 tablespoon rice vinegar
1 teaspoon fresh ginger, minced

They will keep for a month. Defrost in fridge before continuing).
  • In 2 large skillets heat 1 tbsp oil, fry 16 dumplings for 1 minute or until golden on one side add 1/4 cup of stock into the pan, reduce heat to low, cover and cook, without turning for about 7 minutes or until the dumpling is translucent and most of the liquid has evaporated Uncover and on higher heat cook for another 5-7 minutes or until the bottoms are dark brown, drain put on a platter and keep warm.
  • Repeat for the remaining 32 dumplings.
  • Mix the dipping sauce and serve with warm or hot dumplings.

FAST POT-STICKERS

Fast Pot-Stickers image

What can make pot-stickers a minimalist dish? One approach is called takeout and is already quite common. The alternative is using the wrappers now sold in just about every supermarket. Start with those, and a filling of ground pork (beef, chicken, turkey and lamb also work), cabbage, scallions, ginger and garlic. For a vegetarian pot-sticker, cabbage can dominate, complemented by chopped shiitakes, minced tofu, minced celery and carrots, chives or a combination. Wrap, seal and cook.

Provided by Mark Bittman

Categories     appetizer

Time 1h

Yield 4 main-course or 8 appetizer servings

Number Of Ingredients 10

3/4 pound ground pork or other meat
1 cup minced cabbage
2 tablespoons minced ginger
1 tablespoons minced garlic
6 scallions, the white and green parts separated, both minced
1/2 cup plus 2 tablespoons good soy sauce
48 dumpling wrappers
1 egg, lightly beaten in a bowl
4 tablespoons peanut oil or vegetable oil, more or less
1/4 cup rice vinegar or white vinegar

Steps:

  • Combine meat, cabbage, ginger, garlic, scallion whites and 2 tablespoons soy sauce in a bowl with 1/4 cup water. Lay a wrapper on a clean, dry surface, and using your finger or a brush, spread a bit of egg along half of its circumference. Place a rounded teaspoon of filling in center, fold over and seal by pinching edges together. (Do not overfill.) Place dumplings on a plate; if you want to wait a few hours before cooking, cover plate with plastic wrap and refrigerate. Or freeze, for up to two weeks.
  • To cook, put about 2 tablespoons oil in a large nonstick skillet and turn heat to medium-high. A minute later, add dumplings, one at a time; they can touch one another, but should still sit flat in one layer. Cook about 2 minutes, or until bottoms are lightly browned and most of the oil has been absorbed. Add 1/4 cup water per dozen dumplings to pan, and cover. Lower heat to medium, and let simmer about 3 minutes.
  • To make the dipping sauce, combine remaining soy sauce, green parts of scallions and vinegar.
  • Uncover dumplings, return heat to medium-high and cook another minute or two, until bottoms are dark brown and crisp and water evaporates. (Use more oil if necessary.) Serve hot, with sauce.

Categories     appetizer

Time 40m

Yield 25 to 30 dumplings

Number Of Ingredients 15

1/2 pound ground pork
1/4 cup finely chopped green onions
2 cloves garlic, finely chopped
2 tablespoons Neely's BBQ sauce, plus an additional 1/4 cup
1 teaspoon Neely's BBQ seasoning, recipe follows
1 teaspoon yellow mustard
Dash Worcestershire sauce
Dash hot sauce
Kosher salt and freshly ground black pepper
25 to 30 small square wonton wrappers
Canola oil, for frying
1 cup chicken stock
3/4 cup sugar
1 1/2 cups paprika
3 3/4 tablespoons onion powder

Steps:

  • In a medium bowl, add the ground pork, green onions, garlic, BBQ sauce, BBQ seasoning, mustard, Worcestershire, hot sauce, salt and pepper. Mix together with a wooden spoon until incorporated
  • Lay 3 wonton wrappers at a time out on your work surface. Cover the others with a damp paper towel to keep them from drying out. Dip your finger in a small ramekin of water and brush the edges of the wrapper lightly with water. Drop a teaspoon of the filling into the center of the wonton, add a drop of BBQ sauce, approximately a teaspoon, on top of the filling. Bring 2 opposite points together and seal, then bring the next 2 points together and pleat the top, making a little purse. As you go, set the filled dumplings on a sheet tray and cover with another damp paper towel. Repeat until all the filling is used.
  • Heat a large skillet over medium heat. Add just enough canola oil to cover the bottom of the pan. Once hot, add the dumplings to the pan. Make sure they are not touching or crowded together. Let the dumplings cook, for 2 minutes. Add 1/3 cup of the chicken stock and cover. Reduce the heat to low, and allow the dumplings to finish cooking by steaming, another 2 to 3 minutes. Once done, gently remove the dumplings from the pan.
  • Repeat with the remaining dumplings. Transfer to a serving platter and serve.
  • Mix all the ingredients together and store in an airtight container.

Time 1h45m

Yield 8 servings

Number Of Ingredients 23

1/2 cup extra-virgin olive oil
Flour for dredging
3 rabbits, cut into serving pieces
5 large shallots, minced
3 cloves garlic, minced
16 pearl onions
1 pound mixed fresh wild mushrooms such as shiitake and chanterelle, julienned
1/2 pound fresh domestic mushrooms, sliced
1 cup carrot, julienned
1 cup peeled turnip, julienned
1 cup sliced celery
1/4 cup tomato paste
3 tablespoons chopped fresh tarragon
4 cups dry white wine
1/2 cup brandy
8 cups chicken stock
Bouquet garni (parsley, thyme, bay leaf, peppercorns and cloves tied in a cheesecloth)
4 tomatoes, peeled, quartered and seeded
1 1/2 cups raw peas
2 tablespoons cornstarch dissolved in 1/4 cup water
Coarse salt and freshly ground pepper to taste
2 pounds puff pastry
2 eggs, beaten with a pinch of salt

Steps:

  • Preheat oven to 350 degrees. Heat oil in a large saute pan. Lightly flour rabbit pieces and brown in batches in the oil. Remove rabbit and set aside. In the same pan, lightly brown the shallots, garlic and onions in oil remaining in the pan. Add mushrooms, carrot, turnip and celery and cook for a minute more. Stir in tomato paste and tarragon. Add the wine and brandy and simmer for five minutes to reduce.
  • Transfer to an ovenproof 10-quart stock pot. Add the stock, bouquet garni, tomatoes and browned rabbit and bring to a boil. Cover and cook in a preheated oven for 45 minutes. Remove from oven and cool to room temperature.
  • Remove rabbit and vegetables to a platter, reserving all liquid in pot; discard the bouquet garni. Debone rabbit, keeping pieces of meat as large as possible. Divide the meat among eight individual two-cup casseroles. Distribute cooked vegetables and raw peas evenly among the casseroles.
  • Strain the cooking liquid through a fine sieve into a pot. Reduce it over high heat to about four cups. Strain the liquid again, return to pot and whisk in the cornstarch mixture, a teaspoon at a time. Cook it until the sauce is very thick. Season with salt and pepper to taste. Divide the sauce among the casseroles. (Casseroles can be prepared up to this point and refrigerated overnight.)
  • To finish the pot pies, preheat oven to 425 degrees. Roll out the puff pastry an eighth of an inch thick. Cut into rounds an inch larger in diameter than the casseroles. Place pastry rounds on top of casseroles and crimp to sides; brush pastry with beaten eggs. Bake until pastry is golden brown, about 30 minutes.
