2 1/2 cups raspberries (6 ounces)
3 cups blueberries (10 ounces)
1/2 cup sugar
1/2 cup water
8 cups lightly packed shaved ice (made with an ice shaver, preferably manual)

Steps:

  • Coarsely mash 1 1/2 cups raspberries and 2 cups blueberries with sugar and water in a 2- to 3-quart heavy saucepan using a potato masher. Bring to a boil, stirring, then boil, uncovered, stirring occasionally, 3 minutes. Transfer to a blender and purée until almost smooth, about 1 minute (use caution when blending hot liquids). Pour berry mixture through a fine-mesh sieve into a bowl, pressing lightly on and then discarding solids. Cool syrup, uncovered, then chill, its surface loosely covered with plastic wrap, until cold, about 1 hour.
  • For each serving, spoon 3 tablespoons syrup over 1 cup lightly packed shaved ice and top with 1/4 cup of remaining mixed berries. Serve immediately.

1 teaspoon baking powder
¼ teaspoon salt
6 tablespoons butter
¼ cup boiling water
2 tablespoons cornstarch
¼ cup cold water
2 cups fresh blueberries
1 ½ cups fresh raspberries
¾ cup white sugar
1 tablespoon lemon juice

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Mix flour, 1/2 cup sugar, baking powder, and salt in a bowl; mash butter into the flour mixture until crumbly. Stir boiling water into the flour mixture to form a dough.
  • Dissolve cornstarch in cold water in a separate large bowl. Stir blueberries, raspberries, 3/4 cup sugar, and lemon juice into the cornstarch mixture; transfer to a cast-iron skillet and bring to a boil, stirring frequently. Drop dough into the skillet by the spoonful. Put skillet onto the prepared baking sheet.
  • Bake in preheated oven until the topping is golden brown, about 25 minutes.

  • In a small saucepan, combine sugar and water. Cook and stir over medium heat until sugar is dissolved; remove from heat. Stir in Kool-Aid and lemon juice; cool. Cover and store in the refrigerator up to 2 weeks.

1 (10 inch) angel food cake
1 (8 ounce) package cream cheese
1 cup milk
1 (16 ounce) package frozen whipped topping, thawed
1 (21 ounce) can blueberry pie filling
1/2 cup confectioners' sugar
1/2 teaspoon vanilla extract

Steps:

  • Break angel food cake into small pieces, and spread into the bottom of a 9 x 13 inch baking dish.
  • Mix together confectioners' sugar, cream cheese, vanilla, and milk until smooth. Fold in whipped topping.
  • Pour over cake pieces.
  • Pour blueberries over all. Chill for 4 hours or overnight.

2 cups all-purpose flour
¼ cup packed brown sugar
1 tablespoon baking powder
¼ teaspoon salt
¼ cup butter, chilled
1 cup fresh blueberries
¾ cup half-and-half cream
1 egg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cut butter into mixture of flour, sugar, baking powder, and salt. Add blueberries and toss to mix.
  • In separate bowl beat together cream and egg, and slowly pour into dry ingredients, stirring with rubber scraper until dough forms. Knead just until it comes together, 3 or 4 times. Don't overhandle.
  • Divide dough in half. On lightly floured board, shape each half into a 6-inch round. Cut into 6 wedges.
  • Bake on ungreased sheet about 20 minutes at 375 degrees F (190 degrees C). Serve warm!!
