Banana cream pie meets raspberry goodness in this Raspberry Banana Pie recipe that is sweet and creamy and perfect. Who would have ever guessed that raspberry and banana were such a perfect match?

1 fully baked 9" pie crust
1 cup sugar
1/4 cup cornstarch
1/2 teaspoon salt
3 cups milk (I used 2%)
2 large eggs
3 tablespoons butter
1 1/2 teaspoons vanilla extract
2 large bananas
3/4 cup raspberry preserves
6 oz fresh raspberries

Steps:

  • Combine the sugar, cornstarch and salt in a medium saucepan and whisk to combine. Stir in the milk. Set over medium-high heat and cook until thickened and bubbly, stirring constantly. Reduce the heat and continue to stir for 2 more minutes. Remove from the heat.
  • In a medium bowl, lightly whisk the eggs. Slowly whisk in about 1/2 cup of the hot mixture, whisking constantly. Return all of the mixture to the saucepan and return to the heat. Bring to a gentle boil, then cook and stir for 2 minutes longer.
  • Remove the pan from the heat and stir in the butter and the vanilla. Let the mixture cool slightly, then press plastic wrap directly on the surface of the custard. Refrigerate for 30 minutes, or until almost room temperature.
  • Slice the bananas. Spread half of the custard in the bottom of the baked pie crust. Top with a single layer of banana slices. Pour the remaining custard over the top of the bananas. Cover with plastic wrap and refrigerate for at least 6 hours.
  • Combine the raspberry preserves with 2 tablespoons of warm water. Stir in half of the fresh raspberries.
  • Remove the plastic wrap from the pie and spread the raspberry mixture over the top. Sprinkle the remaining fresh raspberries on top.
  • Pie can be served immediately or refrigerated until ready to serve.

1-3/4 cups all-purpose flour
1-1/2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
2 eggs
1 cup mashed ripe bananas (about 2 medium)
1/2 cup vegetable oil
1/3 cup water
1 cup fresh or frozen unsweetened raspberries
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 350°. In a large bowl, combine the flour, sugar, baking soda and salt. In another bowl, combine the eggs, bananas, oil and water. Stir into the dry ingredients just until moistened. Fold in raspberries and walnuts. , Pour into two greased 8x4-in. loaf pans. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

1 cup granulated sugar
1/2 cup canola oil ((or your preferred baking oil))
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 pint fresh raspberries ((6 oz. or about 1 1/2 cups))

Steps:

  • Preheat oven to 350°F. Spray a standard 9x5 inch loaf pan with baking spray.
  • Add the bananas to a large mixing bowl. Mash with a potato masher or the back of a fork until mostly smooth.
  • Add the sugar, oil, eggs, and vanilla. Whisk until well combined.
  • Add the flour, baking soda, and salt. Stir until no dry flour remains.
  • Add the raspberries. Gently stir them into the batter, trying not to mash the raspberries.
  • Pour the batter into the loaf pan. Spread into an even layer.
  • Bake for 55-65 minutes. A toothpick inserted into the center of the bread should come out with moist crumbs, but no raw batter on it.
  • Let the bread cool in the loaf pan for 10 minutes. Remove the bread from the pan and transfer it to a wire baking rack to cool completely before slicing.
  • Store covered in the refrigerator.

1 ripe banana
1 ½ cups all-purpose flour
¾ teaspoon ground cinnamon
½ teaspoon baking soda

1 cup white sugar
2 eggs
½ cup vegetable oil
½ teaspoon lemon extract

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a loaf pan.
  • Mash thawed raspberries in a bowl with a fork; press raspberries through a sieve to remove seeds. Mash banana in another bowl with a fork.
  • Combine flour, cinnamon, baking soda, salt, and nutmeg in a bowl. Beat sugar, eggs, raspberries, banana, and vegetable oil in a bowl with an electric mixer set on low until smooth, 2 to 3 minutes. 5 bananas
350g frozen or fresh raspberries
250g gingernut biscuits
140g demerara sugar
140g butter , melted

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Thickly slice the bananas into a wide, shallow dish (a 20cm circular dish works well). Scatter the raspberries over the top.
  • Put the biscuits into a sturdy bowl or old saucepan and bash with the end of a rolling pin until reduced to crumbs. Stir in the sugar, then the butter, making sure all the crumbs are well coated. Scatter evenly over the fruit.
  • Bake for 20-25 mins, until just beginning to colour. Leave to stand for at least 10 mins for the topping to crisp up: you could even cook it just before eating the main course and let it wait in a warm place until you've finished. Serve with cream or custard.

1-1/4 cups graham cracker crumbs
5 tablespoons butter, melted
2 tablespoons sugar
1 teaspoon ground ginger
FILLING:
3/4 cup sugar
2 tablespoons plus 3/4 teaspoon cornstarch
1 tablespoon strawberry gelatin
3/4 cup cold water
2 cups sliced fresh strawberries, divided
1 can (14 ounces) sweetened condensed milk
1 package (8 ounces) reduced-fat cream cheese
1/4 cup cold 2% milk
1 package (3.4 ounces) instant banana cream pudding mix

Steps:

  • Combine the graham cracker crumbs, butter, sugar and ginger. Press onto the bottom and up the sides of an ungreased 9-in. pie plate. Bake at 350° for 8-10 minutes or until lightly browned. Cool on a wire rack., For filling, in a small saucepan, combine the sugar, cornstarch and gelatin. Stir in water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Cool slightly. Arrange 1 cup strawberries over crust. Pour gelatin mixture over strawberries. Refrigerate for 2 hours or until set., In a large bowl, beat the sweetened condensed milk, cream cheese, milk and pudding mix for 1 minute. Spread over top of pie. Refrigerate for 2 hours or until set. Garnish with remaining strawberries. Refrigerate leftovers.

1 ½ cups graham cracker crumbs
¼ cup white sugar
⅓ cup butter, melted
5 bananas
1 (3 ounce) package cream cheese, softened
2 (3.5 ounce) packages instant banana pudding mix
3 ½ cups milk
1 (8 ounce) container frozen whipped topping, thawed
2 bananas, sliced
1 tablespoon lemon juice

Steps:

  • In a medium bowl, mix graham cracker crumbs and sugar. Stir in melted butter. Mix thoroughly, then press mixture into bottom of a 9x13 inch pan.
  • Cut bananas into 1/4 inch slices and make a single layer of banana slices on graham cracker crust. Reserve remaining banana slices.
  • In a large mixing bowl, whip cream cheese until fluffy. Add pudding mix and whip mixture until smooth. Add milk and mix until all ingredients are thoroughly combined. Pour mixture over layer of bananas.
  • Make another layer of banana slices on top of pudding layer. Cover bananas with whipped topping. Refrigerate at least 3 hours before serving. If using banana slices for garnish, toss with lemon juice to prevent browning.

2 cups fat-free milk
1/2 cup cholesterol-free egg product
2 Tbsp. margarine, melted
1 pkg. (10 oz.) frozen raspberries, thawed
1 cup BREAKSTONE'S FREE or KNUDSEN Fat Free Sour Cream
1/4 tsp. almond extract
1 cup thawed COOL WHIP LITE Whipped Topping
3 bananas

Steps:

  • Combine flour, sugar and baking powder in large bowl with whisk. Add milk, egg product and margarine; mix well. Let stand 30 min.
  • Spray 6- to 8-inch skillet with cooking spray; heat on medium heat. Pour 1/4 cup batter into skillet; tilt skillet to evenly cover bottom with batter. Cook 1 to 2 min. or until bottom of crêpe is lightly browned. Run spatula round edge of crêpe to loosen from pan; turn crêpe. Cook 1 min. or until bottom of crêpe is lightly browned. Remove from skillet; set aside. Repeat with remaining batter to make a total of 16 crêpes.
  • Blend raspberries in blender until smooth; strain to remove seeds. Remove 3 Tbsp. raspberry purée; place in medium bowl. Add sour cream and extract; mix well. Gently stir in COOL WHIP.
  • Slice bananas. Spoon about 2 Tbsp. COOL WHIP mixture onto center of each crêpe. Top with bananas. Fold opposite sides of each crêpe over filling. Serve topped with remaining raspberry purée.
