Steps:
- 1. Preheat oven to 350° F . Line a sheet pan with aluminum foil and coat with canola or vegetable spray. NOTE: I use a 13x9 inch pan becasue I prefer them thicker. You can adjust the size of the pan to your preference. You can use 1/2 the recipe if you do not need as much.
- 2. In a small bowl, cream butter and brown sugar until combined. Add the flour and salt. Carefully mix to combine until it resembles chunky bread crumbs. Transfer into the prepared pan and evenly press the batter into an even layer. Bake for 8 minutes. Cool on a wire baking rack while preparing the coconut topping.
- 3. In a large bowl, combine the condensed milk, coconut, and vanilla. Spread over the crust and bake for another 20-25 minutes, until it begins to brown.
- 4. Melt the chocolate over a double boiler. Stir until melted and smooth. Pour over cooked coconut bars and spread into an even layer. Allow to cool then refrigerate until hardened, about 1 hour. Cut into 36 squares.
- 5. NOTE: Use chunks not chips (70% Cacao Bittersweet Chocolate Baking Chunks.) Bittersweet chocolate is available in several forms, including bars, chips, and chunks of various sizes. It is used in baking, cooking, and is eaten out of hand. NOTE: You can top with Almond Joy bites, sliced almonds or leave off. Use light or dark chocolate, your preference.

Steps:
- Stir together the coconut, condensed milk and vanilla. It should be sticky and hold it's shape when pressed together.
- Melt the chocolate (along with the optional coconut oil to thin it) in a glass bowl over a pan of water, or in the microwave at half power for about 2 minutes, stirring every 30 seconds or so.
- Drizzle 1 teaspoon of chocolate into the bottom of each cup. Add 1 teaspoon of the coconut mixture. Press on the coconut slightly to make the chocolate slide up the sides of the liner.
- Top the coconut with an almond and then pour a teaspoon of chocolate on top. Chill in the refrigerator until ready to eat. Store in the refrigerator for up to a week or in the freezer for a couple of months. Enjoy!

ALMOND BARS
"This is one of my favorite recipes for last-minute school bake sales," writes Sandy Kerrison from her home in Lockport, New York. "The cake-like snacks are the first items to go...that is, if they're not grabbed by a teacher first. I also include them in Christmas cookie gift baskets."

Steps:
- Melt margarine, stir in sugar and graham crackers until all worked in together.
- Pat in the bottom of a 9x13 pan.
- Bake in a 350 degree oven for 10 minutes.
- while the crust is baking, mix the sweetened condensed milk with the coconut until all the coconut is incorporated with the sweetened condensed milk.
- I usually chop the almonds up as the bars cut easier when they are chopped rather than left whole, but that is a personal choice.
- When the crust is out of the oven, spread filling over the crust. Once the filling is spread, sprinkle the toasted almonds over the filling.
- Bake the bars for 20 minutes or until light golden brown.
- Once you take the bars out of the oven, I turn my oven off, sprinkle the chocolate chips over the bars and return to oven for a few minutes until the chips are melted enough to spread with a knife.
- I have found over the years that scoring the bars while the chocolate is still soft, helps when cutting the bars after they have cooled. Other wise when you cut the cooled bars, they don't seem to cut cleanly and neatly. I also cut them into tiny bite size pieces, they are very rich and by cutting them small, they go alot further.

- Line 8×8 dish with baking paper or aluminum foil leaving an overhand on each side, spray with nonstick spray, set aside.
- Stir together sweetened condensed milk and shredded coconut until evenly combined. Start with 1 can sweetened condensed milk and 2 cups of shredded coconut. Stir it well, if it’s too thin, gradually add more coconut until it’s thick, but not too dry. It will be a little sticky but should hold together in a shape when you squeeze it with your hand.
- Spread the mixture in prepared dish. The mixture is thick and sticky, so the easiest way to spread it into an even layer is to wet your hands with water and press the mixture with your palms, or use a wet spatula. Try to create an even layer and smooth the top as much as you can.
- Arrange roasted almonds on top and gently press with your palms to stick to the mixture. I made 18 bars from 8×8 inch dish, so I place 36 almonds on top (6 rows lengthwise and 6 rows crosswise; 2 per each bar). You can make smaller or larger bars, up to your taste.

- Toast the almonds by spreading them in a thin layer on a baking sheet and baking at 375*F for 5-7 minutes. Keep a close eye on them, so they don't over bake. They should be a light golden brown.
- Line a 9"x13" baking pan with foil that hangs over the edge (for easy removal). Spray the foil with a light layer of cooking spray.
- With a mixer, or food processor, blend the butter and sugar until smooth and fully combined. Add flour and salt, and blend lightly until almost incorporated. Add 1 cup of cooled, toasted almonds, and blend until just combined.
- In a bowl, mix the sweetened condensed milk, coconut and vanilla. Spoon the mixture onto the crust, spreading gently, so you don't distrub the crust.

- Add the Coconut, melted Coconut Butter, Maple Syrup, Vanilla Extract, and Salt to a medium bowl. Mix well, then press into a narrow silicone mold or lined narrow dish (see notes for options). Then, firmly press each whole Almond into the Coconut Mixture – line them up to each bar will have 2-3.
- Cut the frozen block into individual Candy Bars, then place back in the freezer while you melt the Chocolate. (Note: it helps to run the knife under hot water and then dry it before you slice the bars)
- Melt your Chocolate using either a double boiler or the microwave. If you are using the microwave, cook the Chocolate pieces at 30 second intervals, stirring in between. Once the mixture is 75% melted, stir the Chocolate together until completely melted.

- For chewier bars, bake until barely starting to color around the edge and still soft in the middle, 20 to 25 minutes. For crunchier bars, bake until golden brown around the edge and somewhat firm in the middle, 30 to 35 minutes. (Both will still be soft when warm and firm up as they cool.)

- If using whole almonds, process them first. Put them in the bowl of your food processor and blitz until crumbled and pretty uniform in texture. If using slivered or sliced almonds, skip this step, and simply add the almonds with the rest of the ingredients in the next step.
- Add remaining ingredients, except for water, and process until smooth and well combined. Add water as necessary to create a texture that clumps together but isn't too moist.
- Line an 8x8" baking pan with parchment paper, leaving extra on two sides to act as handles. Press mixture into baking pan and use your fingertips or a mini roller to flatten and smooth. Refrigerate at least 15 minutes to firm up.
- Use your parchment paper "handles" to lift chilled mixture out of baking pan. Slice into bars and keep in an airtight container in the fridge for 1 week.

- Preheat oven to 325 degrees F. Grease an 8×8 glass baking dish and line with parchment paper (this will help with removal to cut the squares later). Add all ingredients for the crust into a food processor and pulse until completely combine. The dough should mix into a slight ball once combined. Put dough in a pan and use your fingers to press dough around evenly throughout the pan. Poke holes with a fork in the dough to keep it from rising in the oven. Bake crust for 20 minutes, until golden brown. Remove then let crust cool.
- Place all the ingredients for the coconut layer in a food processor and pulse until coconut becomes fine and completely combined. Spread coconut layer on top of crust and spread evenly throughout. Place in freezer for 5 minutes.
- Melt chocolate in a double boiler or microwave. Pour melted chocolate over coconut layer and use a spoon to smooth throughout. Place the almonds throughout the chocolate layer then place in the freezer for 10 minutes to harden the chocolate.
- Once hardened, bring to room temperature before cutting into squares then serve up. They are definitely better at room temperature when the chocolate has softened up a bit!
