Categories     Candies

Time 1h10m

Number Of Ingredients 8

10 Tbsp unsalted butter, room temperature
3/4 c light brown sugar, packed
2 1/2 c flour
1/2 tsp fine sea salt
28 oz sweetened condensed milk
28 oz shredded coconut
1 tsp vanilla extract
5 c bittersweet chocolate baking chunks (loosely placed in cup)

Steps:

  • 1. Preheat oven to 350° F . Line a sheet pan with aluminum foil and coat with canola or vegetable spray. NOTE: I use a 13x9 inch pan becasue I prefer them thicker. You can adjust the size of the pan to your preference. You can use 1/2 the recipe if you do not need as much.
  • 2. In a small bowl, cream butter and brown sugar until combined. Add the flour and salt. Carefully mix to combine until it resembles chunky bread crumbs. Transfer into the prepared pan and evenly press the batter into an even layer. Bake for 8 minutes. Cool on a wire baking rack while preparing the coconut topping.
  • 3. In a large bowl, combine the condensed milk, coconut, and vanilla. Spread over the crust and bake for another 20-25 minutes, until it begins to brown.
  • 4. Melt the chocolate over a double boiler. Stir until melted and smooth. Pour over cooked coconut bars and spread into an even layer. Allow to cool then refrigerate until hardened, about 1 hour. Cut into 36 squares.
  • 5. NOTE: Use chunks not chips (70% Cacao Bittersweet Chocolate Baking Chunks.) Bittersweet chocolate is available in several forms, including bars, chips, and chunks of various sizes. It is used in baking, cooking, and is eaten out of hand. NOTE: You can top with Almond Joy bites, sliced almonds or leave off. Use light or dark chocolate, your preference.

HOMEMADE ALMOND JOYS WITH DARK CHOCOLATE

Homemade Almond Joys with Dark Chocolate image

Rich, chocolatey and nutty with plenty of light, flaky coconut, Almond Joy candy bars are easier than you'd expect to make at home.

Provided by Mary Younkin

Categories     Snack

Time 7m

Number Of Ingredients 7

1 1/4 cup shredded sweetened coconut
1/4 cup sweetened condensed milk *
1/2 teaspoon vanilla
18-36 roasted almonds
2 cups dark chocolate chips (or the chocolate of your choice)
Optional: 2 tablespoons coconut oil
36 tiny cupcake liners (about 1" in size)

Steps:

  • Stir together the coconut, condensed milk and vanilla. It should be sticky and hold it's shape when pressed together.
  • Melt the chocolate (along with the optional coconut oil to thin it) in a glass bowl over a pan of water, or in the microwave at half power for about 2 minutes, stirring every 30 seconds or so.
  • Drizzle 1 teaspoon of chocolate into the bottom of each cup. Add 1 teaspoon of the coconut mixture. Press on the coconut slightly to make the chocolate slide up the sides of the liner.
  • Top the coconut with an almond and then pour a teaspoon of chocolate on top. Chill in the refrigerator until ready to eat. Store in the refrigerator for up to a week or in the freezer for a couple of months. Enjoy!

ALMOND JOY BARS

Almond Joy Bars image

These are so Yummy! They really do taste like an Almond joy candy bar. I usually make these for Christmas, but I tend to also make them for pot lucks or other family functions. These are a huge hit. Trust me, you will Love them!

Provided by Smile1968

Categories     Bar Cookie

Time 40m

Yield 25-30 serving(s)

Number Of Ingredients 7

2 cups crushed graham crackers
1/2 cup sugar
2/3 cup melted margarine
3 cups flaked coconut
2 (14 ounce) cans sweetened condensed milk
1 1/2 cups toasted almonds
1 (12 ounce) package semi-sweet chocolate chips

Steps:

  • Melt margarine, stir in sugar and graham crackers until all worked in together.
  • Pat in the bottom of a 9x13 pan.
  • Bake in a 350 degree oven for 10 minutes.
  • while the crust is baking, mix the sweetened condensed milk with the coconut until all the coconut is incorporated with the sweetened condensed milk.
  • I usually chop the almonds up as the bars cut easier when they are chopped rather than left whole, but that is a personal choice.
  • When the crust is out of the oven, spread filling over the crust. Once the filling is spread, sprinkle the toasted almonds over the filling.
  • Bake the bars for 20 minutes or until light golden brown.
  • Once you take the bars out of the oven, I turn my oven off, sprinkle the chocolate chips over the bars and return to oven for a few minutes until the chips are melted enough to spread with a knife.
  • I have found over the years that scoring the bars while the chocolate is still soft, helps when cutting the bars after they have cooled. Other wise when you cut the cooled bars, they don't seem to cut cleanly and neatly. I also cut them into tiny bite size pieces, they are very rich and by cutting them small, they go alot further.

  • Line 8×8 dish with baking paper or aluminum foil leaving an overhand on each side, spray with nonstick spray, set aside.
  • Stir together sweetened condensed milk and shredded coconut until evenly combined. Start with 1 can sweetened condensed milk and 2 cups of shredded coconut. Stir it well, if it’s too thin, gradually add more coconut until it’s thick, but not too dry. It will be a little sticky but should hold together in a shape when you squeeze it with your hand.
  • Spread the mixture in prepared dish. The mixture is thick and sticky, so the easiest way to spread it into an even layer is to wet your hands with water and press the mixture with your palms, or use a wet spatula. Try to create an even layer and smooth the top as much as you can.
  • Arrange roasted almonds on top and gently press with your palms to stick to the mixture. I made 18 bars from 8×8 inch dish, so I place 36 almonds on top (6 rows lengthwise and 6 rows crosswise; 2 per each bar). You can make smaller or larger bars, up to your taste.
