BASIC HAM AND BEAN SOUP



Basic Ham and Bean Soup image

Hearty ham and bean soup. Easy to make and a great way to use a leftover ham bone. This soup also has lots of mixed vegetables.

1 pound dry great Northern beans
8 cups water
½ teaspoon salt
1 ham hock
1 cup chopped carrots
½ stalk celery, chopped
1 cup chopped onion
1 teaspoon minced garlic
1 teaspoon mustard powder
2 bay leaves
2 cups chopped ham
½ teaspoon ground white pepper

Steps:

  • Rinse the beans, sorting out any broken or discolored ones. In a large pot over high heat, bring the water to a boil. Add the salt and the beans and remove from heat. Let beans sit in the hot water for at least 60 minutes.
  • After the 60 minutes of soaking, return the pot to high heat and place the ham bone, carrots, celery, onion, garlic, mustard and bay leaves in the pot. Stir well, bring to a boil, reduce heat to low and simmer for 60 more minutes.
  • Remove ham bone and discard. Stir in the chopped ham and simmer for 30 more minutes. Season with ground white pepper to taste.

4 cups of water
2 cups of beef or vegetable broth (depends whether you eat meat or not)
2 cans (14 oz) of diced tomatoes
Spices:
1 tsp paprika
1 tsp cumin
1 tbsp red pepper flakes
2 tsp minced onion flakes
1 tsp Pink sea salt
1/2 tsp Celery salt
1/4 tsp cracked black pepper

Steps:

  • Place the beans into a large Dutch Oven.
  • Add the spice packet and tomatoes. Stir in the water and vegetable broth.
  • Mix well.
  • Heat over a low to medium heat for about 2 hours. Add more liquid if needed during the cooking time.

1 package (12 ounces) mixed dried beans
8 cups water
1/2 pound ground beef, cooked and drained
1 can (14-1/2 ounces) diced tomatoes, undrained

Steps:

4 slices bacon, diced
1/2 cup chopped onion
1/2 cup chopped celery
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Rinse beans and sort for stones.
  • Soak beans in enough water to cover overnight.
  • Drain off water.
  • In skillet, brown bacon.
  • Add onion and celery, stir.
  • Add spices.
  • Add this mixture to drained beans.
  • Pour enough water to reach within 3 inches of top of pot.
  • Bring to a boil.
  • Simmer for 4-5 hours, stirring occasionally.
  • When soup is about ready to serve, use a potato masher to crush up some of the beans to make a thicker soup.

1 (16 ounce) package dried navy beans
7 cups water
1 ham bone
2 cups diced ham
¼ cup minced onion
½ teaspoon salt
1 pinch ground black pepper
1 bay leaf
½ cup sliced carrots
½ cup sliced celery

Steps:

  • Place rinsed beans into a large stock pot. Add water and bring to a boil. Boil gently for 2 minutes; remove from heat, cover and let stand for 1 hour.
  • Add ham bone, cubed ham, onion, salt, pepper and bay leaves. Bring to a boil; reduce heat, cover and simmer for 1 hour and 15 minutes or until beans are soft. Occasionally skim surface of soup while it is cooking.
  • Add carrots and celery, cook until tender. Remove ham bone, scrape any meat from bone and place back into soup and serve.

1 1/4 cup Dried Kidney Beans
1 1/4 cup Dried Black Beans
3/4 cup Dried Pinto Beans
3/4 cup White Bean (navy)
1 tbsp Garlic Salt
1 tbsp Powdered Beef Bullion (Or chicken)
2 tsp Onion Powder
1 tsp Red Pepper Flakes
1/2 tsp Chili Powder
1/4 tsp Black Pepper
Salt to taste

Steps:

  • Gather all your ingredients.
  • Using a wide-mouthed canning funnel, layer the dried beans in a glass jar.
  • In a small dish, combine all the spices.
  • Place in spice mix in a small bag and add to jar.
  • Screw on lid and store.
  • Rinse beans to remove any debris. Soak beans overnight (add enough water to cover and an extra 1-2 inches). I do this in my crock pot.
  • In the morning, dump the soaking water.
  • To the crock pot and beans add the spice packet, 1 - 2 cups of water, 2 cups of stewed or diced tomatoes (optional).
  • I also often add a ham hock or ham bone for more flavor.
  • Turn on to low head and cook for 4-6 hours, or until beans are tender.Turn crockpot down to low or warm, and let simmer until ready to serve.
  • Garnish with sour cream, cilantro, or cheese and desired.

HOMEMADE BAKED BEANS FROM DRIED BEANS



Homemade Baked Beans from dried beans image

Classic homemade Boston-style baked beans, flavoured with molasses and cooked low and slow with bacon and onion.

1 lb. dried navy beans
1 1/2 cups onion (diced)
1/2 lb. bacon (diced)
1 1/2 tsp salt
1/4 tsp pepper
5 Tbsp molasses (Fancy (not Cooking or Blackstrap))
1 1/2 tsp dry mustard powder
3/4 cup light brown sugar
3/4 cup ketchup
1 1/2 cups boiling water

Steps:

  • Soak beans in a large bowl over-night, covering with about 2 inches of cold water.
  • In the morning, drain soaked beans and place in a large pot. Cover with several inches of water and bring just to a boil, then immediately reduce heat to somewhere between medium and medium-low or whatever level maintains a gentle simmer. Cook beans for 50-60 minutes, or until beans are tender (but not mushy). Taste test to be sure they are tender before you stop cooking. Drain beans and rinse under cold water to stop the cooking process.
  • Preheat oven to 275F. Start 1 1/2 cups water to boil.
  • In a large oven-safe casserole dish with a lid (or alternately, to be covered with aluminum foil), scatter 1/2 of the onion and 1/2 of the bacon over the bottom of the dish. Add 1/2 of the cooked beans. Scatter the remaining onion and bacon, then top with the remaining cooked beans.
  • In a 4-cup measuring cup or similar sized bowl, stir together the sauce ingredients well. Add 1 1/2 cups of boiling water and stir. Pour over beans and mix gently with a fork. If necessary, add a bit more hot water so that the liquid just barely covers the beans. Cover the pot with a lid or doubled up aluminum foil and place in preheated 275F oven.
  • Beans will cook in the oven for a total of 6 hours, but should be checked at intervals to ensure there is enough liquid in the pot.
  • Cook beans for 4 hours, then remove from oven and gently stir with a fork. There should still be enough liquid in the pot to just barely cover the beans, but if not, add more as needed.
  • Return pot to the oven, covered, checking beans every 30 minutes for the last 2 hours of cooking, first stirring, then adding a bit more water to the pot, if needed. You want to have some puddles of liquid showing on the top of the beans, but you don't want to add too much water to the pot.
  • After 6 hours of cooking, remove from oven and stir gently with a fork. Let stand, uncovered for 5 minutes or covered for 10-15 minutes before serving.

2 medium carrots, diced small
2 celery stalks, diced small
1 medium yellow onion, diced small

1 can (28 ounces) diced tomatoes
4 cups low-sodium vegetable broth

  • In a large pot, heat oil over medium-high. Add carrots, celery, and onion and cook until onion is translucent, about 6 minutes. 1 pound dried navy beans (or another variety of bean)
2 quarts water
2 ham hocks (or a meaty leftover ham bone or shank)
Optional: 1 cup ham (chopped)
1/4 cup onion (chopped)
1/2 cup celery (chopped)
Optional: 1/2 cup carrots (diced)
2 bay leaves (dried)
Kosher salt (to taste)
Black Pepper (to taste)

Steps:

  • Gather the ingredients.
  • Wash the navy beans thoroughly and pick them over. Discard any damaged or malformed beans and look for small stones.
  • Pour the beans into a very large pot and add 2 quarts of water. Place the pot over high heat and bring to a full boil; let boil for 3 minutes.
  • Remove from the heat and let beans soak for 2 to 4 hours.
  • Add the ham hocks or ham bone to the pot with the soaked beans and their cooking water and bring to a simmer.
  • Continue to cook over low heat until the beans are tender, or about 90 minutes.
  • Remove the bones and chop the ham, discarding the bones and fat. Reserve the ham on the side.
  • Return the chopped ham to the pot. Add the onions, bay leaf, celery, and optional carrots to the pot, as well as the extra leftover chopped ham, if using.
  • Add enough water or unsalted vegetable stock to make about 16 cups of liquid. Taste the broth and add salt and pepper, as needed.
  • Cook the soup for about 30 minutes to one hour, or until the vegetables are tender and the liquid has thickened a little.

Steps:

  • Gather the ingredients.
  • Soak the navy beans , white lima beans, black beans, kidney beans, lentils, pinto beans, garbanzo beans, green split peas, pigeon peas, and barley overnight in a large pot with more than enough water to cover. When ready to cook, drain the beans and barley well. Place them in a large stockpot along with the 2 quarts of water, and add the ham bone.
  • Bring to a boil, lower the heat, and skim off any foam that rises to the surface. Cover and simmer for 2 hours.
  • Add tomatoes, onion, lemon juice, chili powder , thyme, and sage. Simmer an additional 30 minutes.
  • Stir in the salt and pasta. Cook an additional 15 minutes until the pasta is done and the beans are tender.
  • If the soup is too thick, add additional water. Remove the ham, de-bone the meat, chop, and return to the soup.

1 pound dry large lima beans
8 cups water
2 tablespoons olive oil
4 carrots (chopped)
2 leeks (white bulb only, chopped)
2 tablespoons minced shallots
2 stalks celery (chopped)
8 cups chicken broth (two 32 ounce cartons)
Salt & pepper (to taste)

Steps:

  • Bring 8 cups of water to a boil. Add lima beans and boil for 5 - 10 minutes. Remove from heat, cover. Let beans soak for 2 - 2.5 hours. Drain and rinse beans; return to pot.
  • In a large pan, heat olive oil and saute all the vegetables until carrots and celery are tender-crisp.
  • Add 8 cups of chicken broth to the beans in the pot. Add the vegetables. Stir to combine and simmer on low for 1.5 hours; stirring frequently. Season with salt and pepper as desired.

4 cups chicken broth, unsalted
3 cups water

1 teaspoon fresh thyme ( or ½ teaspoon dried thyme)
1 teaspoon kosher salt
1/4 teaspoon coarse ground black pepper

Steps:

  • In a large heavy bottomed pan, cook the bacon over medium heat. Remove bacon to a paper towel-lined plate. Remove all but 1 tablespoon of the bacon fat.
  • Add vegetables to pan and cook until onions are translucent and carrots and celery are beginning to soften, 4-5 minutes.
  • Add garlic and tomato paste and cook, stirring, for another minute or until fragrant.
  • Add chicken broth, water, beans, bay leaves, thyme, salt, pepper, and half of bacon. Bring to boil, reduce to simmer and cook, partially covered, for 15-20 minutes or until vegetables are soft.
  • Remove about half of the soup, and puree the remaining soup using either a hand-held immersion blender or a traditional blender. Stir blended and unblended soup together and add remaining bacon, reserving some to garnish, if desired.

1 large onion, chopped
4 -6 carrots, sliced
4 stalks celery, chopped

6 chicken bouillon cubes

Steps:

  • In a large pot,soak the beans in 2 quarts of cold water overnight, or in 2 quarts of boiling water for an hour or two.
  • After soaking, or the next day, drain the beans and cover them with fresh water.
  • Bring the beans to a boil over medium-high heat.
  • Reduce the heat. You want the beans to simmer gently for most of the cooking process.
  • Cover the pot and simmer the beans for an hour.
  • Add more water, if needed, to keep the beans covered.
  • Taste the beans after an hour and see if they are tender.
  • If they are, then you can add the vegetables now; if not, let them cook another 30 minutes and try again.
  • When the beans are perfectly tender add the vegetable oil, chopped vegetables and seasonings.
  • Taste and add salt if you think it needs it.
  • Put the lid back on and simmer the soup for another 30 minutes, or until the carrots are tender.
  • The soup will be rich and dark with vibrant colors from the vegetables peeking through.
  • When everything is tender, it's ready to serve.

Steps:
