BEST TOFFEE EVER - SUPER EASY

Best Toffee Ever - Super Easy image

Chocolate and almonds top off a rich buttery toffee. A simple recipe that you could easily remember and whip up any time. I always get compliments and requests for more. Use any type of nut that you like in place of the almonds.

Provided by FUNKYSEAMONKEY

Categories     Desserts     Candy Recipes     Toffee Recipes

Time 1h20m

Yield 32

Number Of Ingredients 5

2 cups butter
2 cups white sugar
¼ teaspoon salt
2 cups semisweet chocolate chips
1 cup finely chopped almonds

Steps:

  • In a large heavy bottomed saucepan, combine the butter, sugar and salt. Cook over medium heat, stirring until the butter is melted. Allow to come to a boil, and cook until the mixture becomes a dark amber color, and the temperature has reached 285 degrees F (137 degrees C). Stir occasionally.
  • While the toffee is cooking, cover a large baking sheet with aluminum foil or parchment paper.
  • As soon as the toffee reaches the proper temperature, pour it out onto the prepared baking sheet. Sprinkle the chocolate over the top, and let it set for a minute or two to soften. Spread the chocolate into a thin even layer once it is melted. Sprinkle the nuts over the chocolate, and press in slightly. Putting a plastic bag over your hand will minimize the mess.
  • Place the toffee in the refrigerator to chill until set. Break into pieces, and store in an airtight container.

CHOCOLATE TOFFEE

Chocolate Toffee image

Notes about the recipe: I'm always searching for the perfect crunchy toffee that's not sticking to your teeth once you bite into it, and I think I have it here! I serve this on my elaborate petit-four cart as one of 12 treats at the end of the very long meal at my restaurant Tru. I have recently discovered (and become totally addicted to) the marvelous Marcona almond, the favorite of Spanish chefs and tapas-lovers. I nibble them with wine before dinner; I add them to salads; I serve them with cheese; and I stick them into every dessert I can - sometimes all in one day! Marconas are tender and toasty, never hard and dry like some supermarket almonds: you can buy them online at www.tienda.com. This combination of almonds with crunchy toffee and bittersweet chocolate is fantastic. You'll be amazed that you made it - and so will any friends that you give it to. It makes a great holiday gift.

Time 1h25m

Yield 1 pound

Number Of Ingredients 7

2 cups sugar
1/3 cup water
3 tablespoons light corn syrup
12 ounces salted butter (3 sticks), cut into chunks
1/4 cup cocoa powder, preferably Droste or Valrhona
1 cup whole blanched almonds, preferably Marcona, toasted and roughly chopped
Equipment: Silicone baking mat; candy thermometer

Steps:

  • Line a sided sheet pan with a silicone baking mat, or oil it well with vegetable oil (or use a heavyweight nonstick sheet pan).
  • Pour the sugar into the center of a saucepan fitted with a candy thermometer. Pour the water around the edge of the pan and wait to allow the water to moisten the sugar. (You can draw a clean finger through the center of the pan to allow some water to seep in.) Add the corn syrup and bring to a boil. Add the butter and boil until the mixture reaches 300 degrees F.
  • Turn off the heat and whisk in the cocoa; then stir in the nuts. Quickly pour the mixture onto the center of the prepared pan and let it spread out - it may not reach the sides of the pan. Set aside to cool at room temperature until hard. Using your hands (I wear gloves to avoid fingerprints), pry the toffee out of the pan and break into large pieces. Store in an airtight container. The toffee will keep well for up to 2 weeks in an airtight container.

TOFFEE CANDY

Toffee Candy image

We've tried quite a few toffee candy recipes in our day, and this one-which is developed by the super talented and much-loved Test Kitchen Professional Pam Lolley-is the best we've ever encountered. It's a simple recipe with thoughtful touches, like the addition of instant espresso granules and a half a teaspoon of cinnamon for kick and a nice complexity of flavor. It calls for molasses, light brown sugar, and both almonds and bittersweet chocolate chips, which is a combination that's just begging to be put on the baking calendar this weekend. With this recipe, you're only 10 ingredients away from the best toffee of your life, and most of the ingredients you probably already have on hand. (For example, one of those ingredients is water, so you're already on your way.) The Test Kitchen promises "buttery, crunchy toffee topped with smooth, rich dark chocolate and almonds-candy heaven!" They also recommend ensuring you have a candy thermometer on hand because "the 290° you take it to makes this the perfect consistency." The active time on this recipe is only 25 minutes, with a total of 1 hour and 5 minutes-that's not too long to wait for great toffee, right? So, what are you waiting for? We hope you enjoy! (Next up, try our tips for perfect pralines.)

Provided by Southern Living Editors

Time 1h5m

Yield Makes about 1 1/2 dozen pieces (serving size: 1 piece)

Number Of Ingredients 11

1 1/4 cups (10 oz.) salted butter, plus more for pan
1 cup granulated sugar
1/3 cup packed light brown sugar
1/3 cup water
1 tablespoon dark unsulphured molasses
2 teaspoons instant espresso granules
1/2 teaspoon ground cinnamon
1/4 teaspoon table salt
2 cups thinly sliced almonds, toasted, divided
1 (10-oz.) package bittersweet chocolate chips
Flaky sea salt (optional)

Steps:

  • Butter a 15- x 10-inch rimmed baking sheet. Melt 1 1/4 cups butter in a large heavy saucepan over medium; stir in granulated sugar, brown sugar, water, molasses, instant espresso, cinnamon, and salt. Cook, stirring constantly, until a candy thermometer just registers 290°F, about 20 to 25 minutes. Remove pan from heat, and stir in 1 1/2 cups of the chopped toasted almonds. Quickly pour mixture into prepared pan, and spread into an even layer, covering bottom of pan. Immediately sprinkle chocolate chips over top; let stand 5 minutes to melt. Spread chocolate in an even layer over toffee, using an offset spatula. Sprinkle evenly with remaining 1/2 cup chopped almonds. Let stand 5 minutes, and if desired, sprinkle with sea salt. Cover and chill until firm, about 30 minutes.
  • Break toffee into about 18 pieces. Store in an airtight container in refrigerator up to 7 days. Serve cold or at room temperature.

CHOCOLATE TOFFEE CANDY COOKIES (SALTINE CANDY)

Chocolate Toffee Candy Cookies (Saltine Candy) image

This simple candy shows up at all of my family gatherings .This recipe is quick and easy. The saltines may sound like a strange addition to something sweet, but I have never known anyone who made this recipe just once!

Provided by Girly_Girl_Lori

Categories     Bar Cookie

Time 1h22m

Yield 40 serving(s)

Number Of Ingredients 5

40 saltine crackers (about one sleeve, Do not use unsalted)
1 cup butter (2 sticks)
1 cup brown sugar
1 teaspoon vanilla extract
11 ounces semi-sweet chocolate chips

Steps:

  • Preheat oven to 400 degrees.
  • Cover cookie sheet with a single layer of saltines.
  • Boil butter, sugar, and vanilla for one minute. Pour evenly over saltines. If needed, gently spread to make even. Bake for 7 minutes.
  • While toffee is still hot and bubbly, pour chocolate chips evenly on top of candy. When the chocolate chips begin to melt, gently spread chocolate over toffee. Freeze for one hour. Break into pieces and enjoy!
  • ***I have sprinkled nuts and/or drizzled white chocolate over the top of this candy to make it even better, but the basic recipe is outstanding as well. You can also change the type of chocolate that you use in the chips. White chocolate chips and milk chocolate both work, but make the candy incredibly sweet.***.

CHOCOLATE TOFFEE MATZO CANDY

Chocolate Toffee Matzo Candy image

This sweet-and-salty holiday treat made with matzo is so delicious, you'll probably want to make it all year.

Provided by Food Network Kitchen

Time 2h30m

Yield 12 servings

Number Of Ingredients 8

Nonstick cooking spray, for the foil
5 salted matzo crackers
2 sticks (1 cup) unsalted butter
1 cup packed brown sugar
1/2 teaspoon kosher salt
1 teaspoon pure vanilla extract
2 cups semisweet chocolate chips (from a 12-ounce bag)
1 teaspoon flaky sea salt, optional

Steps:

  • Preheat the oven to 400 degrees F.
  • Line a rimmed baking sheet with aluminum foil and spray lightly with nonstick spray. Arrange the matzo crackers in a single layer on the foil, breaking them as necessary to fit. (Depending on their size, you may not need to use all of the crackers.)
  • Melt the butter in a medium saucepan over medium-high heat. Stir in the sugar and kosher salt and bring to a full boil; the mixture should be bubbling all over, not just on the edges. Continue to boil for 2 to 3 minutes, stirring occasionally so the sugar and butter caramelize evenly. Remove from the heat and stir in the vanilla.
  • Pour the mixture over the top of the matzo. Using a rubber spatula, quickly spread the toffee mixture to coat the matzo. (It does not have to be perfect; the oven will even it out). Bake until the toffee is bubbling, 5 to 6 minutes.
  • Sprinkle the chocolate chips over the hot toffee in an even layer. Let sit until the chocolate is melted, about 5 minutes. Use an offset spatula to gently spread out the chocolate, then sprinkle with the sea salt, if using. Let sit at room temperature for 1 hour, then refrigerate for another hour to set completely.
  • Break into pieces and serve, or store in an airtight container at cool room temperature for up to 2 weeks.

  • In a small sauce pan melt the butter over medium heat. While the butter is melting chop the pecans into a small chop and set aside. Add the sweetener to the melted butter and bring to a boil. As soon as you hit a boil turn it down to a slow simmer. Stir the chopped pecans into the melting butter and sweetener mixture.
  • Let the pecans and butter mixture simmer for up to 5-7 minutes. Once the butter starts to thicken and is turning to an amber color remove from the flame. Stir in the vanilla extract and pinch of salt.
  • Line a 9x12 rimmed baking sheet or casserole dish with parchment paper. Pour the pecan and butter mixture onto your parchment lined dish and spread evenly. Place your pecan and butter mixture into fridge to cool completely for an hour or more.

Spread the almonds onto the sheet and bake for 15 minutes, stirring them around twice during that time. Toasting the almonds brings so much flavor to the toffee. Remove from the oven, allow to cool, and set 1 cup aside. Chop up the other cup of almonds nice and fine. Or pulse in a food processor a few times to break them up. These will go on top of the dark chocolate.
  • Melt the cubed butter over medium heat in a 3-quart heavy duty saucepan. Stir occasionally (about every 2 minutes) with a wooden spoon as it melts.
