Steps:
- Combine 1/2 pound coffee grounds with 6 cups cold water in a large pitcher or glass jar. Let stand 5 minutes.
- Add remaining coffee grounds and 3 cups cold water, making sure all the grounds are wet. Cover, and let steep, at room temperature for 12 hours or in the refrigerator for 24 hours.
- Pass mixture through a fine sieve set over a medium bowl; discard coffee grounds. Line sieve with a standard coffee filter and pass mixture through again; discarding any remaining sediment. Pour coffee concentrate into an airtight container and refrigerate for up to 2 weeks.
- To serve, dilute concentrate with an equal proportion of water or milk.

COLD-BREWED ICED COFFEE
Cold-brewed coffee is actually dirt simple to make at home using a Mason jar and a sieve. You just add water to coffee, stir, cover it and leave it out on the counter overnight. A quick two-step filtering the next day (strain the grounds through a sieve, and use a coffee filter to pick up silt), a dilution of the brew one-to-one with water, and you're done. Except for the time it sits on the kitchen counter, the whole process takes about five minutes.

Let's make cold brew coffee! It's easy to make, and it's so nice to have coffee ready to go. This recipe is written for a 1-quart wide-mouth mason jar; you can scale it up or down using 1 ounce* (28 grams) coffee per 1 cup water. The quantities provided will produce about 2 1/2 cups concentrate, which is enough for 5 cups of cold brew.

- In a 1-quart wide-mouth mason jar, combine the coffee and water. Stir to combine. I like to let my mixture rest for about 5 minutes and stir it again; the coffee grounds seem to gain more water exposure this way.
- Put a lid on your container and refrigerate it for 12 to 18 hours.
- When you're ready to strain your cold brew, place a thin paper coffee filter or a small, thin cotton napkin, cloth or handkerchief over a small fine-mesh sieve. Pour the concentrate through the prepared sieve into a liquid measuring cup or pitcher. Let it rest for a few minutes to let the last of the cold brew trickle down.
- To serve, fill a glass with ice and fill it halfway with water. Then fill the rest of the glass with cold brew concentrate, and stir to combine. Cold brew concentrate will keep well in the refrigerator for up to 2 weeks, although I find that it has the best flavor within the first week.

- Coarsely grind the coffee Grind the coffee beans on the coarsest setting on your grinder , or in short 1-second pulses in a spice grinder. The grounds should look like coarse cornmeal, not fine powder. You should have just under 1 cup of grounds.
- Combine the coffee and the water Transfer the coffee grounds to the container you're using to make the cold brew. Pour the water over top. Stir gently with a long-handled spoon to make sure the grounds are thoroughly saturated with water.
- Steep overnight Cover the jar with a lid or a small plate to protect it from dust and bugs. Let the coffee steep for about 12 hours. The coffee can be left on the counter or refrigerated; steeping time is the same.
- Strain the coffee Line a small strainer with cheesecloth or flour sack cloth and place over a large measuring cup or bowl. Pour the coffee through the strainer.
- Store the coffee Transfer the coffee to a small bottle or jar and store in the fridge for up to a week.
- Serve the coffee Dilute the coffee with as much water or milk as you prefer. Serve over ice or warm for a few minutes in the microwave.

- Put 400ml cold water into a large jug or jar and add the coffee grounds, but do not stir the mixture. Cover and leave to steep for 24hrs.
- Gently stir the mixture then pour it through a funnel or sieve lined with coffee filter paper (or a sheet of kitchen paper) into another large jug. This concentrate will keep in the fridge for 2-3 days.
- To serve dilute 1 part cold brew with 2 parts still or sparkling water (or to your taste) and serve with lots of ice.
