Easy Creamy Chicken Casserole image

This easy creamy chicken casserole is my mother's recipe and a family favorite. It's one of our comfort foods and regular easy recipes to make through a busy week. Can easily be prepared in advance, then popped in the oven for a nice hot meal. If making for the first time, add half of the sour cream and taste first. Add more if desired, tasting as you go, to reach desired flavor. Serve over cooked white rice.

1 sleeve buttery round crackers (such as Ritz®), crushed
2 tablespoons butter, melted
4 cups water
1 (32 fluid ounce) container chicken stock
salt and ground black pepper to taste
3 skinless, boneless chicken breast halves, cubed
1 (24 ounce) container sour cream, or to taste
1 (26 ounce) can condensed cream of chicken soup

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Mix the crackers and melted butter together in a bowl; set aside.
  • Bring water and chicken stock to a boil in a pot over high heat. Season with salt and black pepper. Add the chicken. Reduce heat to a simmer, and cook, stirring occasionally, until chicken is no longer pink in the center, 5 to 7 minutes. Drain the chicken; set aside. Whisk together the sour cream and cream of chicken soup in a large bowl. Stir in the chicken, then transfer the mixture to a 9x13-inch baking dish. Sprinkle the cracker mixture on top.
  • Bake in the preheated oven until bubbly, 25 to 30 minutes.

1 (16 ounce) package rotini pasta, uncooked
2 tablespoons butter
3 tablespoons extra-virgin olive oil
2 cups broccoli florets, finely chopped
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup milk
salt and pepper to taste
⅛ teaspoon chipotle chile powder
2 cups Cheddar cheese, shredded
¼ cup onion, finely diced
1 pound ground chicken
1 cup sour cream

Steps:

  • Bring a large pot of lightly salted water to a boil. Add rotini pasta and cook until al dente, 7 to 10 minutes. Drain, cover, and set aside until needed.
  • Melt butter in a saucepan over medium-high heat, and stir in 1 tablespoon olive oil. Add 1 cup broccoli; toss and cook just until tender, about 5 minutes. Sprinkle broccoli with flour, and cook 1 minute. Stir in the chicken broth, and bring to a boil. Pour in the milk, and stir to blend. Season with salt, pepper, and chipotle pepper powder, if desired. Reduce heat to medium, and simmer mixture until sauce thickens, 8 to 10 minutes. Mix in 1 cup Cheddar cheese and stir until melted. Remove from heat.
  • Heat the remaining 2 tablespoons olive oil in another large skillet over medium-high heat. Stir in the onion, ground chicken, and remaining 1 cup of broccoli. Cook and stir until chicken is evenly browned and no longer pink, about 10 minutes. Season to taste with salt and pepper. Reduce heat, and cook until liquid is reduced, about 5 minutes.
  • Preheat oven broiler to High. Lightly grease 9x13 inch baking dish.
  • Toss the pasta with the broccoli sauce until evenly blended. Stir in the sour cream, if desired. Stir the broccoli sauce mixture into the chicken mixture. Spoon into the prepared baking dish. Top with remaining 1 cup Cheddar cheese.
  • Cook under preheated broiler until cheese melts and browns around the edges, 3 to 5 minutes.

4 cups cubed cooked chicken
1 package (16 ounces) frozen peas and carrots
2 cups whole milk
2 cans (10-3/4 ounces each) condensed cream of celery soup, undiluted
2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
1 cup chopped onion
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions. Meanwhile, in a large bowl, combine the remaining ingredients. Drain noodles; add to chicken mixture., Transfer to 2 greased 8-in. square baking dishes. Cover and bake 30 minutes. Uncover and bake 10-15 minutes longer or until heated through. 200 g | 7oz smoked bacon lardons or chopped streaky bacon
1 tbsp olive oil
1/2 tbsp butter
6 skin-on chicken legs
1 tsp Kosher salt
1/2 tsp ground black pepper
6 shallots (quartered)
2 large garlic cloves (sliced)
800 g | 1.7 pounds baby potatoes (halved)
2 tbsp Dijon mustard
1 tsp English mustard
1 tbsp runny honey
280 ml | 1 1/8 cups medium-dry apple cider
250 ml | 1 cup single (pouring) cream
1/2 tsp dried tarragon
3 fresh thyme sprigs
1 lemon zest only

Steps:

  • Preheat the oven to 200C (400F) and setting the shelf to the lower third of the oven.
  • Pat the chicken dry using paper towels (do not rinse) and season with salt and pepper.
  • Dry fry the bacon in a large lidded non-stick pan until it starts to crisp and render some of its fat. Set aside on a kitchen towel lined bowl.
  • Add a the olive oil and butter to the pan and pan fry the chicken legs, in batches if necessary, for 4 minutes per side or until nicely browned. Set aside.
  • Add the shallots and cook, stirring, for a couple of minutes. Add the potatoes and garlic and cook for a further four minutes.
  • Add the cider and stir in the mustard, honey and cream. Sprinkle with the dried tarragon and stir in the bacon.
  • Return the chicken to the pot, nestling it in the creamy sauce. Add the thyme sprigs, cover the pan and transfer to the oven. Cook for 15 minutes.
  • Uncover the pot and cook for another 5 minutes or until the potatoes are tender.
  • Check the seasoning, add the lemon zest and serve with some crusty bread to mop up the delicious sauce and a green salad on the side.

2 1/2 lbs chicken breasts (about 3 breasts)
2 large eggs
1 1/3 cup whole milk
½ tsp table salt
flour mixture-
3/4 cup all-purpose flour
2 Tbsp ground paprika
¼ tsp ground pepper
¾ tsp table salt
26 oz cream of chicken soup can, family size
1/4 cup sour cream
1 cup water
1 tsp table salt
¼ tsp ground paprika
¼ tsp ground black pepper
8 oz bacon, 1/2 pack, cooked
6 oz mushrooms, sliced and sauteed
6 oz shredded cheese, four cheese or mozzarella
oil for frying

Steps:

  • Cut chicken breast into medium pieces (About 6-7 pieces per chicken).
  • Prepare the marinade. Combine the milk, eggs and salt. Place the chicken pieces into the mixture and let marinade 4 hours (or overnight).The longer it marinades, the softer the chicken will become.
  • Combine the ingredients for the flour mixture; the flour, paprika, pepper and salt.
  • Take the chicken from the marinade and coat generously in the flour mixture. (Discard of the marinade.)
  • Add enough oil to the skillet to completely cover the bottom of the skillet, turn on med/high heat. Once the oil is hot, fry 6-8 minutes, until chicken is crispy, turning as needed. Don't crowd the skillet. (Using two skillets works quicker.)
  • While chicken is frying prepare the cream mixture; combine cream of chicken soup, sour cream, water, salt, paprika and pepper.
  • Once chicken cooks, transfer onto a plate lined with paper towel.
  • Cover the bottom of a 9"x13" dish with some of the cream.
  • Add the chicken pieces to the casserole dish.
  • Completely cover with the remaining cream. (If preparing the night before and will be cooking it the following day, wait for the chicken to cool before covering with the cream.)
  • Add half of the cheese. Add the cooked bacon and sauteed mushrooms. Sprinkle remaining cheese.
  • Bake 350° for 30 minutes, covered with foil. Remove foil and continue baking another 15-20 minutes until cheese melts and cream bubbles everywhere.

10.5 ounces cream of mushroom soup
1 cup sour cream (8 ounces)
1 box stuffing mix (6 ounces)

1/4 cup unsalted butter (2 ounces)

Steps:

  • Preheat the oven to 350º Fahrenheit. Grease a 9x9" baking pan with cooking spray. (You can use a 9x13" baking pan if you'd like.)
  • Sprinkle the cooked chicken on the bottom of the prepared baking dish.
  • In a small bowl, stir together the cream of mushroom soup and the sour cream. Pour and spread this mixture over the chicken.
