Here's what you need: lemons, serrano pepper, garlic, fresh parsley, olive oil, canola oil, salt, large shrimps, garlic, shallot, ginger, turmeric, fresh lemongrass, fresh cilantro, serrano peppers, lemon zest, sugar, clams, mussels, king crab legs, corn, light beer, chicken stock, ground chorizo, lemon juice, fresh cilantro leaves, olive oil, salt

2 lemons, zested and juiced
½ cup serrano pepper, chopped
1 clove garlic
1 cup fresh parsley
1 ¼ cups olive oil
1 ¼ cups canola oil
salt
10 large shrimps, shells on, deveined
1 clove garlic
1 shallot
1 tablespoon ginger
½ teaspoon turmeric
1 teaspoon fresh lemongrass
½ cup fresh cilantro
2 serrano peppers
1 teaspoon lemon zest
1 tablespoon sugar
1 ½ lb clams
1 lb mussels
1 lb king crab legs
4 ears corn, halved
1 bottle light beer
3 cups chicken stock
½ lb ground chorizo
¼ cup lemon juice
1 cup fresh cilantro leaves
olive oil
salt, to taste

Steps:

  • To make the shrimp marinade, combine all ingredients in a food processor and blend until chopped and well combined.
  • Pour over the shrimp, cover and place in the refrigerator to marinate for 30 minutes.
  • To make herb paste, place all ingredients in a food processor and blend until finely chopped.
  • Clean all the shellfish. Discard any dead mussels or clams. Soak the clams in cold water for 30 minutes and then scrub clean, then remove the beard of the mussels and scrub clean. Rinse the crab legs and break apart at the joint for smaller pieces.
  • In a large pot, heat a drizzle of olive oil and then add chorizo and cook until browned.
  • Add the herb paste and cook for 2 minutes.
  • Add beer to the pan and bring to a simmer. Cook until the liquid is reduced by half. Then add chicken stock and bring back to a simmer. Add lemon juice and season to taste with salt.
  • Add the mussels, clams and crab legs to the broth, and place the corn on top. Cook until mussels and clams have opened and crab legs are steamed through, about 10 minutes.
  • While the seafood cooks, heat a large pan and fry the shrimp until pink and cooked through.
  • Serve the shellfish and corn in a warmed cast iron pot, with some of the broth, garnished with cilantro sprigs.
  • Enjoy!

3 lemons (divided use)
1/2 cup Old Bay seasoning (plus more for garnish)
8 cloves garlic (smashed)
1 onion (peeled and cut into 6 pieces)
1 pound small Yukon gold potatoes (halved)
4 ears corn on the cob (cut into 3-4 inch pieces)
3 lobster tails
1 pound clams (scrubbed)
1 pound crab legs (pre-cooked)
1 pound smoked sausage (cut into 1 inch pieces, kielbasa or andouille are preferred)
1 pound shrimp (peeled and deveined (leave tails on))
3 tablespoons butter
2 tablespoons chopped parsley

Steps:

  • Cut 2 of the lemons into quarters. Slice the remaining lemon into wedges and reserve the wedges for garnish.
  • Fill a large pot with 14-16 cups of water. Place the 2 quartered lemons in the water along with the Old Bay seasoning, garlic and onion. Bring to a boil.
  • Add the potatoes to the pot and cook for 8 minutes.
  • Add the lobster tails and cook for 5 minutes.
  • Add the clams, crab, and corn, and cook for 5 minutes.
  • Add the shrimp and sausage and cook for 2-3 minutes.
  • Drain the seafood mixture from the pot, reserving 1 cup of the broth.
  • Melt the butter in a small bowl and whisk it into the reserved broth. Pour the broth over the seafood mixture.
  • Garnish with chopped parsley and lemon wedges. Sprinkle with additional Old Bay seasoning to taste, then serve immediately.

1 tablespoon seafood seasoning (such as Old Bay®), or to taste
5 pounds new potatoes
3 (16 ounce) packages cooked kielbasa sausage, cut into 1 inch pieces
8 ears fresh corn, husks and silks removed
5 pounds whole crab, broken into pieces
4 pounds fresh shrimp, peeled and deveined

Steps:

  • Heat a large pot of water over an outdoor cooker, or medium-high heat indoors. Add Old Bay Seasoning to taste, and bring to a boil. Add potatoes, and sausage, and cook for about 10 minutes. Add the corn and crab; cook for another 5 minutes, then add the shrimp when everything else is almost done, and cook for another 3 or 4 minutes.
  • Drain off the water and pour the contents out onto a picnic table covered with newspaper. Grab a paper plate and a beer and enjoy!

Nothing could be easier or more festive than a big steaming pot of seafood to feed a crowd. If you like, serve it with melted butter and lemon for dipping the seafood and drizzling over the corn and potatoes. Prepared spice mixes for boil usually contain a combination of spices, aromatics and salt and can vary quite a bit, so use package-suggested proportions or taste the water before you add the vegetables and seafood; you want the water to be salty and flavorful but not overpowering.

2 tablespoons seafood boil seasoning
1 teaspoon fine sea salt
2 pounds medium red potatoes (about 8), halved
1 large yellow onion, quartered
6 ears corn-on-the-cob, peeled and halved
18 littleneck clams, scrubbed
2 pounds mussels, scrubbed
2 pounds jumbo (21-25 count) shell-on shrimp
Chopped fresh parsley for garnish

Steps:

  • In a very large pot (at least 10 quarts), combine 8 cups water, spice mix, salt, potatoes and onion.
  • Cover and bring to a boil over high heat; boil until potatoes just begin to become tender when pierced with a knife, about 5 minutes.
  • Remove lid and layer in corn, clams, mussels and shrimp.
  • Reduce heat to medium-high. Cover pot and cook until clams and mussels open and shrimp are just cooked through, about 10 minutes.
  • With a slotted spoon, transfer seafood to a platter and corn, onions and potatoes to another bowl or platter. (Discard any clams or mussels that do not open.)
  • Pour a few cups of the liquid from the pot over seafood and sprinkle both platters with parsley.

Steps:

  • Add the onion, garlic, Old Bay Seasoning, and a bay leaf to a large pot. Add 4 cups of water or stock and bring to a boil over high heat.
  • Once the water has come to full, roaring boil, remove it from the heat. Carefully add the shrimp and cover the pot with a lid. Set an 8-minute timer and allow the shrimp to steep in the pot. The shrimp is done once it is pink and opaque.
  • Pour the contents of the pot over a colander, pick out the shrimp and set aside. Sprinkle the remaining Old Bay Seasoning evenly over the shrimp and serve alongside lemon wedges and cocktail sauce.
