CHEESY SHREDDED POTATO CASSEROLE
Frozen shredded potatoes make this cheesy shredded potato casserole side dish so easy to prepare! Loaded with cheese, green onions, and sour cream. Topped with a crunchy & cheesy topping that gets crispy while cooking.

Steps:
- Heat oven to 350°. Spray a 9x13 baking dish with cooking spray.
- In a large mixing bowl combine the shredded potatoes and 1 cup of cheese. Stir until combined.
- In a small bowl combine the green onion, sour cream, salt, pepper, garlic powder, onion powder, and melted butter. Mix together. Pour over the bowl of shredded potatoes and mix together until well combined.
- In a small bowl, combine the remaining 1 cup shredded cheese and the crushed cornflakes.
- Spread the potato mixture into the baking dish. Top with the corn flake mixture.
- Bake for 30 minutes. Serve immediately.

- Grease a 9x13 inch pan. Add the frozen and shredded potatoes to the bottom of the pan. Sprinkle with salt and pepper.
- In a large bowl, whisk the eggs together. Then add half and half, season salt, cheddar cheese, pepper jack, and chopped ham.
- Pour over the top of the frozen potatoes. Cover with foil and refrigerate for 2 hours or overnight.
- Bake uncovered at 350 degrees for 90 minutes. Let rest for 10 minutes before serving.

SUPER SIMPLE LATKES (POTATO PANCAKES)
We love potato pancakes in our house, but until I came up with the idea to use pre-shredded frozen potatoes, they were a once a year thing at Hanukkah. Peeling, shredding and draining the potatoes were a real pain. Now that the hard work is done, we can eat them all year long!!! At Passover I will make them with Matzoh Meal instead of flour.

- Defrost grated potatoes in a medium-size colander. Press with paper towels to remove excess moisture. There won't be much.
- Add onion, eggs, salt, pepper and flour. Mixture should be thick and cohesive.
- Pour about 1/4 inch of oil into a heavy-bottomed frying pan. I use an electric frying pan at 375 so it doesn't get too hot and burn the latkes.
- Use about 2 Tablespoons potato mixture and place in the oil and press into a patty.
- Fry for about 3 minutes. Flip and fry for another 3 or so minutes. If pancake cooks too fast, reduce oil's temperature. If it takes longer, turn the oil up so they don't get soggy. Repeat with remaining potato mixture.
- Drain on paper towels and serve immediately, or keep in a 250 oven on a baking sheet.

- Preheat oven to 350 degrees
- In a large mixing bowl stir together the thawed hash browns, onions, peppers, sour cream, soup, 6 Tablespoons (3/4 Cup) melted butter and 1 Cup of the shredded cheese.
- When well mixed spoon into a 9 x 13 greased casserole dish. Smooth the top.
- Topping:
- In a small bowl add 2 cups crushed corn flakes and 2 Tablespoons melted butter.
- Mix together and spread mixture evenly over the casserole.
- Sprinkle remaining 1 cup grated cheddar cheese over the top of cornflakes.
- Bake 35 minutes covered.
- Remove cover and bake 10 minutes more or until bubbly and golden brown.
