OLD-FASHIONED PECAN PIE

Old-Fashioned Pecan Pie image

It's impossible to go wrong with pecan pie. Especially one that is really loaded with nuts, has a little verve from orange zest, and isn't overly sweet-exactly like the one here. Taking the time to track down new-crop pecans will push things right over the top.

PECAN PIE RECIPE

Pecan Pie Recipe image

It's a proven tradition that Thanksgiving dinner just isn't complete without a pecan pie; and at a Southern holiday meal, there's really nothing better than showcasing the classics. This pecan pie recipe is a true classic: simple, reliable, and darn good. We can appreciate pecan pies infused with bourbon, filled with chocolate, or drizzled with caramel, and we find pecan pie bars and bites incredibly tasty forms of the dessert too; but if you're a committed traditionalist (which we can definitely relate), a classic pecan pie recipe like this is the way to go. This recipe uses refrigerated pie crust for a process made easier and quicker without sacrificing a lick of that ooey, gooey flavor we love, and it only takes about 10 minutes to get this indulgent holiday pie ready to pop right in the oven, which makes it that much more appealing. You can decide how finely you want your pecans chopped to change up the presentation and amount of crunch in every bite. We usually go with very roughly chopped nuts for a great texture that complements the gooey filling perfectly, but finely chopped pecans make for a cohesive texture you might enjoy too! No matter how you slice it (or, in this case, chop it), nothing satisfies a Southerner's sweet tooth around the holidays quite like pecan pie. You can serve this pie with a dollop of homemade sweetened whipped cream for a finishing touch that works superbly with the nuttiness of the pie.

PECAN PIE

Pecan Pie image

Homemade Pecan Pie is easy to make with simple ingredients. This old-fashioned pecan pie recipe is straight from my grandma's kitchen.

Provided by Jessica Robinson

Categories     Desserts

Time 1h5m

Number Of Ingredients 9

3 large eggs ((room temperature))
1 cup light brown sugar
1/2 teaspoon salt
1 tablespoon flour
1 cup light corn syrup
3 tablespoons unsalted butter ((melted))
1 teaspoon pure vanilla extract
2 cups pecans, halves
pie crust (single (homemade or store-bought))

Steps:

  • Make the pie crust and refrigerate it.
  • Roll out the pie crust to about 12-inches in diameter.
  • Place the rolled out pie crust into a 9 1/2-inch glass pie plate. Roll under the edges of the pie creating the crust. Pinch between your fingers to create a crimped edge.
  • Refrigerate the pie shell while you prepare the pecan pie mixture.
  • Mix the eggs, brown sugar, light corn syrup, flour, melted butter, and vanilla with a whisk or an electric hand mixer until combined well.
  • Stir the pecans into this mixture.
  • Pour the pecan pie mixture into the unbaked pie shell. Use a rubber spatula to scrape the bowl out.
  • Carefully brush the edges of the pie crust with egg wash. (Egg wash is 1 large egg, 1 teaspoon water, and a pinch of salt beaten together with a fork)
  • Bake in a preheated 425 degree F oven for 10 minutes. Turn the oven down to 350 degrees F and continue to bake for 40 more minutes or until set.
  • Let the pie cool completely on the counter or on a baking rack. Should you not let it cool completely before slicing, the filling will not set properly.

PECAN PIE

Pecan pie image

Make this traditional all-American Thanksgiving dessert for a celebratory dinner party. Our classic pecan pie recipe is best served with whipped cream or a scoop of ice cream

Provided by Good Food team

Categories     Dessert

Time 1h35m

Number Of Ingredients 10

flour, for dusting
500g pack sweet shortcrust pastry
75g butter, softened
100g golden caster sugar
175g golden syrup
175g maple syrup
3 eggs, beaten
½ tsp vanilla extract
300g pecan halves
double cream, whipped, to serve

Steps:

  • On a lightly floured surface, roll out the pastry. Use the pastry to line a 23cm tart tin, keeping any off-cuts in case you need to fill any cracks after blind-baking. Prick the base of the pastry case with a fork and chill for 30 mins, or until firm.
  • Heat oven to 190C/170C fan/gas 5. Line the pastry case with baking parchment, fill with baking beans and bake for 15-20 mins until the sides are set. Remove the beans and parchment and return the tin to the oven for 5-10 mins until the pastry is golden and the base is set. Leave to cool.
  • Increase oven to 200C/190C fan/gas 6. Use an electric whisk to beat the butter and sugar together until light and fluffy. Keep the beaters going and pour in both of the syrups. Gradually add the eggs, ¼ tsp salt and the vanilla, then whisk until combined. Stir through the pecans, then pour the mixture into the tart case. Bake for 10 mins. Turn heat down to 160C/140C fan/gas 3 and continue baking for 30-35 mins (the pie should be golden brown and the filling should wobble a little in the centre when shaken). Leave to cool in the tin. You'll probably need to run a knife around the tin to lift out the pie. Serve with whipped cream or ice cream.

  • After the pie dough chills, adjust oven rack to the lower third position and preheat to 350°F (177°C).
  • Roll out the chilled pie crust onto a lightly floured surface. Remember, when rolling out the pie dough, always use gentle force with your rolling pin. Start from the center and work your way out in all directions, rotating the dough with your hands as you go. Roll it out into a circle 12 inches in diameter. Carefully place the dough in a 9×2 inch pie dish. Tuck it in with your fingers, making sure it’s smooth. For a beautiful edge, as shown in the video above, fold the overhanging dough back over the edge and use your hands to mold the edge into a nice thick rim around the pie. Crimp the edges with a fork or use your fingers to flute the edges. Again, you can see me do this in the video above. Brush the edges with egg wash. (To help guarantee a beautiful edge, I always chill the shaped dough in the pie dish for 10 minutes in the refrigerator or freezer before filling.)

  • To make the pie dough: In a medium bowl, whisk together the flour, and salt., Cut in the shortening until it's in lumps the size of small peas., Dice the butter into 1/2-inch pieces, and cut into the mixture until you have flakes of butter the size of your fingernail., Add the water, two tablespoons at a time, mixing with a fork as you sprinkle the water into the dough, When the dough is moist enough to hold together when you squeeze it, transfer it to a piece of wax or parchment paper. It's ok if there are some dry spots in the pile. Use a spray bottle of water to lightly spritz these places; that way you'll add just enough water to bring the dough together without creating a wet spot., Fold the dough over on itself three or four times to bring it together, then pat it into a disk 3/4-inch thick., Roll the disk on its edge, like a wheel, to smooth out the edges. This step will ensure your dough will roll out evenly, without a lot of cracks and splits at the edges later. Wrap in plasti
  • Line the crust with foil or parchment paper, and fill it with pie weights or dried beans. Make sure some of the pie weights (or beans) are nestled up against the sides to keep the crust from slumping down in the pan. , Prebake the crust for 10 minutes. Remove it from the oven, and gently remove foil or parchment with the weights or beans. Set the crust aside to cool while you prepare the filling. Reduce the oven temperature to 325°F.
  • Place the chopped pecans on a baking sheet. Sprinkle them very lightly with salt. When the oven temperature has fallen to 325°F, place the nuts in the oven to toast for 10 to 15 minutes, just until you can smell them. Remove them from the oven and set them aside to cool. Increase the oven temperature to 375°F., Prepare the filling: In a medium-sized mixing bowl, beat together the eggs, corn syrups, sugar, butter and vanilla. Stir in the chopped pecans, and pour the mixture into the baked pie shell. Arrange the whole pecans on top., Bake the pie for 45 minutes, or until it's puffed and the center seems fairly set. Remove the pie from the oven, and allow it to cool on a rack. As it cools, the center will sink; that's OK., Cool completely before slicing; store in the refrigerator. Warm individual slices if you like before serving.
