- In a large Dutch oven coated with cooking spray, cook and stir onion and apple over medium heat until onion is tender, about 5 minutes. Stir in remaining ingredients; cook, covered, until cabbage is tender, about 1 hour, stirring occasionally. Serve warm or cold.

RED CABBAGE
Celebrating one of the most affordable veg out there - the humble red cabbage - this is a really delicious, classic veg dish. Wonderful as it is hot, I also love it cold, almost like a salad, with meat and cheese, so embrace those leftovers.

- Click away any tatty outer leaves from your cabbage, trim off the base, cut the cabbage into wedges, then finely slice it and put aside.
- Finely slice the bacon and place in a large casserole pan on a medium heat with 1 tablespoon of oil. Leave it to crisp up while you peel, core and dice the apples.
- When the bacon is crispy, strip the rosemary leaves into the pan, stir for 1 minute, then use a slotted spoon to remove the bacon and rosemary to a plate, leaving the smoky bacon fat behind.
- Add the fennel seeds and diced apples to the pan, then tear in the prunes, removing any stones. Stir and fry for 2 minutes, then finely grate in the clementine zest and squeeze in the juice.
- Add the vinegar, cabbage and a pinch of sea salt and black pepper.
- Cook with a lid ajar on a low heat for 20 to 25 minutes, or until cooked through and a pleasure to eat, stirring well every 5 minutes to help intensify and mix up the flavours.
- Serve sprinkled with the crispy bacon and rosemary leaves.

- Heat a skillet over medium high heat. Add oil and onion and saute 2 minutes. Add cabbage and turn in pan, sauteing it until it wilts, 3 to 5 minutes. - Preheat oven to 400 degrees.
- Wash a small head of red cabbage, and using a sharp knife, cut into wedges.
- Line a baking sheet with parchment, and place cut cabbage in a single layer.
- Drizzle liberally with olive oil and sprinkle on za'atar seasoning. I didn't use salt as most za'atar blends have salt, but feel free to add salt if needed.
- Roast for 20 minutes, and then lightly shake pan. Continue roasting another 25 minutes or until cabbage is crispy. Timing will depend on how small or large you cut the wedges.

- Remove the outside leaves of the red cabbage, wash the whole cabbage, and cut it in half. Remove the hard stem and cut the cabbage into fine strips.
- Heat up the bacon grease or oil in a large pot. Add the chopped onions and apples and fry them until the onions become translucent.
- Add the red cabbage strips and briefly fry them as well. Now add the sugar, vinegar, cloves, bay leaf, water, and red wine (optional). When using red wine reduce the amount of water accordingly. Stir everything and let the cabbage simmer on low heat for 40-50 minutes. Stir occasionally.
