CINNAMON APPLES

Steps:
- Combine the candies, brown sugar and 2 1/2 cups water in a large saucepan and place over medium-high heat. Cook, stirring, until the candies and sugar have fully melted, about 10 minutes.
- Add the apples and bring to a boil. Cook until the apples are tender but not mushy, about 5 minutes. Remove the apples with a slotted spoon and transfer to a heatproof dish. Allow the syrup to boil for an additional 5 minutes to thicken and intensify. Pour the syrup over the apples and allow to cool. Transfer to the fridge and chill for at least 4 hours.
- When ready to serve, warm a griddle over medium heat. Butter the griddle and toast the slices of pound cake for about 2 minutes per side, adding more butter as needed.
- To plate, place a piece of pound cake on each plate. Top with a scoop of ice cream and 4 apple slices. Drizzle with additional syrup and garnish with the mint.
RED APPLE COBBLER

- Preheat the oven to 350 degrees F.
- Saute the apples in a medium pan over low heat with the brown sugar, cinnamon, ginger, and butter until the apples become tender. Place in small ramekin and cover it with a piece of dough to fit over the top of the ramekin. Cut off excess dough. Place the ramekin in a small water bath (a skillet with about a 1/4-inch of water), and bake for 35 minutes or until crust in golden brown.
BAKED APPLES
Steps:
- Preheat the oven to 375 degrees F.
- Wash and core apples, leaving enough of the core at the base of the apple to contain the filling.
- Combine the butter, brown sugar, cinnamon and chopped pecans in a small bowl. Roll log shapes of the mixture and press enough into each apple to fill the core.
- Fill a 2-quart baking dish with about 3/4 cup water, or enough to cover the bottom. Place the apples upright in the dish. Bake until the apples are soft and the filling is browned, 1 hour.
RED CANDY APPLE SLICES

- Bring a medium pot of water to a boil. Spray a cookie sheet with cooking spray. Set aside.
- In a medium saucepan, bring the sugar, 1/2 cup water and corn syrup to a boil. Cook to 250 degrees F, or until the syrup spins a thread when poured from the edge of a cooking spoon. Pour in the candy pieces and continue cooking to 285 degrees F. Remove from the heat and add the food coloring to achieve the desired shade of red.
- Put the chopped nuts, coconut and candies in shallow bowls. Set aside. Wash the apples thoroughly. Remove the stems from the apples and insert a popsicle stick into the center of the bottom of each apple.
- Dip the apples quickly in the candy mixture, twisting as you dip to cover the entire apple. Roll the apples in the assorted toppings, coating the bottom half of each apple. Place on the greased cookie sheet and allow the coating to cool and harden. Remove the popsicle sticks and use an apple slicer or a sharp serrated knife to cut the apples into slices. Place a toothpick in each slice.

- Melt butter in a large cast-iron or other ovenproof skillet. Add apples and 1/2 cup sugar; stir to mix well. BAKED APPLES

- Heat oven to 375°F.
- Core apples to within 1/2 inch of bottom. Peel 1-inch strip of skin from around middle of each apple, or peel upper half of each apple to prevent splitting. Place apples in ungreased glass baking dish.
- Place 1 teaspoon to 1 tablespoon sugar, 1 teaspoon butter and 1/8 teaspoon cinnamon in center of each apple. Sprinkle with additional cinnamon. Pour water into baking dish until 1/4 inch deep.
- Bake 30 to 40 minutes or until apples are tender when pierced with a fork. (Time will vary depending on size and variety of apple.) Spoon syrup in dish over apples several times during baking if desired.

OLD-FASHIONED RED CANDIED APPLES
These are the kind you found at the circus or carnival! Not the newer version covered with cramel. ;) Candy thermometer is needed for this, as well as popsicle sticks. The number of apples needed depends on the size of the apples, probably 4 medium ones. The recipe states that each batch candies approximately 1 dozen medium apples. I'm not sure I trust that. - Place apples, sugar, lemon juice, cinnamon, and 1/2 cup water in a large saucepan, and cook over medium heat until very tender, stirring often so that apples do not scorch, about 45 minutes. If necessary, add additional water to apple mixture, up to 1 cup, while apples cook.
- Remove the mixture from heat. Using a potato masher, mash into sauce, leaving some of the chunks. Let cool. If making ahead of time, chill, covered, until ready to use. Allow to warm to room temperature before serving.

- Wash and dry apples; remove stems.
- Insert skewer in stem end of each apple.
- Mix sugar, syrup and water in a saucepan; bring to a boil, stirring until sugar has dissolved.
- Then cook (285F on candy thermometer), without stirring, until a small amount of mixture separates in threads that are hard but not brittle when dropped in very cold water.
- Remove from heat and add flavouring and colouring, stirring only enough to mix.
- Hold each apple by skewer end and quickly swirl in syrup, tilting pan to cover apple completely.
- Remove from syrup, allow excess to drop off, then swirl to spread syrup smoothly over apple.
- Put on lightly buttered baking sheet to cool.

My German grandmother passed this recipe down to my mother, who gave it to me. I remember eating it as a small child. This vegetable dish can be made quickly and goes great with roast pork or barbecued ribs, potatoes and biscuits.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 inch square pan.
- Remove and reserve tops of apples. Core the apples, leaving approximately 1/2 inch at the bottom. Arrange in the baking dish.

- Bring the first three indgredients to a rapid boil in a large saucepan or dutch oven. Boil for 5 minutes, stirring constantly to prevent boiling over, sticking, and to help melt the candies.
- Reduce to a medium heat and place the apples (peeled side down) into the hot syrup. Cook until done or about 15 minutes. They will fork tender -- don't overcook or you will have red applesauce! Cool and serve. We think they are best chilled overnight.
