Refried, or recooked, beans are quick and easy to make. Choose the chorizo depending on how spicy you want it to be.

1 spicy chorizo sausage,semi-cured
2 tbsp olive oil
1 onion, diced
4 cloves garlic, peeled and finely chopped
2 x 400g tins of organic red kidney beans, drained and rinsed
Sea salt
*Fresh cheese, mozzarella or fetta, crumbled to serve
Coriander sprigs, to serve
*If in Melbourne, fresh cheese can be sourced at Spanish food store Casa Iberica. It is a mild cheese. You could substitute mozzarella - or feta, which gives an interesting, if not authentic, flavour.

Steps:

  • Squeeze small chunks of chorizo out of the casing and set aside. Heat oil in a frypan and gently fry the chorizo for five minutes. Add onion and garlic and fry for a few minutes to soften. Add the beans and mash roughly with a potato masher or the back of a wooden spoon. Stir to combine all the ingredients. Taste and season with salt, if required. Spoon into a large serving bowl and top with crumbled cheese and coriander. Serve immediately.

4 links smoked Mexican chorizo
1/4 cup extra-virgin olive oil
1/4 white onion, finely diced
2 cloves garlic, peeled and chopped
2 (15.5 ounce) cans red kidney beans
1 to 2 cups low-sodium chicken stock
Kosher salt and freshly ground black pepper

Steps:

  • Finely chop the chorizo into small dice. In a heavy-bottomed pot add olive oil and chorizo. Put the pot over low heat and slowly bring the heat up to medium. Fry the chorizo for a few minutes to infuse the olive oil. Using a slotted spoon remove about 1/4 cup of chorizo, for garnish, and set aside. To the remaining chorizo in the pot add the onion and garlic and fry until both are cooked, about 2 minutes. Add the beans with their liquid and stock and simmer to allow the flavors to come together about 10 minutes. Season with salt and pepper, to taste. Use a potato masher to mash the beans into a coarse puree. Alternatively, you could let the beans cool for about 5 minutes and carefully puree in a food processor until smooth. Transfer to a serving bowl.

I love tostadas. And I used to be able to buy some brand of canned Refried Beans with Chorizo. Haven't been able to find them in years. So...I have come up with this.

corn oil or canola oil, for frying
6 -8 corn tortillas
2 pinches sea salt
1 (14 ounce) can refried beans
1/4 lb bulk chorizo sausage (or one fresh link)
1 cup monterey jack pepper cheese (combination) or 1 cup mexican cheese (combination)
1 romaine lettuce hearts or 1/2 head shredded iceberg lettuce
2 plum tomatoes, diced or 8 grape tomatoes, quartered
diced avocado

Steps:

  • Heat 1/8 to 1/4-inch oil over medium high heat. Fry tortillas 30 seconds on each side to light golden, 1 tortilla at a time. Drain tortillas on paper towels or brown paper sack. Season with a little sea salt while hot.
  • Saute chorizo in medium skillet over medium heat, breaking up the sausage into small pieces. When cooked, add the can of refried beans to the skillet to heat through. Mix chorizo and beans.
  • Spread hot beans on tortillas and top with a handful of shredded cheese, shredded lettuce and diced tomato pieces.

1 lb beans, steeped in water for 12 hours
½ lb chorizo, sliced
1 onion, chopped
1 ripe tomato, chopped
1 carrot, chopped
2 medium potatoes, diced
2 peppers, one green and one red, both chopped
3 cloves garlic, minced
1 piece ham bone
2 bay leaves
1 qt water
1 pimentón
extra virgin olive oil
salt

Steps:

  • Fry the onion and garlic for 5 minutes in an oil-coated saucepan on low heat. Once caramelized, add the chorizo and the ham bone and fry for a few more minutes.
  • Add the paprika and the beans, stir a little and cover with water. Add the vegetables and season with salt and pepper.
  • Bring to boil, lower the temperature to medium-low, and cook for about two hours with the lid on. During this time add half a glass of cold water twice.
  • Half an hour before the end of the cooking time, add the potatoes. Finally, remove the ham bone and bay leaf, mash the vegetables and return to the pot.
  • Serve warm.

4-6 cups cooked pinto beans or 2 cans (16 oz. each) refried beans
1 pkg (10-12 oz.) package chorizo (a Mexican sausage, located in deli section)
3/4 cup Kraft Cheddar or Monterey Cheese

Steps:

  • 1. Add pinto beans in food processor and puree until smooth or desired consistency. (If using canned refried beans, no pureeing is needed.)
  • 2. In a non-stick skillet, sauté and mix chorizo until smooth. Add beans and mix thoroughly. Simmer on low-medium heat for 10-15 minutes; continue to mix occasionally to avoid beans sticking on bottom of pan.
  • 3. Top with Kraft Cheddar or Monterey Cheese, and cover until cheese has melted. Remove from heat. Serve with chips or you can spread on flour tortillas to make burritos.
