1/2 cup salsa
1/2 cup sour cream
2 cups (1/2 lb.) shredded Swiss cheese
4 flour tortillas (10-in. size)
3 cups packaged coleslaw mix
1/2 pound thinly sliced corned beef

Steps:

  • In a small bowl, mix salsa and sour cream.
  • Sprinkle 1/4 cup of the cheese over half of 1 tortilla. Then place 3/4 cup coleslaw mix on cheese. Drizzle about 3 tablespoons of the salsa mixture over coleslaw. Lay 1/4 of the corned beef onto coleslaw; top with 1/4 cup more cheese. Fold tortilla over to cover filling. Repeat to make 3 more quesadillas.
  • Place quesadillas slightly apart on baking sheets. Broil 4 to 6 inches below heat until crisp and lightly browned, 1 to 2 minutes (watch closely). Using a wide spatula, carefully turn each quesadilla over. Broil until crisp and lightly browned on other side, 1 to 2 minutes more.
  • Cut quesadillas into wedges. Serve with remaining salsa mixture.

2 (8 inch) tortillas
1/2 cup swiss cheese, shredded
1/4 cup cooked corned beef, chopped or shredded and warm
1/4 cup sauerkraut, squeezed and drained
1/2 tablespoon russian dressing or thousand islands dressing

Steps:

  • Melt a touch of butter in a pan over medium heat.
  • Place a tortilla into the pan, swirl it around in the butter, set it aside and repeat with the second tortilla leaving it in the pan.
  • Sprinkle half of the cheese on the tortilla followed by the corned beef, sauerkraut, russian dressing, the remaining cheese and finally the other tortilla.
  • Cook until the quesadilla is golden brown on both sides and the cheese is melted, about 2-4 minutes per side.

4 ounces thinly sliced deli corned beef
6 tablespoons drained refrigerated sauerkraut
2 ounces shredded Swiss cheese (about ½ cup)
Chopped fresh flat-leaf parsley leaves

Steps:

  • Spread tortillas evenly with Thousand Island dressing. Top 2 tortillas evenly with corned beef, sauerkraut, and cheese; top with remaining 2 tortillas, dressing side down. Heat a large nonstick skillet over medium. Add 1 assembled quesadilla to skillet; cook until browned, about 2 minutes per side. Transfer to a plate. Repeat process with remaining quesadilla. Cut quesadillas into wedges; top with parsley.

I made these for my families lunch. When I made my future hubbies he had his on wheat tortillas. My future hubbies tortillas were 10-inch so I doubled the meat and cheese. I used deli corned beef. I also use thousand island salad dressing on our quesadillas. I recommend draining the sauerkraut really well before making these or having plenty napkins on hand as they are messy. We really liked these quesadillas my family thought they were so good. I got this recipe from Tops Market courtesy of the Texas Beef Council.

4 KRAFT Big Slice Aged Swiss Cheese Slices

Steps:

  • Cook sauerkraut, onions and caraway seed in heavy medium nonstick skillet on medium heat 5 min. or until onions are tender, stirring frequently. Remove from heat.
  • Spread tortillas with dressing; top with meat, sauerkraut mixture and cheese. Fold tortillas in half.
  • Wipe skillet clean with paper towels. Heat skillet on medium-high heat. Add 1 quesadilla; cook 1 min. on each side or until cheese is melted and quesadilla is evenly browned on both sides. Remove from skillet. Repeat with remaining quesadillas.
