RHUBARB & ORANGE CAKE

Rhubarb & orange cake image

Make the most of seasonal fruit in this rustic bake with almond topping - serve it warm from the oven, as a pudding, or with afternoon tea

Provided by Sara Buenfeld

Categories     Afternoon tea, Dessert

Time 1h50m

Yield Cuts into 10 slices

Number Of Ingredients 10

400g rhubarb , thickly sliced
280g golden caster sugar
225g butter , softened
finely grated zest and juice 1 orange
225g self-raising flour
100g pack ground almond
1 tsp baking powder
3 medium eggs
small handful flaked almonds
icing sugar , for dusting

Steps:

  • Tip the rhubarb into a bowl and sprinkle over 50g of the sugar. Stir so the rhubarb is covered, then set aside for 30 mins to draw out some of the juices (macerate). Meanwhile, grease and line the base and sides of a 23cm loose-bottomed, round cake tin with baking parchment and heat oven to 180C/160C fan/gas 4.
  • Tip remaining sugar, the butter, orange zest and juice into a large bowl and beat with an electric whisk until well blended. Add the flour, almonds, baking powder and eggs, then beat again until smooth. Fold in the rhubarb and any juices. Spoon into the tin and level the top.
  • Sprinkle with the flaked almonds, then bake in the centre of the oven for 1 hr-1 hr 15 mins until risen, golden and a skewer inserted into the centre comes out clean. Cover with foil if the cake starts to brown too much during cooking. Leave in the tin for 15 mins before removing and cooling completely on a wire rack. Dust with a little icing sugar before serving.

ORANGE-RHUBARB-CARDAMOM JAM

Orange-Rhubarb-Cardamom Jam image

Rhubarb is a farm-stand favorite for me. I bring it home by the armload for jams and syrups. Tip: Seek out the ruby red stalks. This jam will taste fine if made with green stalks but won't be as pretty.

Provided by Marisa McClellan

Categories     Jams and Jellies

Time 1h5m

Yield 24

Number Of Ingredients 6

2 pounds rhubarb, cut into 1-inch pieces
3 large navel oranges, peeled and sectioned
2 tablespoons grated orange zest
4 ½ cups white sugar
3 tablespoons fruit pectin (such as Sure-Jell®)
¾ teaspoon ground cardamom

Steps:

  • Submerge 6 empty half-pint jars on a rack in a large pot of water. Cover and bring to a rolling boil, then reduce heat to low to keep jars warm until ready to fill.
  • Tumble rhubarb, orange segments, and orange zest into a wide, nonreactive 8-quart pot. Whisk together sugar, pectin, and cardamom in a small bowl, then stir into pot until combined.
  • Bring to a vigorous boil over high heat. Reduce heat to medium-high; cook, stirring frequently and adjusting heat as needed to maintain a gentle boil, until volume has reduced by at least one-third, 20 to 25 minutes. Remove pot from heat and check for set.
  • Working with one jar at a time, remove empty jars from canning pot. Using a wide-mouth funnel, carefully ladle jam into jars, leaving 1/2 inch for headspace. Use a clean wooden chopstick to work air bubbles out of jars. Check headspace again and add more jam if necessary to bring to 1/2 inch from the top.
  • Wipe jar rims, apply lids and bands (not too tightly), and return jars to canning pot; cover pot and return water to a rolling boil. Process for 10 minutes. Turn off heat, remove pot lid, and let jars stand in the cooling water 5 minutes to help ensure a good vacuum seal.
  • Move jars to a folded kitchen towel or wooden cutting board to cool completely before checking seals. Any unsealed jars should be refrigerated and eaten promptly. Store sealed jars in a cool, dark place. They are shelf-stable at least 1 year.

RHUBARB SOUP WITH BERRIES

Rhubarb Soup with Berries image

A great Summer dessert soup from the CBS Saturday Early Show! The prep time does not include time to chill the soup.

Provided by Kree6528

Categories     Dessert

Time 28m

Yield 6 serving(s)

Number Of Ingredients 10

8 stalks rhubarb
4 cups water
2 1/2 cups sugar
1 orange, grated for zest
2 cinnamon sticks
1 pint vanilla ice cream
6 strawberries, cut very thin crosswise
1/2 cup blueberries, sliced
2 tablespoons mint leaves, torn
1 tablespoon lemon juice (optional)

Steps:

  • Wash 7 rhubarb stalks, peel away any tough exterior, trim the ends and cut the stalks into chunks.
  • Combine the rhubarb pieces, water, sugar, orange zest and cinnamon in a saucepot, and bring to a simmer over medium heat.
  • Cook until the rhubarb is falling apart, 8 to 12 minutes.
  • Note: There is a very small window where the rhubarb goes from tender to mush; keep testing the fruit by piercing it with a sharp knife, and as soon as it penetrates, remove it from the heat.
  • Remove the pot from the heat and transfer the contents to a shatter-proof container.
  • Refrigerate the soup until cold.
  • When chilled, discard the cinnamon.
  • If you have a juicer, put the remaining rhubarb stalk in and process to release its juice.
  • Otherwise, you can substitute 1 Tbsp of lemon juice for the rhubarb juice.
  • Strain and add the juice to the chilled soup.
  • Serve the soup in four chilled dessert bowls, with a scoop of ice cream, a few berries and some mint.
  • This recipe can also be made dairy-free by using soy ice cream!
