HOW TO MAKE RICE MILK
A quick and easy 2-ingredient way to make homemade rice milk! Naturally creamy and sweet, and perfect for smoothies, granola, and more!

Steps:
- Soak rice in 2 cups (amount as original recipe is written // adjust if altering batch size) very hot (not boiling water) for 2 hours. The rice should be soft but still very raw - you should be able to snap a piece in half with your fingernail without much effort. Drain and add to a high-speed blender.
- Add water, salt, and any additional add-ins (optional). Top with lid and cover with a towel to ensure it doesn't splash. Blend for about 1 minute until the date specks are very small and the mixture seems well combined. It doesn't have to be 100% pulverized.
- Scoop out a small sample with a spoon to test sweetness. If it's not sweet enough, add more dates.
- Pour the mixture over a large mixing bowl or pitcher covered with a thin towel, clean T-shirt, or very tightly woven nut milk bag. In my experience, it benefits from a double strain. Some nut milk bags let too much residue through.
- Transfer to a sealed container and refrigerate. Will keep in the refrigerator up to 5 days (sometimes more). Great for use in things like smoothies, granola, vegan cheese sauces, and baked goods!

DIY RICE MILK RECIPE
While similar to the commercial options, this DIY recipe is not an exact replica of what's on grocery store shelves. If you're looking for a cost-saving option that you are free to flavor to suit your own preferences, however, this is a great way to go.

- In a dry skillet over medium heat, toast rice grains, stirring frequently until fragrant and just starting to color, about 4 minutes. Transfer to a bowl or jar and add 2 cups water. Set aside to soak for 10 hours.
- When soaking is complete, pour rice and water into blender, add salt, sweetener (if desired) and vanilla (if desired), and blend at highest setting until rice grains are no longer visible, about 2 minutes.
- Using a nut milk bag or similarly fine strainer, drip milk into a clean glass storage jar. Chill rice milk thoroughly before serving. Shake well before each use.

Steps:
- In a basin or a large bowl, mix rice powder into a paste with a little milk taken from the 4 cups.
- Heat remaining milk to almost boiling point and pour onto the rice paste, stirring well.
- Return the mix to the saucepan and add orange blossom flower water and bring to boil over gentle heat while ***stirring continuously***.
- Once the mixture starts bubbling, reduce the heat and continue stirring continuously for another 5-10 minutes more. The continuous stirring makes sure it doesn't lump.
- Add sugar and keep stirring until it dissolves completely.
- If the mixture becomes too thick dilute with a little milk or water.
- Pour the creamy mixture into small bowls (or a one large shallow dish approximately 1-1 and ½" deep.
- Decorate the pudding top with pistachios and almonds if desired.
- Helpful Hints.
- Add sugar after the rice powder mixture has been stirred, boiled and thickened for at least 10 minutes.
- At the end, you may wish to place the saucepan in cold water and beat the mixture for a few minutes before pouring into small dishes.
