When I was in Vicenza, Italy at an open market downtown, I smelled this scrumptious smell of roast chicken at this stand. So I bought one of their chickens and looked what they stuffed in the cavity to make it taste so good! I also do my turkeys like this too!

1 small onion, quartered
¼ cup chopped fresh rosemary

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Season chicken with salt and pepper to taste. Stuff with the onion and rosemary. Place chicken in a 9x13 inch baking dish or roasting dish.
  • Roast in the preheated oven for 2 to 2 1/2 hours, or until chicken is cooked through and juices run clear. Cooking time will vary a bit depending on the size of the bird.

3 cups cherry tomatoes
3 cloves garlic, minced
4 sprigs fresh rosemary
1/4 cup KRAFT Tuscan House Italian Dressing

Steps:

  • Heat oven to 400ºF.
  • Place chicken in large bowl. Add remaining ingredients; mix lightly.
  • Place in 13x9-inch baking dish sprayed with cooking spray.
  • Roast 35 to 40 min. or until chicken is done (165ºF).
  • Serve chicken with the roasted tomatoes.

4 boneless (skinless chicken breasts)
1 tablespoon olive oil
1 tablespoon unsalted butter
2 sprig rosemary
salt and pepper
1 lb mixed combination of cherry tomatoes
2 clove garlic
1 medium onion
1/2 cup broth

Steps:

  • Brine: To make your boneless skinless chicken breasts even juicier and more flavorful use a quick brine. Just with a 15 minutes simple brine the chicken breast will be juicier.
  • Heat the cast iron skillet over medium-high heat. When it is hot, add the olive oil.
  • Reduce heat to medium and place chicken breast in pan and cook for 1 minute without moving.
  • Wait until it is golden brown and then flip the chicken breasts. Cook for an additional minute.
  • Then remove chicken and set aside. Drain off oil. Add butter and add onion along with garlic sauté for 1 minute. Add chicken, broth and rosemary. Turn the heat to low.
  • Add tomatoes, cover the skillet and cook on low for 10 minutes. Cover with a tight-fitting lid. Do not lift the lid; do not even think of peeking.
  • After 10 minutes additional, turn off the heat. Let chicken rest for 10 more minutes. Again, do not lift the lid; do not peek I mean it.
  • Take breast out and serve with rice, quinoa or grab a crust bread and dig in!

For this simple bake of chicken, potatoes and tomatoes, Julia Moskin borrowed a technique from the Italian island of Ischia, where rosemary, fennel and other herbs grow wild in the hills. Because the island was formed by volcanic activity (Pompeii is just under 20 miles away), it has natural hot springs, and the sand on some of its beaches is as hot as 350 degrees. When cooking fuel was scarce and expensive, the islanders learned to use the sand as a heat source for cooking. Wrapping the ingredients tightly and subjecting them to steady heat produces a succulent, aromatic dish. If you prefer to brown the ingredients, take the final step of uncovering the pan.

1 (3- to 4-pound) chicken, cut up, or 3 to 4 pounds bone-in, skin-on chicken thighs
4 tablespoons extra-virgin olive oil
1 tablespoon rosemary leaves (from about 2 sprigs)

2 small dried red chiles, crumbled, or 1/2 teaspoon red-pepper flakes
2 to 3 pounds large Yukon Gold potatoes, quartered
12 ounces cherry or grape tomatoes
1 large yellow onion, quartered and thickly sliced
1/4 cup dry white wine
4 to 6 basil sprigs, plus 2 tablespoons finely shredded leaves, for garnish

Steps:

  • Pull any lumps of fat off the chicken and discard. In a bowl, combine chicken, 2 tablespoons olive oil, 1/2 tablespoon rosemary, 2 teaspoons salt, 1/2 teaspoon pepper and the chiles. Mix and set aside, at least 30 minutes at room temperature or up to 8 hours in the refrigerator.
  • Heat oven to 450 degrees. In a 9-by-13-inch baking dish or a large ovenproof skillet with a lid, combine the remaining 2 tablespoons olive oil and 1/2 tablespoon rosemary, potatoes, tomatoes, onion and a generous sprinkling of salt and pepper. Toss and spread out evenly in the pan. Arrange chicken pieces on top, skin-side up. Add the wine, pouring along the edges of the pan, and place basil sprigs on top. Cover tightly, and bake for 30 minutes.
  • Remove chicken from the oven and turn the oven temperature to 475 degrees. (Use the convection feature if you have it.) Or heat the broiler and arrange oven rack about 8 inches from the heat. Return uncovered pan to oven and cook until chicken skin is browned, cooking liquid is reduced and vegetables are very soft, 10 to 15 minutes more.
  • Discard basil sprigs. Garnish with shredded basil and serve immediately.

6 whole chicken legs (3 to 3 1/2 pounds total), patted dry
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
1 tablespoon minced garlic (from 2 to 3 cloves)

1 teaspoon minced anchovies (from 2 to 3 fillets)
3 rosemary sprigs (each 4 inches)

1 can (28 ounces) whole peeled tomatoes in juice, crushed by hand or pulsed a few times in a blender until chunky
1 cup low-sodium chicken broth or water

Steps:

  • Preheat oven to 375°F. Season chicken with salt and pepper. Heat a large ovenproof straight-sided skillet or braiser over medium-high. Swirl in oil. Working in two batches if necessary, add chicken, skin-sides down, and cook, undisturbed, until golden brown and crisp, 6 to 8 minutes. Flip and brown other sides, 4 to 5 minutes more. Transfer to a plate; drain all but 2 tablespoons fat from skillet.
  • Reduce heat to medium. Add garlic, capers, anchovies, rosemary, and red-pepper flakes to skillet. Cook, stirring occasionally, until fragrant, about 1 minute. Add tomatoes and broth; bring to a simmer, scraping any browned bits from bottom of skillet. Continue to simmer until thickened slightly, about 10 minutes. Season to taste.   • Transfer skillet to oven and braise, uncovered, until chicken is cooked through and liquid is reduced to a thick gravy, 40 to 45 minutes. Remove and discard rosemary. Serve over mashed potatoes or polenta.

1 tbsp olive oil
8 boneless, skinless chicken thighs
1 rosemary sprig, leaves finely chopped
1 red onion, finely sliced
3 garlic cloves, sliced
2 anchovy fillets, chopped
400g can chopped tomatoes
1 tbsp capers, drained
75ml red wine (optional)

Steps:

  • Heat half the oil in a non-stick pan, then brown the chicken all over. Add half the chopped rosemary, stir to coat, then set aside on a plate.
  • In the same pan, heat the rest of the oil, then gently cook the onion for about 5 mins until soft. Add the garlic, anchovies and remaining rosemary, then fry for a few mins more until fragrant. Pour in the tomatoes and capers with the wine, if using, or 75ml water if not. Bring to the boil, then return the chicken pieces to the pan. 1 (3 1/2 lb) roasting chickens
1 tablespoon butter, melted
1/8 teaspoon salt
fresh ground black pepper
2 lbs tomatoes
1 tablespoon olive oil
1 large onion, peeled and finely chopped
1 garlic clove, peeled and minced
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon dried thyme, crushed

  • Roast in a preheated 400-degree oven for 1¼ to 1½ hours or until the internal temperature reaches 180 degrees in the thigh on an instant-read thermometer.
  • Baste the chicken occasionally with the drippings.
  • While the chicken is cooking, prepare the sauce.
  • Bring a pan of water to a boil.
  • Add tomatoes and remove from the heat; set aside 30 to 60 seconds or until skins begin to crack; drain.
  • Peel, seed and coarsely chop tomatoes.
  • In a large skillet, heat olive oil over medium heat.
  • Add onion and garlic; sauté 5 minutes.
  • Stir in tomatoes, rosemary, thyme, marjoram, basil, fennel seeds, wine, green and black olives.
  • Bring to a boil, reduce the heat and simmer 30 minutes.
  • Stir occasionally.
  • Season sauce with lots of pepper.
  • (Additional salt may not be necessary because of the saltiness of the olives.) Stir in parsley.
  • Carve chicken and serve with a bowl of sauce on the side.
