Elephant garlic is actually a type of onion, with mild flavors of garlic, leek, and onion. When roasted, the caramelization produces a sweet nuttiness that complements cream cheese nicely. Spread this on crackers, put it on a bagel with some smoked salmon, or use it as a dip for veggies-the possibilities are endless!

4 cloves elephant garlic
3 sprigs fresh thyme
salt and freshly cracked black pepper to taste
1 tablespoon olive oil
8 ounces reduced-fat cream cheese, softened

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Trim root end from garlic cloves and remove skin. Place cloves on a large square of aluminum foil. Place thyme sprigs among the garlic, sprinkle with salt and pepper, and drizzle with olive oil. Fold up the sides of the foil to create a packet and place on a baking sheet.
  • Bake in the preheated oven until garlic is soft and golden brown, 45 minutes to 1 hour. Discard thyme and let garlic cool.
  • Place cream cheese into a medium bowl. Add garlic on top and mash cloves with a fork. Season with additional salt and cracked black pepper to taste, and stir mixture until evenly combined. Alternately, you may use a small food processor for a smoother consistency.

1 whole head of garlic
1 tablespoon olive oil (amount approximate)
1 (8 ounce) package cream cheese, softened
1/4 cup unsalted butter, softened
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup snipped fresh chives (optional; amount to taste)

Steps:

  • Note- If using salted butter, lower amount of salt used or omit.
  • Preheat oven to 325°F.
  • Cut off top third of garlic head without peeling away papery skin.
  • Drizzle top of garlic with olive oil until it is saturated.
  • Place garlic cut side down in a ovenproof ramekin dish or baking pan.
  • Roast for 60-75 minutes, or until soft and tender.
  • When slightly cooled, squeeze out roasted garlic cloves and place in a mini-food processor (or may place in a bowl to whisk by hand).
  • Add softened cream cheese, butter, salt, and pepper to mini-processor and pulse until creamy and smooth.
  • Place in a serving/storage dish and blend in snipped chives (if using).
  • Serve softened spread with assorted crackers.

3 heads of garlic, top 3/4 inch of each cut off and discarded
1/4 cup olive oil
3/4 cup grated Parmesan cheese
1/4 cup cream cheese, room temperature
2 tablespoons mayonnaise
1 teaspoon minced fresh thyme
1 French-bread baguette, cut on diagonal into 1/2-inch-thick slices

Steps:

  • Preheat oven to 350°F. Place garlic, cut side up, in small glass baking dish; pour oil over each head and sprinkle with salt. Cover; bake until garlic is tender, about 1 hour. Uncover; let cool 15 minutes. Squeeze garlic from each clove into medium bowl and mash. Mix in Parmesan, cream cheese, mayonnaise, and thyme. Season to taste with salt and pepper. (Can be made one day ahead; cover and refrigerate. Allow to soften slightly at room temperature before continuing.)
  • Preheat oven temperature to 425°F. Spread garlic mixture on bread slices; arrange on 2 baking sheets. Bake until toasts are beginning to brown at edges, about 12 minutes.

1/2 teaspoon salt

  • Heat oven to 450°F. Cut one-fourth off top of garlic bulb; drizzle with oil. Wrap bulb in foil. Bake 30 minutes or until tender. Cool 10 minutes.
  • Squeeze softened garlic into food processor; add cheeses, 2 teaspoons rosemary, the lemon juice, salt and pepper. Cover; process with on-and-off pulses 30 seconds. Scrape sides. Process 20 seconds longer or until smooth.
