2 large peaches
6 ounces blackberries
1 cup coconut milk
2 t. vanilla extract
1 cup ice

Steps:

  • Cut peaches in half, remove the pits. Cut into 1" slices. Place a piece of parchment paper in the bottom of a casserole dish and line peaches and blackberries. Place in oven preheated to 375°. Allow to roast for 30 or 40 minutes, until peaches are tender.
  • Remove from oven. Place fruit onto a large plate to cool. You can also put them into the refrigerator at this point.
  • Add fruit to blender. Add coconut milk, vanilla and ice. Blend 10-30 seconds.

  • Puree the peaches, banana, yogurt, ginger, honey, and cardamom, if using, in a blender until smooth. Taste and add more honey if desired. Blend again until smooth. Refrigerate until cold.

I was looking around for a name for this unusual clafoutis-like combination of peaches, blackberries, thyme, and black pepper. I saw an article that said in France a clafoutis that uses fruit other than cherries is called a flognarde. I enjoy saying flognarde so much that I think even if this recipe hadn't come out as well as it did I would still make it regularly, just to say 'flognarde'.

⅔ cup white sugar
½ cup whole wheat flour
3 eggs
½ teaspoon vanilla extract
½ teaspoon fresh thyme leaves

1 pinch salt
1 pint fresh blackberries
1 fresh peach, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a casserole dish.
  • Whisk milk, sugar, and flour together in a large bowl. Add eggs, vanilla extract, thyme leaves, black pepper, and salt; whisk until batter is smooth.
  • Spread blackberries and peach slices out in the prepared casserole dish. Pour batter over the top.
  • Bake in the preheated oven until fruit is hot and batter is set, about 45 minutes. Cool completely.

3 cups fresh blackberries
3 fresh peaches - peeled, pitted, and sliced
3 tablespoons cornstarch
¾ cup white sugar
1 double crust ready-to-use pie crust
2 tablespoons butter, melted
1 tablespoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Mix the blackberries, peaches, cornstarch, and sugar in a large bowl.
  • Press one of the pie crusts into the bottom of a 9-inch pie pan. Pour the blackberry mixture into the pie crust. Cover with the remaining pie crust. Crimp the edges of the two crusts together to seal. Cut slits in the top of the pie to vent. Brush the top with the melted butter. Sprinkle the cinnamon and nutmeg over the top.
  • Bake in preheated oven for 15 minutes. Reduce the oven temperature to 350 degrees F (175 degrees C) and continue to cook until top crust is golden brown, 35 to 40 minutes.
