Butternut Squash Soup with Chipotle Cream image

3 tablespoons olive oil, divided
1 medium butternut squash, halved lengthwise, seeds discarded, washed, and reserved
Salt and freshly ground black pepper
1 medium onion, chopped
2 stalks celery, chopped
2 carrots, chopped
2 garlic cloves, minced
6 cups chicken broth, divided
2 teaspoons minced canned chipotle chiles in adobo
1 teaspoon minced canned chipotle chiles in adobo
1/2 cup sour cream
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Using 1 tablespoon of the olive oil, grease the sliced surface of the squash and season with salt and pepper, to taste. Arrange on a baking sheet and roast until very tender, about 45 minutes. Remove from the oven and let cool.
  • In a large heavy pot over medium-high heat, add the remaining olive oil, onion, celery, and carrot, then season with a pinch of salt. Saute until just tender, about 10 minutes. Add the garlic and saute for 2 minutes. Scoop the butternut squash flesh into the pot and stir. Add 4 cups of the chicken broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer until the vegetables are very tender, about 30 minutes.
  • Turn off the heat and using an immersion blender, carefully puree the soup until very smooth. If necessary, add more of the remaining stock to create desired consistency. Mix in 2 teaspoons of the chipotle into the soup, and season with salt and pepper, to taste.
  • In a small bowl, mix together 1 teaspoon of chipotle and the sour cream. Season the chipotle cream with salt and pepper, to taste. Transfer the soup to bowls. Top each with a dollop of chipotle cream and serve.

1 butternut squash, halved and seeded
1 acorn squash, halved and seeded
1 baking pumpkin, halved and seeded
6 cloves garlic
1 large red onion, quartered
1/4 cup olive oil
2 tablespoons chopped fresh sage
2 tablespoons chopped fresh rosemary
1 tablespoon chopped fresh thyme
Kosher salt and freshly ground black pepper
5 cups vegetable stock
3/4 cup heavy cream
Couple grates of fresh nutmeg
1/2 cup pumpkin seed granola, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Divide the squash/pumpkin (cut-side up), garlic and onions between 2 sheet pans. (Keep the onions and garlic together.) Drizzle over the olive oil and rub to fully coat everything in the oil. Season with the sage, rosemary, thyme and some salt and pepper. Flip the squash so they are cut-side down and roast until fork-tender, 40 to 45 minutes. Allow the squash to cool slightly, about 5 minutes.
  • While the squash cool, heat the stock and heavy cream in a large pot over medium heat. Add the roasted onions and garlic and bring to a simmer.
  • Scrape out the flesh of the squash and add to the pot. Using an immersion blender, puree the soup to your desired consistency. Grate over the nutmeg to taste and adjust other seasonings, as needed.
  • To serve, ladle the soup into bowls and sprinkle over the granola.

Steps:

Cover and simmer for 10-12 minutes or until vegetables are tender; cool slightly. , Transfer mixture to a blender; add the tomatoes, cream cheese, basil, chipotle pepper and remaining broth. Cover and process for 1-2 minutes or until smooth. , Return to the saucepan; stir in the beans, corn and spinach. Cook and stir until spinach is wilted and soup is heated through. 2 cups raw winter squash (butternut, hubbard, acorn)
Salt and pepper
2 tablespoons extra-virgin olive oil
½ cup diced onion (1/4-inch)

¼ cup diced carrot (1/4-inch)
1 cinnamon stick
Sea salt and freshly ground pepper
1 (32 ounce) carton Progresso® chicken broth
½ teaspoon ground toasted coriander
Roasted Winter Squash (above)
½ cup half-and-half, if desired*
2 tablespoons toasted pumpkin seeds
½ cup Progresso® plain Panko crispy bread crumbs, toasted light brown in saute pan over medium heat

Steps:

  • To make roasted winter squash: Heat oven to 375 degrees F. Heat butter over medium-high heat in an ovenproof saute pan; add diced squash, salt and pepper. When squash begins to brown, place pan in oven. Roast for 15 minutes or until medium-brown on all sides. Remove from oven and let cool slightly. Puree in food processor, or mash with potato masher or ricer. Measure 1 1/2 cups squash; reserve.
  • To make soup: Heat the olive oil in a large saucepan over medium heat until hot. Add the onion, celery, carrot and cinnamon stick; saute until soft but not brown, about 10 minutes. Season with salt and pepper. Add the broth and the coriander; bring to a boil. Simmer for several minutes. Stir in reserved squash until smooth; simmer gently to let the flavors meld, about 10 minutes. Discard the cinnamon stick.
  • Puree the soup using an immersion blender or in a blender until smooth. (The soup can be made ahead to this point, cooled, covered, and refrigerated for several days or frozen for about 1 month. It will thicken as it cools and may need thinning with broth or water when reheating.)
  • Return the soup to the pan and reheat gently. Add the half-and-half. Adjust the seasoning with salt and pepper. Top each serving with pumpkin seeds and toasted bread crumbs.

1 large (about 3 pounds) butternut squash
3 teaspoons vegetable oil
Kosher salt and freshly ground pepper
1 teaspoon ground cumin
4 1/2 cups chicken stock
1 clove garlic, minced
1/2 teaspoon cider vinegar
1/2 teaspoon sugar
Pinch cayenne pepper
1/2 cup heavy cream

Steps:

  • Preheat the oven to 400 degrees and line 1 large and 1 small baking sheet with aluminum foil. With a large knife, split the squash in half, then scoop out and reserve the seeds. Brush the cut side of the squash with 2 teaspoons of oil and sprinkle with salt and pepper. Place cut side down on the large baking sheet and roast until very tender, about 35 minutes.
  • Remove any orange fibers from seeds and rinse them under running water. Drain and place on paper towels to dry. Toss seeds with the remaining teaspoon of oil and 1/2 teaspoon of the cumin, and season with salt. Place on the small baking sheet, cover loosely with foil and roast along with the squash, stirring occasionally, until well browned, about 10 minutes. Remove from the oven and set aside.
  • Scoop the flesh from the squash shells and place it in a kettle. Add the chicken stock, garlic, vinegar, sugar, cayenne and remaining cumin. Bring to a boil, lower and simmer, uncovered, for 10 minutes.
  • Working in small batches, transfer the soup to the container of a blender and blend until smooth. Return the soup to the pan. Stir in the cream and bring back just to a simmer. Season with salt and pepper to taste and serve garnished with the cumin seeds.

1 kobacha squash
2 tablespoon EVOO, divided
1 onion, chopped
1 apple, peeled, diced
pinch saffron threads or whatever your budget will allow

1/4 teaspoon chipotle powder
4 cups veg or chicken broth
1 cup evaporated skim milk
Salt and pepper to taste
3 tablespoons butter

Steps:

  • 1. Heat oven to 400. Split squash in half lengthwise with a strong cleaver and firm wrist. Don't bother peeling, you can do that later. Scoop out seeds and place on rimmed baking sheet, brush with EVOO. Bake for one hour, until tender 2. Meanwhile, heat soup pot on med. heat, add what's left of the oil, the onion and apple. Saute until the onion and apple are soft. Add the saffron, cumin, chipotle and cook until your kitchen smells like a spice market on a hot day. 3. Scoop squash out of the toasted skins. Add to pot with stock. Simmer for about 15-20 minutes. 4. Puree soup with hand blender or blender until velvety. Add milk, heat through. Adjust the S&P factor. Just before serving, add butter for added richness.

1 cup chopped onion

1 small tart apple, peeled and chopped
1-1/2 teaspoons lemon or lime juice
Pepper to taste
TOPPING:

2 tablespoons dark brown sugar
3 tablespoons molasses
kosher salt, to taste
fresh ground white pepper, to taste
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
zest from 1 orange
1 orange, juice of
2 tablespoons Worcestershire sauce
2 garlic cloves, grated
2 cups skim milk
1 cup heavy cream
1/2 to 1 lemon, juice of, to taste
1 -2 cup fresh popped and salted popcorn

Steps:

  • Preheat oven to 375?F.
  • Place the squash on a flat surface and split them in half lengthwise. Scrape out the seeds and arrange in a single layer on one or two baking sheets.
  • In a small saucepan, melt 1 stick of the butter completely over medium heat. Wait until it starts to turn a light brown color. Remove from heat and immediately distribute the butter into the cavities of the squash halves. Sprinkle with the brown sugar and Molasses as well.
  • Season the insides with salt and pepper. Finish by covering with the ground (dry) ginger, fresh ginger, and the ground cloves. Fill the bottom of the tray(s) with the water (should be about 1 inch high) to create steam while the squash bakes in the oven. Cover the tray(s) with aluminum foil and seal the edges tightly.
  • Place the tray(s) in the center of the oven and bake, undisturbed, for 2 hours. To check for doneness, pierce one of the halves with the tip of a small knife. The knife should slide in and out easily. If at all firm, bake the halves an additional 30-45 minutes. Remove from the oven. Carefully peel back the foil. Set aside to cool.
  • Make the Soup: Using a large spoon, scoop the flesh from the squash, taking care not to take any skin with it. The skin can give a bitter flavor; however, take care to retain all of the cooking liquid inside the squash. That will add a lot of flavor to the soup. Gather all of the squash in a large pot. Turn the heat on low. Add half of the orange zest, the orange juice, the Worcestershire Sauce and the garlic. Stir to blend. Taste for seasoning. If the squash lacks sweetness, add a little Molasses. If it lacks salt, add a little salt or Worcestershire Sauce.
  • In a medium saucepan, heat the remaining 4 tablespoons of butter over medium heat until it turns light brown. Pour over the squash, stirring to blend. In the same pot, heat the milk, heavy cream, and two cups of the water. Season the liquid with salt and pepper and bring to a simmer.
  • Stir the milk mixture into the squash and stir to blend. Once the mixture has returned to a simmer, taste for seasoning.
  • Puree the soup in small batches in a blender. Combine all the batches and taste for seasoning. If the soup needs more flavor, add salt, extra orange zest or pepper, as needed. If the soup is too thick, add the additional cup of water and blend. Serve the soup family style or ladle the soup into individual bowls with popcorn on the side.

1/2 cup dry red wine
1 teaspoon chipotle peppers in adobo sauce or crushed dried chipotles
2 tablespoons tomato paste
1 cup créme fraîche or sour cream
2 1/2 pounds kabocha, acorn or butternut squash
2 quarts chicken stock
10 ounces whole chestnuts, roasted and peeled
2 tablespoons pure maple syrup
Kosher salt and freshly ground black pepper to taste

Steps:

  • Combine the port, wine, chipotles and tomato paste, bring to a boil and then simmer until the mixture is a thick paste, about 15 minutes. Let cool, then whisk in the crème fraîche and refrigerate until serving.
  • Preheat the oven to 350 degrees. Cut the squash in half lengthwise and remove the seeds. Place cut side down on a foil-lined baking sheet and bake until soft, about 1 hour. When the squash is cool, scoop out the flesh and place 6 cups in a large saucepan. Add 2 quarts stock and the chestnuts and simmer until the chestnuts are soft, about 30 minutes. Stir in the syrup and purée with a hand blender or in batches in a blender. Return to the saucepan and season to taste.
  • Reheat the soup and ladle it into bowls. Drizzle with chipotle cream.

8 sprigs fresh thyme
1 whole head garlic, unpeeled
1 tablespoon olive oil
2 to 3 cups warm Homemade Chicken Stock, or low-sodium canned

Steps:

  • Preheat oven to 425 degrees. Line a baking sheet with a Silpat baking mat; set aside.
  • Season squash with salt and pepper, and tuck 4 sprigs of thyme into each cavity. Place squash, cut side down, and garlic on the baking sheet. Drizzle garlic with olive oil, and season with salt. Roast until fork-tender, about 40 minutes. Remove from oven, and let stand until cool enough to handle.
  • Discard thyme, and scoop the flesh of the squash into a food processor fitted with the steel blade. Peel 4 cloves of garlic, and add to the food processor. Reserve the remaining garlic for another use. Add about 1 cup stock, and process until smooth. With machine running, add remaining stock until the soup reaches desired consistency. Transfer to a medium saucepan and heat through. Taste and adjust for seasoning. Serve immediately.
