35 whole potatoes of similar size
10 onions, whole
35 fresh lobsters, elastic removed from claws
35 ears corn, husks on

6 cups all-purpose flour
6 cups cornmeal
1 cup sugar
7 tablespoons baking powder
6 eggs
6 cups milk
1 1/2 cups vegetable oil
12 eggs, separated
6 cups sugar
3 cups shortening
2 tablespoons vanilla extract
1 teaspoon salt
9 cups flour, plus additional for flouring blueberries and cake pan
2 tablespoons baking powder
2 cups milk
6 cups blueberries
Butter, for greasing pan

Steps:

  • Rinse the clams well, then soak in fresh water for 30 minutes.
  • Layer all ingredients in a seaweed wrap in this order: clams, potatoes, and onions next to each other on the bottom, then lobsters on top of them, then corn as the highest layer. Wrap very tightly with a double layer of foil making sure there are no holes in foil (essentially making a pressure cooker). Cover the foil pack with additional seaweed. Light a wood fire. Cook over fire for 30 minutes.
  • Carefully open the foil wrap and take out the corn and lobsters so you can reach the potatoes and clams. Separate onto individual serving dishes. Serve with your favorite Garden Salad, Cornbread, and Blueberry Cake.
  • Cornbread
  • Preheat oven to 450 degrees F.
  • Grease 2 (12 by 18 by 1-inch) baking pans and warm in the oven while preparing the ingredients.
  • In a large mixing bowl, mix the dry ingredients together. In a separate bowl, mix the eggs and milk together. Then mix the egg/milk mixture into the dry ingredients. Add the vegetable oil and mix. Pour mixture into the hot baking pans and bake for 20 minutes.
  • Preheat oven to 350 degrees F.
  • Beat the egg whites; set aside. Mix the egg yolks with sugar, shortening, vanilla, and salt.
  • In a separate bowl mix the 9 cups of flour and the baking powder. Mix the flour mixture with the egg mixture, slowly adding the milk. Fold in the egg whites. Flour the blueberries and then fold them into the cake batter. Butter and flour 2 (12 by 18 by 1-inch) baking pans. Pour the blueberry cake batter into the pans and bake for 40 minutes, or until a toothpick inserted into the cake comes out dry and the cake springs back when touched firmly.

1/2 cup mascarpone
1/4 cup goat cheese

1/2 cup dry white wine
1/2 cup white wine vinegar
3 egg yolks
4 tablespoon water
1/2 teaspoon salt
1/2 pound sweet butter clarified
1 tablespoon tarragon minced
1 teaspoon tomato paste or 1 tablespoon peeled, seeded, and finely chopped tomato
4 (6 ounce) veal cutlets
4 (1 pound) lobsters
16 ounces artichoke puree, recipe above
20 spears asparagus
12 ounces choron sauce, recipe above
Salt
Black pepper
4 tarragon sprigs

Steps:

  • For the Artichoke Puree: Cut the artichoke into medium size pieces and place in a pot. Cover the artichokes with milk and cream. Bring to a boil and reduce to a low simmer. Cook the artichokes until very tender. Strain the artichokes (reserving the liquid). Transfer to a food processor. Add a little of the reserved cream if needed. Add the mascarpone and goat cheese and blend for 10 more seconds or until well mixed together. Season with salt and pepper if needed. Stir in the butter. Transfer to a container and keep warm.
  • For the Choron sauce: In a small saucepan, combine the shallots, pepper, white wine, and vinegar. Reduce over medium heat until 2 tablespoons of liquid remains. In a heat-resistant mixing bowl, combine the egg yolks, water, salt, and shallot mixture. Whip over hot, but not boiling, water until thick and creamy. Slowly whisk in the melted butter, a few drops at a time, until the sauce begins to emulsify. In a slow stream, whisk in the remaining butter until it is completely incorporated. Whisk in the tarragon. Correct seasoning to taste. Whisk the chopped tomato or tomato paste into the sauce biarnaise. Correct seasoning, to taste. Keep warm until needed. Preparation time: 25 minutes Yield: 1 1/2 to 2 cups
  • For the Veal: Season the veal with the salt and pepper and sear in a saute pan over high heat. Transfer to a preheated 350 degree F. oven and cook until medium rare (5 to 6 minutes). Remove from oven and keep warm. Steam the lobsters for 5 to 7 minutes, remove from water and let rest for 4 minutes. Remove the meat from the shell, slice the tail in half and keep in a little warm butter until ready to serve.
  • Steam the cleaned asparagus until slightly underdone. Place a 4 ounce scoop of the artichoke puree in the center of each of 4 plates. On the puree place the veal and lobster so that they cover the puree. Place the warm asparagus on top of the 2 items. Drizzle 3 ounces choron sauce on top of each of the lobsters and around each plate. Garnish with the tarragon sprig.

4 agnolotti filled with lobster and asparagus (available fresh or frozen at Venda Ravioli and other upscale Italian Markets)
2 tablespoons olive oil
1 garlic clove, minced
1/2 teaspoon red pepper flakes
4 Rhode Island Littleneck clams
3 large shrimp, with heads still attached
1/2 cup white wine
1 small ripe tomato, diced
1 tablespoon chopped Italian parsley

Steps:

  • In a pot of boiling water, cook the agnolotti according to directions on the package.
  • In a large saute pan, heat the olive oil and add the minced garlic, being careful not to burn the garlic. Add the red pepper flakes, clams and shrimp. Once the clams have opened and the shrimp have turned pink in color, add the white wine and diced tomatoes. Allow the wine to evaporate. Finally, add the chopped parsley.
  • Drain the agnolotti and place on a serving dish. Pour the sauce over the agnolotti. Serve with salt and pepper for individual seasoning.
  • This dish can easily be doubled.

1 pound king crab legs

1/2 cup flour
1 teaspoon salt

6 veal cutlets, lightly pounded

1 shallot, chopped
1 tablespoon fresh tarragon, chopped
1 tablespoon olive oil
Bearnaise Sauce, recipe follows
1/4 cup fresh tarragon, chopped
2 shallots, minced
1/4 cup champagne vinegar
1/4 cup dry white wine
3 egg yolks
1 stick butter, melted
Salt and pepper to taste

Steps:

  • Blanch asparagus tips in simmering water, drain and set aside. Poach crab legs in water, white wine and lemon slices for 5 minutes, then shell with a crab cracker and reserve.
  • In a shallow dish combine flour, salt and pepper; coat pieces of veal. In a saute pan over medium heat, melt 1 tablespoon of butter and fry cutlets 3 minutes each side until golden brown. Remove the veal to a warm platter. Using the same pan, melt remaining butter. Stir in shallots and tarragon. Add olive oil, asparagus and crab. Saute 2 minutes to warm.
  • To serve: place asparagus and crab on top of each cutlet. Drizzle each with Bearnaise Sauce. Serve hot.
  • In a small saucepan, combine the tarragon, shallots, vinegar and wine over medium-high heat. Bring to a simmer and cook until reduced by half. Remove from heat and set aside.
  • Place a stainless steel bowl in a saucepan containing simmering water, or use a double boiler. Whisk the egg yolks until doubled in volume. Slowly add the melted butter, continue beating until sauce is thickened. Stir in reserved shallot reduction. Season with salt and pepper, set aside wrapped in a warm spot.
  • Serve with Veal Oscar. Yield: 1 cup

2 pounds tri-tip beef, cut into 2-ounce portions

16 asparagus tips, blanched
1 pound lump crabmeat

Steps:

  • Preheat oven to 350 degrees F.
  • Slice bread into 16 slices, butter each slice and place on a baking sheet. Toast bread lightly. Remove from oven but leave on baking sheet and set aside briefly.
  • Heat oil in a hot saute pan and sear beef on both sides. Remove and let rest.
  • Mix mayonnaise, egg yolks, and crab boil seasoning. Fold in asparagus and crabmeat, trying to avoid breaking up the lumps of crab.
  • To assemble, place meat on toast and spoon crab mixture on top. Return to oven to brown crabmeat mixture and serve.

12 slices veal scallopini
3 tablespoons all-purpose flour
2 tablespoons butter, divided

1 lemon, halved and seeded
1 lb asparagus, steamed
fresh tarragon sprig (optional)
1/2 cup shallot, thinly sliced
3 tablespoons dry white wine
3 tablespoons white wine vinegar
1 teaspoon dried tarragon
1 dash salt
1 dash pepper
2/3 cup sour cream

Steps:

  • Sprinkle salt and pepper over veal.
  • Combine veal and flour in a large zip-top plastic bag; seal bag, and shake to coat veal with flour.
  • Melt 1 tablespoon butter in a large nonstick skillet over medium heat.
  • Add half of veal, and cook for 1 minute on each side or until browned.
  • Remove veal from skillet; set aside, and keep warm.
  • Repeat with remaining 1 tablespoon butter and veal.
  • Wipe drippings from skillet.
  • Coat skillet with cooking spray, and place over medium heat.
  • Add the crabmeat, and saute for 1 minute or until warm.
  • Squeeze the lemon halves over crabmeat, and stir well; remove from heat, and set aside.
  • Place 3 veal slices and 1/4 of the steamed asparagus on each of 4 serving plates.
  • Spoon the crabmeat evenly over veal, and top each serving with 3 tablespoons Bearnaise Sauce.
  • Garnish with fresh tarragon sprigs, if desired.
  • BEARNAISE SAUCE:.
  • Combine the first 6 ingredients in a small heavy saucepan; bring to a boil, and cook 1 minute.
  • Strain mixture, reserving liquid; discard solids.
  • Return liquid to saucepan; stir in sour cream.
  • Place over low heat, and cook 1 minute or until warm, stirring frequently.

200 g snow peas
400 g asparagus spears

4 green onions, chopped

  • Pull the lobster flesh away from the shells and cut into thick slices.
  • Top and tail the snow peas.
  • Break off the woody end of the asparagus.
  • Boil, steam or microwave the asparagus until barely tender, add the snow peas and cook for 1 minute longer. Drain and refresh under cold water until no longer warm.
  • Heat the butter in a pan, add green onions, lemon rind and juice.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place chicken breasts into a 9x13-inch baking dish.
  • Place red potatoes into a separate 8x8-inch baking dish.
  • Drizzle 1 tablespoon olive oil over chicken breasts and 1 tablespoon oil over potatoes.

  • To serve, place each chicken breast onto a serving plate and top breasts with imitation crab meat.
  • Pour about 2 tablespoons of hollandaise sauce over each serving and place several spears of asparagus on top; drizzle 2 more tablespoons of sauce over each portion. 3 tablespoons butter, melted
1 (7.5 ounce) box frozen asparagus spears
1 (0.9 ounce) packet Hollandaise sauce, prepared according to package directions
Paprika for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Coat a rimmed baking sheet with cooking spray. Place fish fillets on prepared baking sheet. In a medium bowl, combine shrimp, breadcrumbs, parsley, garlic powder, and butter, mix well. Top each fish fillet with an equal amount of shrimp mixture then asparagus. Drizzle half the Hollandaise sauce evenly over the asparagus and sprinkle with paprika. Bake for 20 to 25 minutes or until fish flakes easily with a fork. 1 1/2 cups boiling water
1 1/4 ounces dried morels (about 1 1/3 cups)
2 (1 1/3-inch-thick) veal rib chops
1 tablespoon vegetable oil
1 1/2 tablespoons unsalted butter
1 garlic clove, smashed
1 thyme sprig
1 tablespoon finely chopped shallot
2 tablespoon Cognac
2/3 cup crème fraîche
1/2 tablespoon chopped chives
1 teaspoon chopped tarragon

Steps:

  • Preheat oven to 350°F with rack in middle.
  • Pour boiling water over morels in a small bowl and soak until morels are softened, about 30 minutes. Transfer morels with a slotted spoon to a medium-mesh sieve set over a bowl. Press on morels with back of spoon to remove excess liquid (be careful not to squeeze out all the moisture), then add to soaking liquid and reserve. Rinse morels to remove any grit. Reserve morels and liquid separately, allowing liquid to settle.
  • While morels soak, let veal chops stand at room temperature 30 minutes.
  • Pat chops dry and season with 1/2 teaspoon each of salt and pepper (total). Heat an ovenproof 12-inch heavy skillet (not nonstick) over medium-high heat until hot. Add oil and heat until smoking, then add veal chops and sear underside well, 2 to 3 minutes. Turn chops over and sear 1 minute.
  • Add butter, garlic, and thyme to skillet and baste veal with melting butter. Transfer skillet to oven and cook, basting every few minutes, until an instant-read thermometer inserted horizontally into center of chop registers 130 to 135°F for medium-rare, 10 to 15 minutes.
  • Transfer chops to a plate to rest. Discard garlic and thyme, keeping juices and fat in skillet, and return to burner over medium-high heat. (Handle will be very hot.) Add morels and sauté 1 minute. Add shallot and sauté 1 minute.
  • Remove from heat briefly and add Cognac, then return to heat and deglaze, stirring and scraping up brown bits, until most of liquid has evaporated. Slowly pour in reserved soaking liquid, being careful to leave last tablespoon (containing sediment) in bowl. Add meat juices from plate and boil until liquid has reduced to about 1/3 cup.
  • Stir in crème fraîche, swirling to incorporate, and boil until morels are lightly coated and liquid is slightly thickened. Stir in chives and tarragon and season with salt and pepper. Serve chops smothered with morels.

This meal is great for a quick dinner after work. Veal comes out of oven moist and delicious! I paired with baked yams and broccoli. All ingredients are commonly found in the house and can be put together last minute.

1 tablespoon lemon juice
1 tablespoon milk
½ cup all-purpose flour
½ cup Italian seasoned bread crumbs
½ cup grated pecorino Romano cheese
½ teaspoon adobo seasoning, or to taste
1 teaspoon olive oil
4 (4 ounce) thinly-sliced veal cutlets
1 ½ cups arugula, divided
4 tablespoons golden raisins, divided
4 teaspoons balsamic vinegar, divided
4 teaspoons olive oil, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk egg, lemon juice, and milk in a small bowl. Place flour in a separate shallow bowl; mix Italian crumbs, pecorino Romano cheese, and adobo seasoning in a third bowl.
  • Heat 1 teaspoon olive oil in a skillet over medium heat. Dredge each veal piece in flour, dip in egg mixture, and press into bread crumb mixture to coat both sides. Pan-fry the breaded veal cutlets in the hot oil until crumbs are lightly browned and coating is set, about 1 minute per side. Transfer veal to a baking dish.
  • Bake cutlets in the preheated oven until juices run clear, 20 to 25 minutes. Transfer veal onto 4 serving plates and top each cutlet with 1/4 of the arugula; sprinkle raisins over the arugula. Drizzle a teaspoon of balsamic vinegar and 1 teaspoon olive oil over each serving.

Pan-Roasted Veal Chops with Arugula image

4 (1- to 1 1/4-inch-thick) veal rib chops (10 to 12 oz each), bones frenched if desired
2 1/2 tablespoons unsalted butter
1 1/2 tablespoons olive oil
1 garlic clove
1/4 teaspoon salt
1 1/2 tablespoons balsamic vinegar
3 tablespoons minced shallot
1/2 cup dry white wine
1 cup low-sodium chicken broth
3/4 teaspoon minced fresh rosemary or 1/4 teaspoon dried, crumbled
2 small bunches arugula, trimmed

Steps:

  • Preheat oven to 425°F.
  • Pat veal chops dry and season with salt and pepper. Heat 1/2 tablespoon butter and 1/2 tablespoon oil in a 12-inch heavy skillet (see cooks' note, below) over moderately high heat until hot but not smoking, then sear chops until golden brown, about 3 minutes on each side. Transfer skillet to middle of oven and roast chops until an instant-read thermometer inserted horizontally into a chop registers 155°F (do not touch bone), 10 to 15 minutes (depending on thickness).
  • While chops are roasting, mash garlic to a paste with salt using a mortar and pestle (or mince and mash with a large heavy knife), then transfer half of paste to a bowl and whisk in 1/2 tablespoon vinegar, remaining tablespoon oil, and salt and pepper to taste.
  • Transfer chops to a plate and keep warm. Add shallot and remaining garlic paste to skillet and cook over moderate heat, stirring, until softened, about 1 minute. Add wine and remaining tablespoon vinegar and boil, scraping up brown bits, until reduced to about 2 tablespoons, about 4 minutes. Add broth and rosemary and boil until reduced by half, about 4 minutes. Remove from heat and add remaining 2 tablespoons butter, swirling skillet to incorporate, then stir in any veal juices accumulated on plate. Season with salt and pepper.
  • Add arugula to dressing and toss to coat. Serve chops with sauce and arugula.

3/4 lb thin slices lean veal round steak or veal for scallopini
1 cup sliced fresh mushrooms (3 oz)
1/3 cup dry white wine
2 teaspoons chopped fresh or 1/2 teaspoon dried thyme leaves
12 oz asparagus spears, cut into 1-inch pieces*

Steps:

  • In 10-inch nonstick skillet, heat oil over medium-high heat. Cook shallot and garlic in oil, stirring frequently, until garlic is golden; reduce heat to medium. Add veal. Cook about 3 minutes, turning once, until light brown.
  • Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer about 12 minutes, stirring occasionally, until asparagus is crisp-tender.

  • For the Artichoke Puree: Cut the artichoke into medium size pieces and place in a pot. Cover the artichokes with milk and cream. Bring to a boil and reduce to a low simmer. Cook the artichokes until very tender. Strain the artichokes (reserving the liquid). Transfer to a food processor. Add a little of the reserved cream if needed. Add the mascarpone and goat cheese and blend for 10 more seconds or until well mixed together. Season with salt and pepper if needed. Stir in the butter. Transfer to a container and keep warm.
  • For the Choron sauce: In a small saucepan, combine the shallots, pepper, white wine, and vinegar. Reduce over medium heat until 2 tablespoons of liquid remains. In a heat-resistant mixing bowl, combine the egg yolks, water, salt, and shallot mixture. Whip over hot, but not boiling, water until thick and creamy. Slowly whisk in the melted butter, a few drops at a time, until the sauce begins to emulsify. In a slow stream, whisk in the remaining butter until it is completely incorporated. Whisk in the tarragon. Correct seasoning, to taste. Whisk the chopped tomato or tomato paste into the sauce. Correct seasoning, to taste. Keep warm until needed.
  • For the Veal: Season the veal with the salt and pepper and sear in a saute pan over high heat. Transfer to a preheated 350 degree F. oven and cook until medium rare (5 to 6 minutes). Remove from oven and keep warm.
  • Steam the lobsters for 5 to 7 minutes, remove from water, and let rest for 4 minutes. Remove the meat from the shell, slice the tail in half, and keep in a little warm butter until ready to serve.
