My favorite dessert! Comes out cake-like on top and pudding-like on the bottom. Adapted from a recipe from Cooking Light Magazine.

3 large egg whites
3/4 cup sugar
2 tablespoons butter, softened
1/4 cup flour
1 teaspoon grated lemon, rind of
1/4 cup lemon juice
1/2 teaspoon dried rosemary
1 dash salt
3 large egg yolks
1 1/2 cups skim milk

Steps:

  • Beat egg whites with a mixer on medium-high speed until foamy.
  • Gradually add 1/4 cup sugar, 1 tablespoon at a time, beating after each addition; beat until peaks form.
  • In a separate bowl, beat 1/2 cup sugar with butter on medium speed approximately 5 minutes until well blended.
  • Add flour through salt; beat well.
  • Add yolks and milk; beat well.
  • Stir 1/4 of egg whites into batter, then gently fold in the rest of egg white mixture.
  • Spoon into 6 (6 oz) custard cups coated with nonstick cooking spray.
  • Place cups in a shallow baking pan and add hot water around cups to a depth of 1 inch.
  • Bake at 350° 45 min or until set.
  • Remove cups from pan.

1/2 cup fine yellow cornmeal
1/2 cup cake flour
1 tablespoon minced fresh rosemary leaves
1 teaspoon baking powder
1/4 teaspoon salt
1 stick unsalted butter, softened
1/2 teaspoon vanilla extract
1 1/4 cups powdered sugar, plus more for dusting
4 large egg yolks
2 large eggs
1/2 cup sour cream
1/2 cup sugar
1/2 cup balsamic vinegar
1/2 small sprig fresh rosemary

Steps:

  • Preheat the oven to 350 degrees F.
  • For the cake: Butter and flour an 8-inch round cake pan.
  • In a medium bowl, whisk together the cornmeal, cake flour, minced rosemary, baking powder, and salt.
  • Using a stand mixer with a paddle attachment, on low speed beat the butter and vanilla together until combined. Slowly add the powdered sugar. Once the sugar is incorporated increase the speed to high and beat until fluffy, about 3 minutes. Add the egg yolks and eggs, 1 at a time. Reduce the speed to medium and add the sour cream. On low speed add the dry ingredients just until incorporated.
  • Pour the batter into the prepared cake pan and smooth the surface with a spatula. Bake in the lower third of the oven until the cake is golden and pulls away from the sides of the pan, about 35 minutes. Transfer the pan to a wire rack and let cool. Transfer the cake from the pan to a serving plate and dust with powdered sugar.
  • For the Balsamic Syrup: Place the sugar, balsamic vinegar, and rosemary in a small saucepan. Bring to a boil and simmer until the sugar is dissolved, about 5 minutes. Discard the rosemary sprig and let the syrup cool.
  • To serve, place a slice of cake on a serving plate; spoon some syrup around the plate.

Nonstick spray
2 boxes lemon cake mix
2 boxes packaged lemon pudding mix (not instant)
6 eggs
1 1/4 cups rose soda
2/3 cup oil
1 box confectioners' sugar
1/2 cup water
1 tablespoon rose syrup

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a rose Bundt pan and mini rose Bundt pan with nonstick spray.
  • In a mixer fitted with the whisk attachment, combine cake mix, pudding mix, eggs and rose soda. Add oil, mix until smooth.
  • Divide batter into prepared pans, bake until tester inserted in the center comes out clean, about 35 minutes for the large cake, about 20 minutes for the mini cakes.
  • Cool on wire racks.
  • In a bowl, combine confectioners' sugar, water and rose syrup. Whisk to form a smooth glaze. Pour glaze into a resealable plastic bag, snip off a corner and drizzle glaze on cooled cakes.

Beat in the lemon juice, zest and rosemary., Transfer to three greased and floured 9-in. round baking pans. Bake at 350° until edges begin to brown, 25-30 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely., For frosting, in a large bowl, beat cream cheese until fluffy. 1/4 teaspoon kosher salt (or other coarse salt)
1 1/2 teaspoons baking powder
1 teaspoon rosemary, minced
1 tablespoon lemon zest, minced (or lemon veranca)
1/2 cup buttermilk
1 teaspoon vanilla
3 eggs
1 1/4 cups sugar
1/4 cup heavy cream
1 cup powdered sugar
1 tablespoon milk
4 teaspoons lemon juice

Steps:

  • Preheat oven to 350-degrees F.
  • Grease and flour a bundt pan.
  • In a small bowl combine first five ingredients (flour - lemon zest) and set aside.
  • In a small bowl whisk together buttermilk and vanilla.
  • In a large bowl and using electric beaters beat eggs and sugar together until thick. Alternately add flour and buttermilk mixture using low speed on mixer. Mix until combined.
  • In a separate bowl with clean beaters beat cream until stiff peaks form. Fold into batter.
  • Pour batter into prepared pan.
  • Bake 45-50 minutes or until done (top of cake springs back when pressed). Cool in pan for 10 minutes and then turn out onto cooling rack to finish cooling.
  • To prepare glaze, whisk together glaze ingredients (sugar - lemon juice).
  • Place cake on serving dish and drizzle glaze over cooled cake.

2 3/4 cups all-purpose flour
1 cup cake flour (not self-rising)
1 tablespoon baking powder
Salt
2 1/4 cups sugar
3 tablespoons finely chopped fresh rosemary
1 1/2 teaspoons pure vanilla extract
3 large eggs, plus 1 large egg white
1 cup whole milk
1/4 cup Rosemary Honey

Steps:

  • Preheat oven to 350 degrees. Butter two 4 1/2-by-8 1/2-inch loaf pans, and line with parchment, leaving a 1-inch overhang on each long side. Butter parchment. Whisk together flours, baking powder, and 1 teaspoon salt.
  • Beat butter, sugar, rosemary, and vanilla with a mixer on medium speed until pale and fluffy, about 4 minutes. Beat in eggs and egg white, 1 at a time. Reduce speed to low. Beat in flour mixture in 2 additions, alternating with milk.
  • Divide batter between pans. Bake, rotating halfway through, until deep gold and a toothpick inserted in centers comes out with moist crumbs attached, 50 to 60 minutes.
