COCONUT SORBET WITH RUM SOAKED GRILLED PINEAPPLE



Coconut Sorbet with Rum Soaked Grilled Pineapple image

A dessert you can easily whip up with sorbet, a little coconut, pineapple, rum and brown sugar.

Number Of Ingredients 10

2 cans coconut milk (shaken before opening)
2 cups unsweetened shredded coconut ((see note #1 below))
1 cup granulated sugar
dash of salt
1 whole vanilla bean (scraped (see note #2 below))
¼ cup packed brown sugar
¼ cup dark spiced rum
1 pineapple (peeled, cored, halved lengthwise and sliced lengthwise into 12 wedges)
2 tablespoons coconut (toasted)
Coconut sorbet or low-fat vanilla ice cream to serve with the pineapple slices ((Coconut sorbet recipe included))

Steps:

  • In a medium saucepan combine the sugar, coconut milk, salt, vanilla bean and shredded coconut. Bring the mixture to a light simmer on medium-low heat and stir until the sugar is dissolved. Cover the pot with a lid and turn off the heat. Steep the mixture for one hour.
  • Place a fine mesh sieve over a clean bowl and strain the mixture removing as much liquid as possible. (See note #1 below) Press the coconut with the back of a metal spoon removing all liquid. Make sure the vanilla bean is scraped clean, then remove it and discard (See note #2 below).
  • Cover and refrigerate the sorbet mixture for several hours or overnight. Process according to your ice cream maker instructions. Store in an airtight container and freeze before serving. Allow the sorbet to sit a room temperature about 15 minutes before serving.
  • Combine the brown sugar and rum in a microwave safe bowl. Cook on high for one minute. Stir and if the brown sugar is not yet dissolved, cook for 30 seconds.
  • Pour the rum mixture over the pineapple slices and set aside. Heat the grill and brush the grates with oil. If you prefer the pineapple can be grilled inside using a panini pan. If using a non-stick pan there is no need to oil the pan. Grill over medium heat until marks form and the pineapple is heated through. Sprinkle with coconut and serve with the sorbet and drizzle with any remaining rum syrup.

1/3 cup brown sugar
1 pineapple (peeled, cored & cut into 1/2" slices)
1 1/2 tablespoon cold butter or vegan butter
pinch of sea salt
ice cream (or 'nice cream' to serve)

Steps:

  • Combine the rum and brown sugar in a dish and whisk together until combined.
  • Arrange the pineapple slices along the bottom of a 9x13" baking dish and pour the rum and brown sugar mixture over the pineapple. Let it soak for 2-6 hours, flipping the pineapple half way through to allow the rum to soak into both sides.
  • Remove the pineapple from the rum mixture and pour the rum mixture into a small saucepan. To make the salted caramel sauce, bring the mixture to a boil over medium high heat and cook until it is slightly thickened and reduced by about 2/3. Remove from the heat and add the cold butter and sea salt. Swirl the saucepan to gently incorporate the butter and set aside.
  • Heat a grill pan to medium-high heat. Place the pineapple slices on the preheated grill and cook in batches on each side for 3-5 minutes until caramelized and the grill marks show. Be prepared for a bit of smoke form the sugars if you're cooking inside.
  • To serve, place the pineapple ring in a shallow bowl or plate, top with a small scoop of ice cream or 'nice cream in the centre, and drizzle with the salted caramel.

1 pineapple, cored and cut into about 6-8 rings (choose desired thickness)

Steps:

  • In a small bowl, mix together rum, brown sugar, and cinnamon. Then in a glass baking dish (or other container), lay out the pineapple rings and pour the rum mixture over them. Toss to coat, then let soak for at least 15 minutes, flipping the pineapple midway through. When you are ready to cook the pineapple, strain out the extra rum sauce from the pan of pineapple, and transfer it to a small saucepan. Bring the sauce to a simmer over medium-high heat, then reduce heat to medium-low and simmer for about 6-8 minutes, or until reduced by half. Set aside. While the sauce is cooking, heat a grill pan or saute pan over medium-high heat until hot. Lightly grease the pan with cooking spray. Add pineapple slices in an even layer (you may need to do this in multiple batches) and cook for 1-2 minutes per side until browned and grill marks appear. 32 shrimp, medium-size (about 2 pounds)
4 limes, juice of (about 8 tablespoons)
1 1/2 cups pineapple juice, canned
1/2 cup dark rum
2 tablespoons cilantro, finely chopped
1 teaspoon garlic clove, chopped
1/8 teaspoon salt, to taste
1/8 teaspoon ground pepper, to taste

Steps:

  • Clean & trim shrimp & make 1/4-inch-deep incision on the top of each one (the side without the feet) from tail to head, then under cold running water, open the incision & wash away any brownish-black matter (including the thin, dark vein).
  • In a large nonreactive) stainless steel or glass bowl, combine lime juice, pineapple juice, rum, cilantro & garlic, then salt & pepper to taste.
  • Add shrimp, cover the refrigerate, allowing shrimp to marinate for as least 2 & not more than 3 hours.
  • Remove shrimp from the marinade & set the shrimp aside, discarding everything else.

1/2 cup spiced rum
1/3 cup brown sugar
2 tbsp butter
1/2 tsp ground cinnamon
pinch salt
8 scoops vanilla ice cream

Steps:

  • In a small bowl add the spiced rum and brown sugar and mix until sugar is dissolved.
  • Place the pineapple spears in a shallow baking dish and pour the brown sugar and rum mixture over top. Cover and ace in the fridge for 2-4 hours flipping once halfway through to coat the other side with the rum mixture.
  • Over medium-high heat preheat a grill pan or BBQ grill. Add the pineapple spears perpendicular to the grill grates so you can get those nice brown grill marks across the pineapple. Grill for about 3 minutes per side.
  • Meanwhile, pour the rum mixture left in the baking dish into a small saucepan. Bring to a boil over medium-high heat and cook until slightly thickened and reduced to about ⅓. Remove from heat and stir in the butter, cinnamon and salt. Set aside.

1 tsp. ground Cinnamon (I used half cinnamon and half nutmeg)

Steps:

  • In a small bowl, combine, brown sugar, rum , nutmeg and cinnamon.
